BAKED QUESADILLA SQUARES
These are wonderful appetizers that can be whipped together fast and baked while you entertain. Or they make just a nice snack for the family. They are great "as is", or passed with sour cream, guacamole and salsa separately.

- Preheat oven to 425 degrees. Spray a 13x9-inch glass baking dish with nonstick cooking spray. Sprinkle cheeses in bottom. Top with chilies.
- Combine milk, baking mix and eggs in large bowl and beat until smooth. Carefully pour over chilies and cheese. Top with 1/4 cup salsa.
- Bake until puffed and golden, 25-30 minutes. Cool 10 minutes. Cut into squares and serve.

Adapted from the recipe for Impossible Quesadilla Pie from a Bisquick grocery store flyer from the mid-80's. I used canned pre-chopped jalapenos from the grocery store but I'm sure it would be even better with fresh.

- Heat oven to 425.
- Grease 9" square pan.
- Sprinkle chopped jalapenos and cheese in pan.
- Beat remaining ingredients until smooth either by hand or using an electric mixer.
- Pour into pan.
- Bake 20 to 30 minutes or until a knife inserted between the center and the edge of the pan comes out clean.

- Heat 1 tablespoon olive oil over medium-high heat in a large non-stick sauté pan. Add sweet potato and sauté for 5-6 minutes, stirring occasionally, until cooked through. Transfer to a separate plate and set aside.
- Add the remaining 1 tablespoon oil to the pan. Add the veggies and jalapeño, and sauté for 4-5 minutes. Stir in the cooked sweet potato, black beans, cumin, chili powder, a generous pinch of salt and black pepper, and sauté for 2 more minutes. Taste and add more salt, pepper and/or cumin if needed. Transfer the mixture to a large bowl and set aside. Rinse (or just wipe off) the sauté pan until it is clean.
- Return the sauté pan to the stove, and reduce heat to medium. Place a tortilla* in the center of the pan and immediately sprinkle your desired amount of cheese evenly over the surface of the tortilla. Add a few large spoonfuls (about 1 cup) of the veggie mixture on one half of the tortilla, then sprinkle on some cilantro. Fold the other side of the tortilla over to create a half moon. Continue cooking for another 30 seconds or so, or until the bottom of the tortilla is crisp and golden. (Just lift it up and take a peek to see when it’s ready to go.) Then carefully flip the tortilla over and cook it for an additional 30-60 seconds on the second side.

- Heat a medium skillet over medium heat. Warm your tortilla for about 30 seconds, flipping halfway. Flip once more, then sprinkle one-half of the tortilla with about half of the cheese. Cover the cheese evenly with the remaining fillings: beans, bell pepper, onion and jalapeño (if using).
- Sprinkle the remaining cheese over the fillings, and fold over the empty side of the tortilla to enclose the fillings. Quickly brush the top of the quesadilla with a light coating of oil, then carefully flip it with a spatula.
- Let the quesadilla cook until golden and crispy on the bottom, about 1 to 2 minutes, reducing the heat if necessary to prevent burning the tortilla. Brush the top with a light coating of oil, then flip it and cook until the second side is golden and crispy.
- Immediately remove the skillet from the heat and transfer the quesadilla to a cutting board. Let it cool for a minute to give the cheese time to set, then use a chef’s knife to slice it into 3 pieces. Serve promptly, with any sauces or garnishes that you’d like.
