QUEEN CAKES: CLASSIC SULTANA FAIRY CAKES



Queen cakes: classic sultana fairy cakes image

Number Of Ingredients 6

110 g Butter (softened)
110 g caster sugar (plus extra for sprinkling)
2 medium eggs (beaten)
110 g self-raising flour (sieved (if you don't have Self-Raising flour see my Notes below) ))
A little milk (if necessary)
60 g sultanas (or other dried fruit of choice such a raisins or currants)

Steps:

  • Preheat your oven to 180ºC/350ºF/Gas Mark 4.
  • Grease a 12-hole bun tin well. or you can use paper bun cases.
  • Cream the butter and sugar together until light, pale and fluffy.
  • Add the eggs a little at a time, beating well after each addition.
  • Fold (NO NOT beat) the flour into the mixture with a little milk, if necessary, to give a soft dropping consistency. Add the sultanas and mix well.
  • Place spoonfuls of the mixture into the prepared tin or paper cases.
  • Bake for 15-20 minutes until firm to the touch and golden brown. Turn out on a wire rack to cool and sprinkle with a little extra caster sugar.

100 g plain flour
1 teaspoon baking powder
75 g butter
1 large egg
1/2 teaspoon vanilla essence
50 g raisins
milk (if necessary)

Steps:

  • Preheat oven to 190°C Grease a patty tin or use paper cups.
  • Sift flour and baking powder.
  • Cream fat and sugar until mixture is light and creamy. Add in vanilla essence.
  • Beat egg and add it gradually to the mixture, beating well after each addition.
  • Fold in the sifted flour with a metal spoon.
  • Add a little milk if necessary to give it a soft dropping consistency.
  • Mix in the raisins.
  • Fill greased patty tin or paper cups half full with the mixture.
  • Bake for 20 minutes.
