Boston Baked Beans image

This signature dish of Boston, Massachusetts dates from the 17th century, when the Puritan sabbath - a day on which work was forbidden - was observed from sundown on Saturday until Sunday evening. The baked beans would be started on Saturday morning and then left to cook slowly until dinnertime so that the Puritan housewife did not have to break the sabbath to cook a meal. Leftover beans would then be served for Sunday breakfast or lunch. Boston baked beans were often baked in communal ovens by the local baker, who would collect bean pots from the townspeople on Saturday morning and return the pots of baked beans in time for dinner that night. One of my most treasured possessions is my grandmother's bean pot.

1 lb dried navy beans or 1 lb dried great northern beans, rinsed and picked over
2 medium onions, 1 peeled and left whole and 1 chopped
1/4 lb salt pork, diced
2/3 cup molasses
3 tablespoons brown sugar
1 tablespoon dry mustard
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground cloves
1 bay leaf

Steps:

  • Soak the beans overnight in water to cover by 3 inches. Or, alternatively: place the beans in a saucepan with water to cover by 2 inches; bring to a boil and boil for 2 minutes; remove from the heat, cover, and let stand for 1 hour.
  • Drain the beans and place them in a large saucepan with 8 cups of water. Bring the beans to a boil over medium-high heat. Add the whole onion, reduce the heat to low and simmer, partially covered, until beans are half tender, about 30 minutes. Drain the beans and discard the onion.
  • Meanwhile, in a small saucepan of boiling water, blanch the salt pork for 3 minutes. Drain and set aside.
  • Preheat the oven to 250 degrees Fahrenheit.
  • In a bowl, combine the chopped onion with the molasses, brown sugar, dry mustard, salt, pepper, and cloves. Stir in 2 cups of water.
  • Place the beans and reserved salt pork in a 2 1/2-quart casserole or bean pot. Add the bay leaf. Pour the onion-molasses mixture over the beans. Cover tightly and bake for 3 1/2 hours.
  • Remove the cover, stir the beans, and continue baking, uncovered, for 30 minutes longer, discard the bay leaf before serving.

Based on a recipe from The New Basics Cookbook, authors of The Silver Palate Cookbook. The intro says, "One of those American classics, first created in the Puritan era in Boston. No cooking was allowed on the Sabbath, so they served beans Saturday night for dinner, for Sunday breakfast with codfish cakes and Boston Brown Bread, and again for Sunday lunch." Note: the 4 hour cooking time includes a one hour simmer and a 2 1/2 hour baking during which time occasional stirring is required; it does not include the overnight bean soaking time.

1 lb dried navy beans or 1 lb great northern bean
8 ounces slab smoked bacon, cut into 1/4-inch cubes
1 cup onion, chopped
2 garlic cloves, chopped
1 1/2 cups dark brown sugar, packed
2 cups ketchup
6 tablespoons maple syrup
6 tablespoons dark molasses
1/4 cup Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Rinse and pick through beans; soak them overnight in large pot of water.
  • Place the beans in a colander and rinse well under cold running water. Transfer beans to a heavy saucepan. Cover with water and bring to a boil. Reduce the heat and simmer until tender, 45 minutes to 1 hour. Drain, reserving the liquid.
  • Preheat the oven to 300 degrees farenheit.
  • Heat a 2-quart ovenproof casserole or dutch oven over medium heat; saute the bacon until it is slightly crisp and fat is rendered, 5 minutes. Add the onions and garlic, and cook until wilted, 5 to 10 minutes.
  • Add the brown sugar and stir over medium-low heat until dissolved, about 5 minutes. Stir in the ketchup, syrup, molasses, Worcestershire, salt, and pepper. Add the drained beans and mix well.
  • Cover casserole and transfer to oven. Bake, stirring occasionally (making sure you scrap the bottom of the casserole), for 2/12 hours.
  • Add 3/4 cup of the reserved bean liquid, recover, and bake 30 minutes. Then remove the cover and bake until the sauce is thick and syrupy, another 10 to 15 minutes, stirring once. Serve hot.

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

1 -1 1/2 lb navy beans (2 1/2 to 3 cups measure)
bay leaf
2 garlic cloves
1/4 cup molasses
1/4 cup maple syrup
3/4 cup ketchup
1 medium onion, diced
2 teaspoons salt
2 teaspoons vinegar
1 1/2 teaspoons dry mustard (Keen's brand is what I use)
2 -3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
4 slices bacon (optional)
reserved bean liquid

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).
  • Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
  • Arrange bacon on top.
  • Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
  • Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

I appreciate that some of you have tried this recipe with your own additions but please, you are NOT reviewing MY/Durgin Park's recipe but your own! These, of course, are the ultimate Boston Baked Beans! Please take into account they need to soak overnight. You will need a 2 1/2-quart bean pot or covered casserole. 1 lb dried navy beans (see NOTE)
1/2 teaspoon baking soda
1/2 lb salt pork
1/2 medium onion (peeled and uncut)
4 tablespoons sugar
1/3 cup molasses
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • NOTE: Use navy beans, California pea beans, or small white beans.
  • Soak beans overnight.
  • In the morning, preheat oven to 325°F Place the baking soda in a Dutch oven and fill half way with water.
  • Bring to a boil, add the beans & boil for 10 minutes.
  • Drain beans in a colander and run cold water through them. Set aside.
  • Dice the salt pork (available in the bacon section of the grocery store)into 1-inch squares.
  • Put half of the salt pork on the bottom of the bean pot, along with the onion.
  • Put beans in the pot.
  • Put the remaining salt pork on top of the beans.
  • Mix the sugar, molasses, mustard, salt and pepper with 3 cups of hot water and pour over the beans.
  • Cover pot with lid and place the pot into the preheated oven.
  • Bake for 6 hours.
  • Check pot periodically to make sure the amount of liquid is okay.
  • Add water to the beans slowly as needed to keep them moist; DO NOT FLOOD THEM. Just "top them up".
  • Remove the pot from the oven and serve.
  • NOTE: The Durgin-Park, a Boston restaurant whose origins date back to the American Revolution, is famous for its Boston baked beans, baked Indian pudding and apple pan dowdy. Durgin-Park cook Tommy Ryan has prepared this recipe at the restaurant for the past 37 years.
  • Durgin-Park serves 1,000 diners on an average Saturday evening. The waitresses have a reputation for their long memories: the second time you come in, you get the same thing you ordered the first time--unless you speak fast.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.
