- In a large saucepan combine the peas, the watercress, and the water and boil the mixture, covered, for 5 minutes, or until the peas and watercress are tender. Transfer the mixture to a food processor, add the butter and salt and pepper to taste, and purée the mixture.
FRIED-EGG BREAKFAST BLT WITH WATERCRESS
An ode to the BLT, this breakfast-ready version uses canadian bacon for a meatier twist and relies on watercress for the "L" in the sandwich, which adds a fresh, almost citrus-like crunch to each bite.

- Heat oil in a large cast-iron or nonstick skillet over medium-high. Add bacon in a single layer and cook, flipping once, until warmed through, 2 to 3 minutes. Transfer to a plate; cover to keep warm.
- Return skillet to medium-high (add more oil if necessary). Crack eggs into skillet, season with salt and pepper, and fry until whites are set but yolks are still runny, 3 to 4 minutes.
- Spread mayonnaise onto bread; divide bacon and tomatoes between slices. Season tomatoes with salt and pepper. Top with watercress, eggs, and remaining bread slices.
CREAM OF POTATO SOUP WITH WATERCRESS

Steps:
- Melt butter in heavy large saucepan over medium heat. Add potatoes and onions. Stir until coated with butter, about 1 minute. Sprinkle flour over; stir 1 minute. Add 2 3/4 cups broth and milk. Cover pan. Boil gently until potatoes and onions are tender, about 10 minutes.
- Puree soup in batches in blender. Return to pan. Add 1 3/4 cups watercress. Bring back to simmer. Season with salt and pepper. Thin with more broth, if desired.
- Lade soup into bowls. Garnish with remaining 1/2 cup watercress.

Steps:
- Bring a pot of water & salt to a boil. Add potato. Boil until very soft, about 20 minutes.
- Add watercres. When the water comes back to a boil, cook 1 minute.
- Drain & press down to get all the liquid out. puree in a food processor, add butter, puree again. Season to taste.

- Heat the olive oil in a very large saucepan. Add the leeks, celery and potato and cook over moderately low heat, stirring often, until the vegetables are slightly softened, about 10 minutes. Add the chopped lettuce by large handfuls, stirring each batch until wilted before adding the next. Add 2 cups of the vegetable stock and season with salt and pepper. Reduce the heat to moderately low. Cover and simmer the soup, stirring often, until the vegetables are very soft, about 20 minutes. Add the remaining 2 cups of stock, cover and cook for 20 minutes longer.
- Working in batches, carefully puree the hot soup in a blender. Pour the soup into a clean saucepan and season with salt and pepper.
- In a medium bowl, prepare an ice water bath. Set aside 8 small watercress sprigs. In a medium saucepan of boiling salted water, blanch the remaining watercress and the basil leaves for 5 seconds. Drain and plunge into the ice water bath to cool. Drain again and squeeze out any excess water, then coarsely chop. Transfer the chopped watercress and basil to a blender. Add the water, chives, extra-virgin olive oil and marjoram and blend until emulsified. Transfer the puree to a bowl and season with salt and pepper.
- Gently reheat the soup and ladle into warmed shallow bowls. Drizzle some Tuscan olive oil and a rounded tablespoon of the watercress puree over the soup. Garnish with the reserved watercress sprigs and serve.

Pour soup back in pot to warm if serving hot, or refrigerate until ready to serve. Before serving, if soup is too thick, add more milk or stock. Garnish, if desired.
