PUMPKIN-CREAM CHEESE BUNDT® CAKE
This is more of a maple-pumpkin bread with a cream cheese center, than it is a true cake; but it's delicious nevertheless. It's not overly sweet and goes great with a cup of coffee. It also seems to taste better the next day, as the spices seem to come out a little more the longer the cake sits.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 12-cup fluted tube pan (such as Bundt®).
- Whisk flour, baking soda, cinnamon, cloves, salt, ginger, nutmeg, and allspice together in a large bowl. Set aside.
- Whisk pumpkin, brown sugar, and butter together in a separate large bowl until combined. Whisk in sour cream until no lumps remain. Add maple syrup, heavy cream, eggs, and vanilla extract and whisk until completely incorporated.
- Add flour mixture gradually to pumpkin mixture until just combined, most lumps are gone, and batter is thick, being careful not to overmix.
- Beat cream cheese in a medium bowl using an electric mixer on medium-high speed until smooth. Mix in sugar, egg, and vanilla extract at medium-high speed until thoroughly combined and filling mixture is smooth.
- Pour 1/2 of the cake batter into the prepared pan. Spoon filling over batter, trying to avoid touching the side or center column of the pan. Pour remaining cake batter over filling and smooth gently using a spatula.
- Bake in the preheated oven until a bamboo skewer inserted into the center of the cake comes out fairly clean, with only a few moist crumbs, 55 to 65 minutes. Let cake cool for about 30 minutes before inverting onto a wire rack to cool completely before serving.

- Preheat oven to 325 degrees F and generously grease pan with butter. Make sure every corner of the pan is greased, so that the cake does not get stuck. In a large bowl, whisk together flour, baking powder, and spices. Set aside.
- Add butter, salt, and sugar to a very large mixing bowl. Use a handheld or stand mixer to cream the ingredients together on high speed until fluffy and smooth, about 2-3 minutes. Add pumpkin puree and beat on high speed until fully combined with the butter and sugar, about 1-2 minutes. Add vanilla, then one egg, and beat on low speed until fully combined before adding in the remaining eggs one by one. Be careful not to over-mix.
- Now, add the dry ingredients, and beat on medium speed until just combined. Do not overmix, as this will cause the cake to be dry and dense. Once there are no longer any large streaks of flour remaining and the ingredients have formed a thick, cohesive batter, stop mixing. Use a spatula to give the batter one large stir to ensure that everything has been mixed together well. This batter will be thick and look like soft buttercream frosting.
- Use a large spoon or ice cream scoop to add the batter to the prepared pan, filling the pan about three-quarters of the way. Be careful not to overfill. Bake in the preheated oven for about 55-60 minutes, or until a toothpick inserted in the center of the cake comes out clean. Remove from the oven and let cool in the pan for at least 10 minutes before inverting the cake onto a wire rack.

- Preheat the oven to 350˚Coat a 9x5-inch loaf pan with cooking spray, then line it crosswise with parchment paper, leaving a 2-inch overhang (this will make a sling, allowing you to easily pull the cake out of the pan after it’s cooked).
- In a large bowl, whisk together the flour, almond flour, baking powder, baking soda, salt, cinnamon, ginger, allspice and cloves. Make sure to break up any lumps of almond flour (I use my fingers for this).
- In the bowl of a stand mixer, beat the butter and Domino® Golden sugar on medium-high speed until light and fluffy, about 1 minute. Add the eggs, one at a time. Scrape down the sides, and add the pumpkin puree, vanilla and water. Beat on low until smooth (the batter will look curdled). Scrape the sides. Beating on low, gradually add the flour mixture. Beat until just combined. Using a rubber spatula, give the batter a stir to make sure there are no streaks of flour.
- Transfer the batter to the prepared pan, smoothing the top in an even layer. Bake until golden brown and a toothpick inserted in the center comes out clean (the top will crack), about 55-60 minutes. Transfer to a rack and let cool 10 minutes in the pan. Remove the cake from the pan and let it cool completely on a rack (it’s important to let the cake cool completely before glazing or slicing).
