2 tsp pumpkin purée
pinch of ground cinnamon, plus extra to serve (or use pumpkin spice)
pinch of ground ginger
pinch of ground nutmeg
30ml espresso or strong coffee
250ml milk (any will work)

Steps:

  • Put the pumpkin purée in a large heatproof glass or mug. Stir in the spices and espresso or strong coffee.
  • Heat the milk in a saucepan over a low heat until steaming and frothy. Pour into the glass or mug, and spoon over any froth. Stir to combine, then dust with more cinnamon or some pumpkin spice before serving.

This is a great recipe for the holidays; it tastes great and it feels like fall when you drink it. It is similar to the Starbucks® Pumpkin Spice Latte, but I personally like this better. Top with whipped cream and pumpkin pie spice.

1 cup milk, divided
1 tablespoon white sugar, or more to taste
1 tablespoon pumpkin puree
1 teaspoon pumpkin pie spice
½ teaspoon vanilla extract
¼ cup brewed espresso

Steps:

  • Whisk 1/2 cup milk, sugar, pumpkin puree, pumpkin pie spice, and vanilla extract in a small saucepan over low heat. Simmer for 5 minutes. Whisk in remaining 1/2 cup milk.
  • Pour milk mixture through a fine-mesh sieve to remove pulp. Return milk mixture to saucepan and simmer, whisking, 2 minutes. Add espresso and whisk until foamy, 1 minute.

My take on our corner coffee shop's seasonal pumpkin latte. I loved it so much I HAD to do something! You can use canned 'pumpkin pie mix' if you like, since it contains the pumpkin pie spice ingredients already. Top with nutmeg or cinnamon if you like. Enjoy!

1 teaspoon vanilla extract
2 tablespoons white sugar

  • Brew your espresso. Meanwhile, in a small saucepan, whisk together the pumpkin, vanilla, sugar, pumpkin pie spice and milk. Warm over medium heat, whisking constantly, until hot and frothy. Do not bring to a boil. Pour the espresso into a mug and pour the pumpkin spiced milk over it.

3 1/2 cups milk (dairy or non-dairy), divided
4 tablespoons pumpkin puree
1 cardamom pod
1/8 teaspoon ground ginger
1/8 teaspoon of cinnamon
1/16 teaspoon nutmeg
1/8 teaspoon freshly cracked black pepper
5 tablespoons superfine sugar
1/2 tablespoon instant coffee granules

Steps:

  • Heat 3 cups of the milk and the pumpkin in a pot over medium heat. Stir with a silicone spatula until incorporated, about 20 seconds.
  • Grind the cardamom pod in a mortar and pestle.
  • Add the ground cardamom, ginger, cinnamon, nutmeg, pepper, sugar, and instant coffee to the milk. Mix for a further 20 seconds.
  • Foam the remaining 1/2 cup milk with a foaming machine or electric whisk.
  • Pour the coffee into glasses, top with foamed milk, sprinkle with cinnamon powder, and enjoy!

1 cup milk
1 cinnamon stick
1 whole nutmeg
1/2-inch piece ginger, peeled and sliced
1 cup espresso or very strong coffee
Whipped cream for serving
Cinnamon for garnish
1/4 cup granulated sugar

Steps:

  • In a small saucepan, bring the milk, cinnamon, nutmeg, and ginger to a boil. Turn off heat and cover. Let mixture steep for 30 minutes.
  • Divide espresso between 4 cups. Strain milk and divide between the 4 cups. Top each with dollop of whipped cream and dusting of cinnamon.

  • Divide your hot coffee between two large coffee mugs. Add the milk/coconut milk, vanilla extract, pumpkin puree, pumpkin pie spice, salt, and collagen peptides (if using) to a small saucepan and place over medium heat.
