QUICK AND EASY HERB MARINATED CHICKEN WITH PASTA
My herb garden is overflowing this year. This was a quick and easy way to have a fresh tasting dinner, and use up some of my bountiful harvest! Serve with a nice green salad and warm bread.

Steps:
- Mix together oil, vinegar, lemon juice, basil, parsley, oregano, and pepper flakes together in a shallow bowl.
- Add chicken and toss to coat.
- Marinate for at least 30 minutes or as long as 2 hours.
- Grill or broil chicken until the internal temperature reaches 165 degrees, or until throughly cooked.
- Serve by spooning warmed sauce over hot pasta, slice the chicken and arrange on top.

CITRUS AND HERB MARINATED CHICKEN TACOS

Steps:
- In a food processor or blender, combine 1/3 cup of the orange juice, the jalapeños, garlic, peppercorns and salt.
- Puree until the peppercorns are completely crushed.
- Add the cilantro and the remaining 1/3 cup orange juice and puree until smooth.
- In a frying pan oil pan and cook chicken breasts until thoroughly cooked, add mixture from food processor/blender.
- Dice chicken and stir in back in frying pan with juices and marinade until browned.
- Warm tortillas in damp dish towel in microwave for 2 minutes.
- Add diced chicken, salsa and guacamole.

GRILLED HERB-MARINATED CHICKEN BREASTS
The key to moist grilled chicken is leaving the skin on during cooking. Some people are reluctant to do this because they think it will increase the fat calories in the finished dish. But the fact of the matter is that, if you remove the skin before eating the chicken, you'll reap the best of both worlds: juicy chicken without significantly more fat than if you'd removed the skin before grilling. Cooking time does not enclude 6 hours marinading time.

- In non-reactive bowl, combine garlic, lemon juice, olive oil and herbs.
- Put chicken breasts in large zip-lock bag, and pour marinade over chicken.
- Refrigerate chicken in the marinade for 1 to 6 hours.
- Remove chicken from refrigerator 1 hour before grilling.
- Place chicken breasts skin side down on preheated grill.
- Sprinkle with salt and pepper, and grill for about 7 minutes on each side depending on thickness of meat.

- Marinate chicken in soy sauce, lime juice & zest, cilantro and ginger for 30 minutes.
- Prepare rice according to package directions.
- Heat 2 tablespoons sesame oil in saute pan over medium-high heat and cook chicken.
- Remove chicken and set aside.
- Add remaining 1 tablespoon of sesame oil and saute red pepper and green onions.
- Serve Chicken with Rice, top Chicken with pepper and onions.
