1/2 cup pumpkin purée
1/4 cup coconut oil, melted
1/4 cup honey or maple syrup
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon sea salt
2 eggs
2 cups nuts of your choice, chopped
1/2 cup pumpkin seeds
1/2 cup dried cranberries
1/2 cup mini chocolate chips

Steps:

  • Preheat oven to 350°F. First, whisk together the pumpkin purée, coconut oil, honey, eggs, sea salt and pumpkin pie spice in a medium sized bowl until blended together. Then, add in the chopped nuts, pumpkin seeds, dried cranberries and mini chocolate chips and stir until everything is combined. Next, drop by spoonfuls onto lightly greased cookie sheet. Bake for 15 minutes. Lastly, let cool for a few minutes before removing cookies from the tray. Enjoy!

Number Of Ingredients 15

2 and 1/2 cups Mishpacha Flour
1 teaspoon baking soda
1 teaspoon Haddar Baking Powder
1/2 teaspoon nutmeg
1 teaspoon Gefen Cinnamon
1/2 teaspoon salt
1 and 1/2 cups sugar
1/2 cup margarine (use soy-free if needed)
1 cup pumpkin puree (not pumpkin pie filling)
1 egg
1 teaspoon Gefen Vanilla Extract
2 cups confectioner's sugar
3 tablespoons rice milk
1 teaspoon Gefen Vanilla Extract
1 tablespoon oil

Steps:

  • Gently mix first six ingredients in bowl. Place remaining ingredients in a mixer and thoroughly mix. Add contents of bowl to the mixer and combine till mixed. Refrigerate dough for half an hour.
  • Using an ice cream scooper, place scoops of dough one inch apart on baking sheet. Bake at 350 degrees Fahrenheit for 15-17 minutes.
  • Combine ingredients until glaze forms. Drizzle over cooled cookies.

1 cup oat flour
1/4 cup rolled oats
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp baking soda
1/2 tsp sea salt
1/4 cup melted coconut oil
1/2 cup pumpkin puree
1 egg
1 tsp vanilla extract
1/2 cup coconut sugar
1/3 cup unsweeetend shredded coconut
1/3 cup chocolate chips
1/3 cup pecans (chopped)

Steps:

  • Preheat the oven to 350 F. Line a rimmed baking sheet with parchemnt paper or silicone mat. Stir together the oat flour, oats, cinnamon, pumpkin pie spice, baking soda, and salt in a large bowl until combined.
  • Whisk together the coconut oil, pumpkin puree, egg, vanilla and coconut sugar in a medium bowl.
  • Pour the liquid ingredients into the dry ingredients and mix until well incorporated. Add in the coconut, chocolate chips and pecans and stir until combined.
  • Scoop one heaping tablespoon of dough and shape it into a cookie. Place on the prepared baking sheet and continue until you have 12 cookies.
  • Bake for 15 minutes or until fragrant, lightly browned, and set through. Cool and enjoy.

¼ cup melted coconut oil
¼ cup honey *Vegan option use maple syrup*
1½ teaspoons pumpkin pie spice (Find HERE)
½ teaspoon sea salt
2 eggs *Vegan option use flax or chia seed eggs - tutorial HERE*
2 cups chopped nuts of choice (I use a mix of walnuts and pecans)
½ cup pumpkin seeds (I use THESE)
½ cup dried cranberries (I use THESE)
½ cup mini chocolate chips (I use THESE)

Steps:

  • Preheat oven to 350 degrees F.
  • First, whisk together the pumpkin puree, coconut oil, honey, eggs, sea salt and pumpkin pie spice in a medium sized bowl until blended together.
