This is a great salad! It is suppose to be like the explosion salad from chili's. I am sure that it is close to the delicious fattening one, but it is really good and filling. UPDATE! 3-02-09:sometimes instead of making this dressing i take 2 tablespoons of light sour cream and 3 tablespoons salsa and mix it together for my dressing! it is delicious and lowers the point by one or two.

1 small low-carb whole wheat tortilla
1/4 cup shredded fat-free cheddar cheese
3 cups chopped romaine lettuce
3 ounces lean cooked boneless skinless chicken breasts, cut into strips
1/4 cup diced tomato
2 tablespoons canned sweet corn, drained
1 tablespoon canned black beans, rinsed
1 teaspoon fajita seasoning mix, dry
3 tablespoons fat free balsamic vinaigrette
1 teaspoon lemon juice
1 teaspoon lime juice
1/2 a packet if artificial sweetener (like Splenda)

Steps:

  • Begin by mixing together the fajita seasoning mix and 2 teaspoons of water. Toss the chicken in this mixture and set aside.
  • To make the quesadilla, place tortilla in a pan lightly sprayed with nonstick cooking spray. Sprinkle cheese evenly over one half of the tortilla, and then bring the pan to medium heat. Once the cheese begins to melt, use a spatula to fold the plain half over and press down to seal. Flip and continue to cook and press until the entire quesadilla is hot and toasty; set aside.
  • Build your salad by layering the lettuce, tomatoes, corn and black beans. Top with the chicken (heating first if desired); cut the quesadilla into triangles and place them around your salad.
  • Combine all of the dressing ingredients with one teaspoon of water; mix well and serve on the side.
  • If you like, garnish salad with cilantro.
  • Enjoy. Makes one serving.

1/4 cup onion, chopped
1/4 cup bell pepper, chopped
2 teaspoons fat free ranch dressing
1/8 teaspoon hot sauce
1/2 ounce avocado, mashed (about 1 tbsp.)
1 dash each chili powder, ground cumin, and garlic powder
1 medium-large high-fiber flour tortilla (with 110 calories or less, like the kind by La Tortilla Factory)
1/4 cup fat-free cheddar cheese, shredded
2 ounces chicken breasts, cooked and chopped
2 slices turkey bacon, cooked crisp
nonfat sour cream, salsa

Steps:

  • Bring a large skillet sprayed with nonstick spray to medium-high heat. Cook and stir onion and pepper until softened, 3 - 5 minutes. Remove from skillet and set aside.
  • In a small bowl, mix ranch dressing with hot sauce. In another small bowl, mix avocado with chili powder, ground cumin, and garlic powder.
  • Lay tortilla flat and spread avocado mixture on one half of the upward-facing side. Evenly top avocado with 2 tablespoons cheese, followed by the chicken, bacon, and cooked veggies. Top with ranch mixture and remaining 2 tablespoons cheese.
  • If needed, clean skillet. Re-spray skillet and return to medium-high heat. Place the half-loaded tortilla flat in the skillet and cook for 2 minutes. Fold the bare half of the tortilla over the filling with a spatula and press down lightly to seal. Carefully flip and cook until crispy, about 3 minutes.
  • Slice into wedges, and if you like, serve or top with sour cream and salsa!

I really like this. It is quick and easy to make and really good! I used weight watcher wheat bread because it meets the requirements for her recipe. This 3 slice of bread serving is very filling! I think next time I will just eat the two pieces and maybe a piece of fruit or yogurt, I ate mine just the way the recipe states but, she says to feel free to serve it with sugar free maple syrup, sugar-free preserves, fresh berries, and/ or a squirt of fat-free whipped cream. You can also cut these into sticks if y ou wish. just cut the bread into srtips before dipping into the egg wash.Enjoy! *THIS would not let me add 1 packet of splenda or no-calorie sweetener! so dont forget it, you will need it at the end! :)

2 cups low sodium chicken broth
2 tablespoons tomato paste
6 ounces long grain rice
6 ounces drained cooked red kidney beans
1 cup drained canned plum tomato
fresh ground black pepper, to taste

Steps:

  • Spray large nonstick saucepan with Pam, place over med-high heat 30 seconds.
  • Add bell pepper, onions and garlic and cook, stirring frequently, until soft, 5 to 6 minutes.
  • Add chicken and cook until browned, 5 minutes. Reduce heat to low.

6 uncooked lasagna noodles
1 (15 ounce) container fat-free ricotta cheese
1 -2 cup sliced/chopped raw vegetables (I've used zucchini,bell peppers,mushrooms,onions)
1 (8 ounce) package shredded lowfat mozzarella cheese

Steps:

  • Spray 11x7 baking dish with cooking spray.
  • Spread 1/3 of the sauce on bottom of dish.
  • Arrange 3 noodles over the sauce.
  • Top with another 1/3 of sauce,all of the riccota cheese and the vegetables,and 1/2 the mozzerella cheese.
  • Top with remaining 3 noodles and the remaining sauce.
  • Cover dish with foil.
  • Bake at 375 degrees for 1 hour.
