8 cups flour
8 teaspoons baking soda
1 cup sugar
4 eggs
3 (8 ounce) cans evaporated milk
1 teaspoon vanilla
1 (4 ounce) bottle coconut extract
1 cup oil
3 cups sugar

Steps:

  • Take the 3 cups of sugar and melt in the pot. As it browns, carefully add 3 cans of water stirring constantly until it looks smooth. When smooth, pour to a bowl and let cool.
  • In a large bowl combine all your wet ingredients--sauce,eggs, oil, evaporated milk, vanilla and coconut. Slowly sift the flour together with the baking soda, and then blend all the ingredients together for about 3 minutes.
  • Grease your pan, and pour ingredients and then bake or steam for about an hour.

1 quart vegetable oil for frying
1 (10.25 ounce) can beef gravy
5 medium potatoes, cut into fries
2 cups cheese curds

Steps:

  • Heat oil in a deep fryer or deep heavy skillet to 365 degrees F (185 degrees C). While the oil is heating, you can begin to warm your gravy.
  • Place the fries into the hot oil, and cook until light brown, about 5 minutes. Make the fries in batches if necessary to allow them room to move a little in the oil. Remove to a paper towel lined plate to drain.
  • Place the fries on a serving platter, and sprinkle the cheese over them. Ladle gravy over the fries and cheese, and serve immediately.

  • Let's first make the syrup. Combine sugar, 1 cup water and cream of coconut in a saucepan or deep skillet. Cook on medium heat for about 10-15 minutes until it gets all bubbly and frothy. Leave to cool completely for 15 minutes.
  • Combine butter and sugar and mix until creamy, using an electric mixer. Add eggs and beat well. Add syrup and mix until thoroughly combined. Add dry ingredients and mix well.
  • Pour into whatever vessel you use for steaming. I poured it into individual greased ramekins in a pot. Fill pot with water enough to touch bottom of ramekins. Cover and steam for 45 minutes-2 hours, until knife inserted comes out clean. Cooking time will vary, depending on size of vessel you are steaming it in. Check periodically and add water when necessary as it evaporates.
