PUMPKIN SLOPPY JOES

Pumpkin Sloppy Joes image

When my oldest granddaughter gave me eight of the 50 pumpkins she grew in her backyard, I didn't know how I'd use them all up! Then I remembered this recipe from a dear friend-I'm glad I tried it. I froze some of the pumpkin to use in this and other recipes, and also froze some of the sloppy joe mixture to enjoy later.-Eleanor McReynolds, Scott City, Kansas

Sloppy Joes for a Crowd image

This is a simple and easy recipe for making Sloppy Joes for 24 or more people. Yes, I know, what kind of good Sloppy Joe recipe uses Manwich®? In this case it's used as a base (like ketchup) to make a really tasty dish. I used the best ideas of several Sloppy Joe recipes on the Allrecipes website, added my own twist, and expanded it for a crowd.

PASTA WITH PUMPKIN SEED PESTO

Pasta With Pumpkin Seed Pesto image

Fragrant with basil and rich with pumpkin seeds and cheese, this is the ideal dish to make ahead of time and pack for lunch. Instead of preparing it to eat as a hot meal or a cold salad, it's designed to be chilled and then enjoyed cold or at room temperature. Cooking the garlic quickly in the water boiled for the pasta softens its sharp edge. A splash of that same boiling water blends with the basil to keep it green. . Rinsing the pasta after cooking it helps the pesto stay flavorful for days in the refrigerator. The tomatoes add a tangy freshness, but they can be skipped altogether or swapped for green beans or peas (just drop them with the pasta during the last few minutes or cooking).

Categories     dinner, lunch, weeknight, pastas, main course

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 8

Salt and pepper
2 garlic cloves, peeled
1 pound fusilli or other short, curly pasta
1/3 cup pumpkin seeds, plus more for sprinkling
1 large bunch basil (4 ounces), leaves and tender stems picked (3 cups)
2/3 cup/2½ ounces finely grated Parmesan, plus more for sprinkling
1/2 cup extra-virgin olive oil
1 1/2 cups grape or cherry tomatoes, halved (optional)

Steps:

  • Bring a large saucepan of generously salted water to a boil. Drop the garlic cloves into the boiling water and boil for 30 seconds to temper their sharpness. Use a slotted spoon to transfer the cloves to a food processor or blender.
  • Drop the pasta into the boiling water and cook until al dente.
  • While the pasta cooks, add the pumpkin seeds and a pinch each of salt and pepper to the garlic, and process until very finely ground. Scrape the sides of the bowl and add the basil. Scoop 1/4 cup water from the saucepan with the boiling pasta and pour over the basil. Process the basil until ground to a paste. Add the Parmesan and oil, and pulse just until incorporated. Taste the pesto and season with enough salt and pepper to make it punchy.
  • Drain the pasta and rinse under cool water until room temperature. Shake dry, then return to the saucepan, and add the pesto and tomatoes, if using. Stir well until everything is evenly coated. Season to taste with salt and pepper. Divide among dishes to serve right away or airtight containers to pack for lunch. Sprinkle with pumpkin seeds and Parmesan, and serve, or cover and refrigerate for up to 5 days.

PUMPKIN SLOPPY JOE HAND PIES

Pumpkin Sloppy Joe Hand Pies image

Creamy pumpkin puree and a hint of warm spices replace the standard ketchup in this fun fall twist on classic sloppy joes. As a finishing touch, the filling is tucked neatly inside cute little gourd-shaped pies for a festive handheld dinner that's just a little less "sloppy."

Provided by Catherine McCord

Categories     main-dish

Time 50m

Yield 8 hand pies

Number Of Ingredients 11

1 tablespoon olive oil
1/2 small shallot, finely chopped
1/2 small orange bell pepper (about 3 ounces), seeded and cut into 1/4-inch pieces
8 ounces ground turkey
1 teaspoon pumpkin pie spice, plus more for sprinkling
Kosher salt and freshly ground black pepper
1/4 cup pure pumpkin puree
1 tablespoon tomato paste
1 tablespoon packed light brown sugar
1 tablespoon plain Greek yogurt
One 14- to 16-ounce box refrigerated rolled pie crusts (2 crusts), thawed if frozen

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the shallots and bell pepper and cook, stirring occasionally, until just softened, 3 to 4 minutes. Add the turkey, 1 teaspoon pumpkin pie spice, 1 teaspoon salt and a few grinds of black pepper. Cook, breaking up the turkey with a wooden spoon or spatula, until no longer pink, 5 to 6 minutes. Stir in the pumpkin puree, tomato paste, brown sugar and Greek yogurt until well combined. Transfer to a medium bowl and refrigerate to cool slightly while you prepare the dough.
  • Meanwhile, roll out 1 pie crust into a 12-inch round with a rolling pin. Use a 4-inch pumpkin-shaped cutter to cut out 8 pumpkins, rerolling the scraps as needed. Divide the pumpkins between the prepared baking sheets (these are the bottom crusts). Repeat with the remaining sheet of pie dough, but do not transfer the cutouts to the baking sheets (these are the top crusts); set aside.
  • Scoop 2 tablespoons of the turkey mixture into the center of each bottom crust leaving a generous border around the edges.
  • Use your finger to dab the edges of the dough with water and top each with a top crust to completely cover the filling. Press down gently around the edges with your fingers to seal. Sprinkle with pumpkin pie seasoning and a pinch of salt. Cut three vertical slits in the top of each hand pie to resemble the ribs on a pumpkin.
  • Bake until the crusts are golden brown, 15 to 18 minutes. Let cool slightly on the baking sheet before serving, about 5 minutes.
