My kids are allergic to nuts, but they can eat pumpkin seeds! Every fall we save the seeds from our pumpkins to add to various recipes, including this one. -Suzanne Earl, Spring, Texas

Number Of Ingredients 7

1 teaspoons plus 2 cups butter, softened, divided
2 cups sugar
1/2 cup water
2 tablespoons corn syrup
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1 cup roasted pumpkin seeds or pepitas

Steps:

  • Grease a 15x10x1-in. pan with 1 teaspoons butter; set aside. In a heavy saucepan, melt the remaining butter. Stir in the sugar, water, corn syrup, pie spice and salt. Cook, stirring continuously, over medium heat until a candy thermometer reads 300° (hard-crack stage)., Remove from the heat; stir in pumpkin seeds. Immediately pour into prepared pan. Let stand at room temperature until cool, about 1 hour. Break or cut into bite-sized pieces. Store in an airtight container at room temperature.

  • Spray a baking sheet with cooking spray or line with greased parchment paper. Arrange the crackers on the prepared pan in a single layer, breaking them to fit if need be.
  • Stir the sugar, butter, and syrup in a large saucepan over medium-low heat until the sugar is melted. Brush the side of the pan with a moistened pastry brush to wash down any sugar crystals. Insert a candy thermometer. Cook the syrup over medium heat without stirring until it starts to brown around the edge. Continue simmering, carefully swirling the pan occasionally, until the temperature registers 300° F.
  • Slowly and carefully pour the caramel over the crackers, then spread with an offset spatula into an even layer completely covering the crackers. Let cool for 2 minutes, then sprinkle the chocolate on top. Let stand until the chocolate starts to melt, then spread the chocolate evenly over the toffee. Sprinkle the pumpkin seeds and cacao nibs evenly over the chocolate. Freeze the toffee until set, about 15 minutes.
  • Invert the toffee onto a work surface and peel off the parchment, if using. Invert again and break into large shards.

  • Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat. Spread the chopped pecans on top and toast for 7-8 minutes or until fragrant and lightly browned. Set aside. 1 cup will be used inside the toffee and the rest are sprinkled on top.
  • While stirring with a wooden spoon, melt the butter over medium heat in a 3-quart heavy-duty saucepan. Once melted, add the water, 1 cup (200g) granulated sugar, salt, and corn syrup. Stir constantly until the sugar dissolves, then brush down the sides of the pan with a water-moistened pastry brush. Attach a candy thermometer to the pan, making sure the bulb is not touching the bottom of the pan (as you’ll get an inaccurate reading).
  • Stir the mixture every minute as it begins to boil. Rapid bubbles, a thicker consistency, and a slightly darker color form around 240°F (116°C). Continue to stir every minute until it reaches 290°F (143°C; soft crack stage). Be watchful– the temperature slowly rises in the beginning, but then skyrockets quickly. If you notice it’s rising very fast, you can even turn off the heat when the toffee reaches 285°F (141°C), as it will continue to cook in the few seconds after.
  • Immediately remove the pan from heat and stir in 1 teaspoon pumpkin pie spice and 1 cup toasted pecans. Pour the toffee out onto a silicone baking mat lined baking sheet. Smooth into an even layer. The toffee should be thick and not spread all the way to the edges of the pan. Cool the toffee for 5 minutes.

  • Gather Your Ingredients - Toffee! In a sauce pan, combine the butter, sugar, and salt. Measure out your pumpkin seeds, cinnamon, and pumpkin pie spice in a separate bowl and keep nearby.
  • Cook That Sugar! Place your pan on medium high heat and cook the sugar mixture. Use a whisk to stir this - you want a happy medium mixing speed.
  • Cook to 296 Degrees F. Once your mixture is combined and starting to bubble like molten lava, you can start checking the temperature, though you might want to want until you are starting to see it caramelize in color a tad.
  • Add Mix-Ins! Once you pull it off the stove switch from a whisk to a spatula, add in the spices and pumpkin seeds. Quickly, but safely please.
  • Pour! Once you have quickly mixed in the pumpkin seeds and spices, pour the toffee mixture onto a lightly sprayed pan or if you have silicone pads, they work fantastic too.
  • Break It Apart! Once the toffee has cooled and hardened, break it apart into small one to two bit sized pieces. At this point if you don't want to coat them you can be done and store as is in an air tight container or baggie.
  • Orange-Spiced Sugar Coating! In a small container, combine all the topping ingredients and stir until well incorporated.
  • Toss the Toffee! After your sugar coating is prepped, toss your toffee pieces into it, shake of access and then done!
  • Snack! There you have it! Regular and Orange-Spiced Pumpkin Seed Toffee. I highly recommend the coated toffee. The orange and Coriander pair really well and make for a yummy mix of flavors with the toffee.
