I got this recipe inside a container of Quaker Oats a long long time ago. These cookies are SOOO GOOD!

Ingredients

3/4 cup vegetable shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water
1 teaspoon vanilla
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup all-purpose flour
1 teaspoon salt (optional)
1/2 teaspoon baking soda

Steps:

(Heat oven to 350 degrees).
Combine dry ingredients.
Beat together shortening, sugars, egg, water and vanilla until creamy.
Add combined dry ingredients; mix well.
Drop by rounded teaspoonfuls onto ungreased cookie sheet.
Bake 12-15 minutes.
Remove to wire rack; cool completely.
Store tightly covered.
*OPTIONAL: Add 1 c of any combination: raisins, chopped nuts, semisweet chocolate or flaked coconut.
**For larger cookies, drop by rounded tablespoonfuls, bake 12-14 minutes at 375 degrees.
