Korma Murg Curry (Korma-Style Chicken Curry) image

The spices used in the sauce lend the chicken a lovely warmth, while cashews and onions bring creaminess. Make this Indian recipe in just 30 minutes!

2 tablespoons sunflower oil
1 cinnamon stick, broken up into small pieces
2 onions, roughly chopped
1 green chile, roughly chopped
2 garlic cloves, roughly chopped
1-inch piece of fresh root ginger, peeled and roughly chopped
50g (⅓ cup) cashew nuts (about 28 cashews)
1 tablespoon white poppy seeds (see headnote)
100ml (3 1⁄2 fl oz) water
1 teaspoon salt
1 teaspoon garam masala
1 teaspoon chile powder
200ml (7fl oz) boiling water
650g (1lb 7oz) boneless, skinless chicken thighs, cut into 5cm (2 inch) pieces
1 tablespoon heavy cream
¾ cup fresh cilantro leaves, finely chopped

Steps:

  • Heat the oil in a pan and add the cinnamon. Once it starts to sizzle, add the onions with the green chile and cook over a medium heat for 5 minutes until they start to color.
  • Add the garlic, ginger and cashew nuts and cook over a medium heat for 5 minutes until lightly golden. Stir in the poppy seeds and then pour in the measured water.
  • Transfer the mixture to a blender and blitz until smooth, then return to the pan.
  • Stir in the salt, ground spices and measured boiling water then add the chicken pieces. Cover and cook over a medium heat for about 10 to 15 minutes, until the chicken is cooked through.
  • Add the cream and cilantro, then serve.

2 tablespoons ghee (or oil)
1 kg beef (gravy or chuck), cut into 3cm pieces
1 cup chopped onions
1/4 cup korma paste (Recipe link just below this recipe)
1 cup water
1 cup yogurt
1/4 cup chopped coriander (cilantro) leaves
Salt to taste
Coriander (cilantro) leaves, fried cashew nuts, to garnish

Steps:

  • Make korma paste according to recipe instructions. Recipe here. Set aside.
  • Heat ghee in a large frying pan over high heat. Add beef and cook, turning often, for 4-5 minutes or until lightly browned. Remove beef from the pan. Set aside.
  • Reduce heat to medium. Add onions. Cook, stirring, for 2-3 minutes or until onions are browned. Add korma paste. Sauté, stirring, for one minute or until fragrant.
  • Add water, yogurt, coriander (cilantro) leaves and browned beef. Season with salt. Stir to combine. Bring to the boil. Simmer, covered, for one hour or until beef pieces are tender.
  • Alternatively, cook beef in a pressure cooker for about 6-7 whistles. Garnish with coriander (cilantro) leaves and fried cashew nuts.

This is the first Indian dish I ever made and it was perfect! The spices gave it the perfect flavor and it wasn't too hot. I served it over basmati rice, but I'm sure it would also be good with naan bread or even by itself. There's not meat in this dish but it's very filling with the rice and I'm sure it would be delicious with tofu or cubed chicken added as well.

1 1/2 tablespoons vegetable oil
1 small white onion, diced
4 garlic cloves, minced
1 teaspoon fresh gingerroot, minced
2 small yukon gold potatoes, cubed
4 carrots, cubed
1 fresh jalapeno pepper, seeded and sliced
6 tablespoons unsalted cashews, ground
1 (4 ounce) can tomato sauce
1 1/2 tablespoons hot curry powder
1 teaspoon cardamom
1 teaspoon garam masala
2 teaspoons sea salt
1 cup frozen green pea
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 (15 ounce) can light coconut milk
cilantro (to garnish) (optional)

Steps:

  • On a stove top heat the oil in a skillet over medium heat and cook onion until tender. Mix in the ginger, garlic, and 1 tablespoon of the curry powder; continue to cook for 1 minute. In a separate bowl mix potatoes, carrots, jalapeno, cashews, and tomato sauce then add to skillet with salt and 1/2 tablespoon curry powder. Cook for about 20 minutes or until the potatoes are tender. Add the bell peppers, peas, and coconut milk to the skillet. Reduce the heat to low and simmer for about 10 minutes until the consistency has thickened. Put cilantro on top if desired.

  • Heat the ghee or oil in a large frying pan over a medium heat. When small bubbles begin to appear, toss in the cinnamon stick and cardamom pods. Let the whole spicesflavour the oil for about 30 seconds then stir in the garlic and ginger paste.
  • Fry for about 20 seconds before adding the sugar, ground almonds and coconut flour. Mix into the oil and pour in about 250ml (1 cup) of the base curry sauce; it will bubble up nicely.
  • Break up the block coconut, if using block, and add it to the simmering sauce. It will dissolve and give your korma a nicelight yellow tone.
  • Add a splash more base sauce from time to time as the curry simmers. Stir in the pre-cooked chicken. If using raw chicken, press it right into the sauce so that it cooks quickly and evenly.

  • Boil the potato in 2 1/2 cups of water for 3 minutes in a medium sized pot, add the carrots and green peas to the same pot with the potato and boil for another 3 minutes Next add the cauliflower and the beans to this same pot and boil for another 3 minutes. Drain the vegetables and set aside.
