Pumpkin Cake Bars come together so easily in one bowl! This delicious fall snack cake is as simple to make as a quick bread, and is loaded with flavor. Add white chocolate chips and chopped pecans for the best pumpkin cake!

1/2 cup unsalted butter
1 cup light brown sugar
2 eggs
1 cup canned pumpkin
1 1/2 teaspoons vanilla
2 cups all purpose flour
1 cup quick oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1 teaspoon salt
1 cup white chocolate chips
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 350. Grease a 9 X 9 pan or line with parchment paper (I also like to butter the parchment).
  • Cream together the butter and sugar in a large bowl.
  • Mix in the eggs one at a time and then add the pumpkin and vanilla.
  • Add the flour, oats, baking soda, cinnamon, ginger, cloves, nutmeg, and salt. Stir in the white chocolate chips and pecans.
  • Pour the batter into the prepared pan and bake for 35 or 40 minutes, or until a pick inserted into the center comes out clean.
  • Let the bars cool completely before slicing. If you used parchment paper you can lift the whole pan out and then slice.

4 large eggs
1 2/3 cups white sugar
1 cup vegetable oil
1 (15 ounce) can pumpkin puree
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
6 ounces cream cheese
6 tablespoons butter, softened
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350°F.
  • Grease and flour one glass 9 x 13 inch pan.
  • In a mixing bowl, beat together the eggs, sugar, oil and pumpkin.
  • Sift together the flour, baking powder, salt, baking soda, salt and cinnamon; add to wet ingredients and mix thoroughly.
  • Spread into prepared pan.
  • Bake at 350° for 25 to 30 minutes.
  • Remove from oven and allow to cool.
  • For the frosting: beat together the cream cheese, butter and confectioner's sugar.
  • Evenly spread over bars after they have cooled.

4 large eggs, room temperature
1-2/3 cups sugar
1 cup canola oil
1 can (15 ounces) pumpkin
2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
ICING:
6 ounces cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until set. Cool completely. , For icing, beat the cream cheese, confectioners' sugar, butter and vanilla in a small bowl. Add enough milk to achieve spreading consistency. Spread icing over bars. Store in the refrigerator.

2 teaspoons ground cinnamon
1 teaspoon salt

½ teaspoon ground cloves
1 (29 ounce) can pumpkin puree
2 (12 ounce) cans evaporated milk
1 (15.25 ounce) package yellow cake mix, divided
½ cup butter, melted
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat eggs in a large bowl. Whisk sugar, cinnamon, salt, ginger, and cloves together in a separate bowl. Stir sugar mixture and pumpkin into eggs until completely incorporated.
  • Gradually stir evaporated milk into pumpkin mixture. Add 1 cup yellow cake mix to the pumpkin mixture and stir to remove any lumps. Pour mixture into a 9x13-inch baking dish. Sprinkle remaining yellow cake mix over the top and drizzle butter over the cake mix.

1 package butter recipe golden cake mix (regular size)
1 cup butter, melted
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients; beat on medium speed until smooth. Pour into an ungreased 13x9-in. baking pan. Sprinkle with dry cake mix. Drizzle butter over top; sprinkle with pecans., Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool 1 hour on a wire rack., Refrigerate 3 hours or overnight. Steps:

  • Preheat oven to 350 degrees F. Grease two 9 x 13-inch pans.
  • Combine the flour, baking powder, baking soda, salt, and cinnamon and set aside. In a separate bowl, mix the pumpkin, vegetable oil, eggs, and sugar. Add the flour mixture and stir just until combined. Mix in the walnuts.
