- Thinly slice the potatoes and place in a greased shallow 2-qt. baking dish. In a small skillet, melt butter; stir in the onion, salt, thyme and pepper until onion is coated with butter. , Spoon over potatoes. Cover and bake at 425° for 45 minutes or until potatoes are tender. Sprinkle with cheese and parsley. Bake, uncovered, 15 minutes longer or until cheese is melted.

Simple and easy burrito dish with lots of flavor that my kiddos LOVE. If I have a busy schedule and not a lot of time to whip up a hearty meal, this recipe is my go to! Enjoy! Serve with sour cream and hot sauce.

- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add taco seasoning and water; cook and stir until meat is coated, about 5 minutes more. Add enchilada sauce, refried beans, and corn; stir to combine.
- Place a layer of tortilla strips in the bottom of a baking dish. Top with a layer of meat mixture, more tortilla strips, and Mexican cheese; repeat layers as necessary. End with a layer of Mexican cheese.
- Bake in the oven until cheese is melted and golden, 8 to 10 minutes.

QUICK AND EASY CHEESY POTATO BURRITO BAKE
A quick and off the cuff recipe for those nights you don't want to spend a lot of time on prep, or you're staring at your pantry asking what you're going to do to stretch ingredients till payday. It's started in the microwave and finished in the oven.

- Preheat oven to 350°F.
- Place frozen potatoes in a microwave safe bowl, add about 1/4 cup of water. Cover and cook on high for about 7 minutes or until potatoes are soft. Remove and set aside for a few minutes to cool.
- Place chopped onion in microwave safe bowl, but do not add additional water. Cover and cook on high for about 2 minutes or until onions are soft.
- Add onions, jalapenos, 1/2 tablespoon garlic salt, cilantro, 1/2 package of taco seasoning and 1/2 of the can of chili to the potatoes, and stir until evenly mixed.
- In another bowl, mix remaining chili, rest of taco seasoning, rest of garlic salt, cheddar cheese, and enough water to make about 2 cups of sauce.
- Warm tortillas in the microwave between two plates, approximate 1-2 minutes on high.
- Place about 1/3 of a cup of the potato mixture onto each tortilla, roll up them up tightly, and arrange in a greased 9"x9" baking dish in two layers.
- Pour chili-cheese mixture over burritos and put in oven. Bake 15-30 minutes, until burritos are warmed through and cheese is melted.

My friend, Paula brought this wonderfully textured and flavorful potato dish to a recent potluck, I knew I'd finally found a recipe to replace my mother's scalloped potatoes! By letting the potatoes dry two days after boiling, then grating, it creates a fluffy, almost rice-like texture that soaks up the cheese flavor, leaving no greasy mess - just smiling faces.

- 2 DAYS (48 hours) before serving, boil potatoes, in their skins, until just fork-tender (about 40 minutes). Drain well, cool, and refrigerate, covered, for 2 days to dry.
- Pre-heat oven to 350°. In a saucepan, warm the half-and-half, butter, salt, and pepper, just until butter is melted.
- Peel potatoes and coarsely grate (I use food processor). Grate the cheddar cheese, and add ALL BUT ABOUT A CUP OR TWO of cheese), plus all of the parmesan to the potatoes, in a large mixing bowl. Add the milk/butter mixture and toss to combine.
- Spray a casserole dish or 9 x 13 baking dish with Pam, and pour in potatoes. Bake for 1 hour, uncovered. Top with the remaining cup of cheese and bake another 15 minutes, until golden brown and deeeeelicious.

CHEESY MASHED POTATO BURRITOS
I created this to use up left over mashed potatoes instead of throwing them out. You can also use whole cooked potatoes and just mash them. We always have leftover mahed potatoes at thanksgiving and other holidays. These are easy to make and taste great! I have used instead of chicken broth leftover turkey gravy tasted good. The kids liked them so much I make them all the time. I serve them with a side refried beans and some sour cream.

- In a large bowl mix all ingredients except salsa and torillas together with a hand mixer. Mixture should be creamy not runny. (If mixture is dry and not creamy add small amounts of milk until creaminess is achived).
- Spray a large cake pan with nonstick spray. Prepare tortilla according to package so they are flexable. Add mixture to tortillas about 3 tablespoons. Roll tortillas and line them into the cake pan. Pour jar of salsa over them and bake in the oven at 350 degrees for 20 minutes. You can top with more shredded cheddar when taken out of oven.
- Freeze any leftover. Reheat in microwave 1-3 minutes.
