Had these in New Orleans and loved them, so I tried different combos and liked this best.

Steps:
- Line a baking sheet with aluminum foil.
- In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
- Drop by spoonfuls onto prepared baking sheet. Let cool completely.

PECAN PRALINES

Steps:
- Generously butter baking sheets.
- In a large saucepan over medium heat, combine brown sugar, white sugar, water and butter. Bring to a rapid boil and stir in pecans. Continue to cook and stir until large bubbles form on the surface, pecans begin to look sugary and mixture just begins to color. Remove from heat and drop by rounded spoonfuls onto prepared sheets. Let cool completely.

PRALINE PARTY MIX
This is a little "kicked-up" version of the all time favorite Chex Party Mix. Our niece gave us a gift of this one Christmas and I have made it every holiday since.

- 1. Preheat oven to 250 degrees. Line parchment paper on a large cookie sheet. I use my 1/2 sheet cake pan. Pour onto parchment the pecans and cereal. Mix well with your hands. In a small saucepan, mix brown sugar, praline mix, and butter. Gently boil 2 minutes. Remove from heat and stir in baking soda until foamy. Pour over cereal/pecans and stir to coat well. Bake for 1 hour. (The recipe says to stir once during baking, but I have found to stir 2 or 3 times during baking process is best.) This recipe was taken directly from the praline bottle. This praline mix has many good recipes with it, i.e. Praline Cake, Whipped Topping, Southern Cappuccino, Cafe' Royale, Sweet Potatoes, etc. This bottle of mix lasts a long while. This is my 3rd Christmas on this particular bottle. NOTE: I do have the address, online site and 800 phone # if you would like it.
GEORGIA'S FAMOUS PECAN PRALINES
My daughter-in-law is from Georgia and when we go and visit I just love to go downtown Savannah to eat Pralines.

Steps:
- 1. Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium low and continue to stir. Spoon mixture up on sides of pan to melt any sugar the hasn't melted.
- 2. Cook until mixture reaches 238 to 241 degrees on a candy thermometer or soft ball stage. Stir in the pecans.
- 3. Remove from heat Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or butterd marble slab, using a spoon or ice cream scoop. Let cool.
QUEY'S SAVANNAH PRALINES
Steps:
- Line a baking sheet with parchment; spray the parchment with nonstick spray.
- Melt the butter in a Dutch oven, then add the sugars, milks and salt. Place a candy thermometer on the side of the pot, bring the mixture to a boil over medium heat and cook until it reaches soft-ball stage or 235 degrees F, about 10 minutes. Whisk in the pecans and cook, stirring constantly, until creamy and starting to thicken, 3 to 5 minutes; if it gets too thick too fast, add a splash of milk to loosen it up. Drop the pralines 1/4 cup at a time onto the prepared baking sheet. Rest at room temperature to cool, about 5 minutes.

- 1) Combine both sugars, the vanilla and the evaporated milk in a saucepan. 2) Heat to 230 degrees (just below soft ball stage). Stir frequently so sugar does not burn. 3) Add the butter and continue to heat and stir until the mixture reaches 250 degrees (the temperature is very important). 4) Remove from the heat and stir in the pecans. Continue to stir until the mixture begins to cool and thickens. 5) Spoon out onto wax paper to cool. If the mixture thickens to much while spooning it out, heat just until it is soft enough again.

- In a medium-size heavy pot, combine the granulated sugar, brown sugar, salt, evaporated milk, and butter. Cook and stir with a wooden spoon over medium heat until the sugars dissolve and the mixture comes to a boil.
- Continue to cook until the temperature reaches between 235-240 degrees F on a candy thermometer (soft ball stage). Remove from heat and allow the praline mixture to cool for 5 minutes.
- Stir in the vanilla and pecans, beating by hand with a wooden spoon just until the candy begins to lose its glossiness and thickens slightly, about 2 minutes. If you beat too long, the candy will seize and start to crumble. If you don't beat it long enough, then pralines won't set properly and will stay soft and sticky.
