- Place sweet potatoes in a large saucepan and cover with cold water by 2 inches. Salt generously. Bring to a boil, then reduce heat to a simmer and cook until sweet potatoes are easily pierced with the tip of a paring knife, 15-20 minutes.
- Meanwhile, combine egg whites, sugar, and salt in the heatproof bowl of a stand mixer set over a pan of simmering water. Whisk constantly by hand until mixture is warm to the touch and sugar has dissolved (the mixture should feel completely smooth when rubbed between your fingertips).
- Attach the bowl to a mixer fitted with the whisk attachment. Starting on low and gradually increasing to medium-high speed, whisk until stiff, but not dry, peaks form. Continue mixing until meringue is fluffy and glossy and completely cool (test by touching the bottom of the bowl), 10-15 minutes. Add vanilla and pumpkin pie spice and mix on low just until combined. Transfer meringue to a disposable piping bag fitted with a 1A Wilton decorating tip and set aside.
- When sweet potatoes have finished cooking, drain, then return to pan. Heat over medium, stirring, until any remaining liquid has evaporated and a thin film covers bottom of pan, about 2 minutes.
- Remove pan from heat. Add milk and butter and mash until smooth. Season to taste with salt and pepper. Transfer mashed sweet potatoes to a buttered 8x8" square baking dish. Using the meringue, pipe a checkerboard pattern onto the potatoes. Toast meringue with a kitchen torch, or place under a broiler, until peaks are toasted and golden and serve.

- Rub the sweet potatoes with olive oil. I use this oil spray bottle from Amazon and spritz both sides and rub the oil in. Optional to sprinkle salt over the sweet potato.
- Place the sweet potatoes in the air fryer basket. Air fry on 400 degrees for 35-40 minutes or until the sweet potatoes are soft. Check if the sweet potatoes are finished by piercing it with a fork to ensure it's soft.
- Preheat oven to 400 degrees.
- Rub the sweet potatoes with olive oil. I use this oil spray bottle from Amazon and spritz both sides and rub the oil in. Optional to sprinkle salt over the sweet potato. (You can also wrap the potatoes in foil if you wish).
- Place the sweet potatoes on a baking sheet. Bake for 60-90 minutes or until soft. Check if the sweet potatoes are finished by piercing it with a fork to ensure it's soft. Timing will vary based on the size of the potatoes you have.
- Place a large pot of water on the stove on high heat. Ensure the sweet potatoes will fit in the size of the pot you are using. You may need to trim them down. Use enough water to completely submerge the sweet potatoes.
- Boil for 30-40 minutes or until they are soft.
- Optional: Place them in a bowl of cold water for 5-8 minutes to remove the skin easily.

- Preheat oven to 375 degrees F (190 degrees C).
- Poke holes all over potatoes with a fork. Arrange in a baking dish.
- Bake in preheated oven until potatoes are easily pierced with a knife, about 45 minutes.
- Cut potatoes in half, widthwise, on a cutting board. Scoop flesh into a mixing bowl. Add coconut milk, lime juice, salt and pepper to taste. Beat with an electric mixer until smooth.

- Prepare the potatoes by slicing off a tiny bit on one side, so the potato stays flat when you put it down and does not roll away. Put a chopstick or the handle of a wooden spoon on each side of the potato, and use a sharp knife to make 1/4" slits. The chopsticks or spoon handles will stop you from slicing through the potato.
- Mix together the melted ghee, parsley, and salt, and use a brush to spread about 1/2 of the mixture over the potatoes. Be sure to get some of the mixture in the cracks!
- Bake for 30 minutes, remove from oven and spread the rest of the ghee mixture over potatoes. You may need to reheat it if it hardens. Bake for another 10-15 minutes until middle of potatoes are as tender as desired. Sprinkle with salt, and brush with additional ghee and parsley to taste.
