Steps:
- Mix flour, baking soda and salt in med bowl.
- In lg bowl, beat butter and sugars until creamy.
- Add egg, pumpkin, orange juice and peel, beat until combined.
- Stir in nuts.
- Drop dough by rounded TBS onto lightly sprayed baking skeets.
- Bake at 375° for 12 minutes, until light brown.
- Cool on wire racks.
- Glaze: Mix all ingredients in med bowl until smooth.
- Spread each cookie with glaze.
PUMPKIN-NUT COOKIES
Scrumptious pumpkin-nut cookies. I top with a buttercream frosting and color it orange for October and red or white for the holidays. This recipe can be frozen if desired.

- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets.
- Beat shortening with an electric mixer until creamy; add sugar gradually. Beat until light and fluffy. Add pumpkin and eggs; mix well.
- Sift flour, baking powder, cinnamon, salt, nutmeg, and ginger together. Stir into the pumpkin mixture until blended. Add raisins and walnuts.
- Drop teaspoonfuls of cookie dough onto the prepared cookie sheets.
- Bake in the preheated oven until edges are firm and starting to brown, about 15 minutes.

Another of my Mom's recipes. They are delicious !!!! Not sure exactly how many this recipe makes. 2 to 3 dozen or more maybe. Believe me, you will want to double the recipe.

Steps:
- Sift flour, baking soda & salt together 3 times. Add dates & walnuts.
- Cream shortening & then blend in brown sugar, then add egg and beat well.
- Stir in orange rind to the shortening mixture.
- Add the flour mixture, combining until well mixed.
- Drop dough by spoonful, well apart on greased cookie sheet.
- Bake at 350F for 10 minutes.

OLD FASHIONED DATE NUT COOKIES
Originally this was my aunt Alice's recipe. The recipe had a slight Make over. The original recipe calls for all vegetable shortening. I changed it to half butter. I also made a few minor adjustments. I hadn't had these cookies in years. I love date nut cookies. I hope you all enjoy them as much as I do.

Steps:
- 1. Make the filling. Shop the dates. I use a food processor to chop.
- 2. In a large sauce pan add the dates, granulated sugar, orange zest, and 2/3 cup of water. Stir and bring mixture to a boil. Continue cooking until mixture is very thick and boiled down to a paste. Remove from heat. empty into a bowl and refrigerate until cool. Mix in the walnuts after it cools.
- 3. Make the dough: In a bowl. Cream shortening and butter together on low speed with a mixer. Add in the brown sugar and mix well on low speed.
- 4. In another bowl. Mix together eggs, and vanilla. Add this mixture to the butter sugar mixture. Beat well.
- 5. In another bowl sift the flour baking soda, cinnamon and salt together . Add this to the creamed butter mixture. Add 1/2 cup chopped walnut's. Stir to combine.
- 6. Mix well By hand. Refrigerate dough for about 30 minutes to give it more stiffness. Heat oven to 350°. Parchment line a sheet pan, Or you may lightly grease a sheet pan.
- 7. in teaspoon size amounts. Make each in to a ball. Top each cookie with a teaspoon of date filling in center of ball. Push filling down into cookie . Place in oven and bake 10 to 15 minutes or until lightly golden brown. Let cool move to rack to cool completely.
PUMPKIN DATE NUT BREAD

- Preheat oven to 350° and grease a 9x5 inch loaf pan.
- In large bowl, cream together the butter, sugar and 1 egg, then beat in second egg until batter is smooth.
- Stir in pumpkin, orange zest and orange juice.
- In another bowl, combine flour, baking powder, salt, and spices, then add nuts and dates.
- Pour all at once into batter in mixing bowl and stir by hand only to moisten.
- Pour into prepared loaf pan.
- Bake for 60 minutes or until toothpick inserted comes out clean.
- Cool in pan for 10 minutes, them remove loaf to rack to cool completely.
PUMPKIN, ORANGE-DATE NUT COOKIES

- 1. *I coat the orange slices with a little flour to chop them up and to keep them from sticking together. Cream butter and cream cheese; gradually add sugar, beating well. Add eggs; beat until well blended; stir in pumpkin and vanilla.
- 2. Combine flour, baking powder, salt and baking spice in a mixing bowl; stir well. Add dates, orange slices, and nuts to flour mixture. Gradually add flour mixture to cream mixture. Blend well. - 3. Frosting: A mixture of 1 1/2 cups powdered sugar, approximately 1 tbsp. melted butter, 2 - 3 tablespoons of milk, and 1/2 tsp. vanilla.
