3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon

1 can (15 ounces) pumpkin
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, combine sugar and oil until blended. Add eggs, 1 at a time, beating well after each addition. Combine flour, baking soda, cinnamon, nutmeg, salt and cloves; add to egg mixture alternately with pumpkin, beating well after each addition. , Transfer to a greased 10-in. fluted tube pan. Bake 60-65 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes before inverting onto a wire rack. Remove pan and cool completely. Dust with confectioners' sugar.

3 cup cold milk
Nutmeg for sprinkling

Steps:

  • For the crust: 1. Combine butter, flour, chopped pecans and sugar and press into a 9 x 13 in baking dish. Bake at 375 for 10-15 minutes. Let cool completely. For the Cream Cheese Layer: 1. Beat cream cheese, powdered sugar, and 1 1/2 cups cool whip until smooth. Spread over crust. For the Pumpkin Layer: 1. Mix pudding mixes with cold milk, whisking for several minutes. Set it in the fridge for 5-10 minutes to let it thicken. Spread over the cream cheese layer. Top with remaining container of cool whip. Sprinkle with nutmeg. Cut into squares and serve. Keep refrigerated.

1½ sticks (¾ cup) unsalted butter, melted
1½ cups granulated sugar
4 large eggs
1 (15-oz) can 100% pure pumpkin
10 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease a 9-x-13-inch baking dish with butter or nonstick cooking spray.

½ cup confectioners' sugar
½ cup sweetened flaked coconut
1 egg
1 teaspoon vanilla extract

¼ teaspoon ground cloves
1 cup brown sugar
⅓ cup shortening
3 eggs
1 cup pumpkin puree

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease a fluted tube pan (such as Bundt®).
  • Beat cream cheese and confectioners' sugar together in a bowl using an electric mixer until smooth; beat in coconut, 1 egg, and 1 teaspoon vanilla extract.

1 cup vegetable oil
4 eggs
1 (16 ounce) can pumpkin puree
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda

1/2 teaspoon nutmeg
6 ounces softened cream cheese
2 tablespoons softened butter
2 cups powdered sugar
2 tablespoons heavy cream
2-4 tablespoons of water

Steps:

  • Preheat the oven to 350 degrees. Spray a 10 cup Bundt pan with nonstick spray. I've had great results with the nonstick spray made specifically for BAKING.
  • In the bowl of an electric mixer, cream together sugar and oil on medium speed. Add eggs one at a time, mixing well in between.
  • Add your can of pumpkin and let the mixer run while you mix together your dry ingredients in a separate bowl.
  • In the dry ingredient bowl, whisk together flour, salt, baking soda, baking powder, cinnamon, ginger, and nutmeg.
  • Turn the speed down to low and gradually add the dry ingredients to the wet ingredients. Mix together until the flour is incorporated.
  • Spoon the batter evenly into the Bundt pan, and smooth out the top.
  • Bake your cake for 48-55 minutes, checking for doneness by inserting a toothpick into the top of the cake. If your toothpick comes out clean, your cake is done.
  • Remove the cake from the oven, and let it cool in the pan for 15 minutes.
  • Turn the cake onto a cooling rack. Tap the bottom of the Bundt pan with a wooden spoon to help loosen if necessary.
  • Let the cake cool completely before frosting.
  • Whisk together cream cheese, butter, and powdered sugar. Whisk in heavy cream, and then add water by the tablespoon until the desired consistency is reached. It should be just barely pourable, but not too runny.

1 tsp baking soda (sifted to get rid of lumps)
2 tsp baking powder

3 large eggs (room temp)
1 cup oil (extra light olive oil, vegetable or corn oil will work)
15 oz pumpkin puree (can)
8 oz cream cheese (room temp, cut into quarters)
8 Tbsp unsalted butter butter (room temp)
1 cup powdered sugar
2 tsp vanilla extract
Pecans to decorate (optional)

Steps:

  • Prep: Preheat oven to 350˚F. Grease a 9x13 non-stick baking pan or a Glass pyrex dish.** In a large bowl, whisk together the dry ingredients: 2 cups flour, 1 1/2 cups sugar, 1 tsp baking soda, 2 tsp baking powder, 2 tsp cinnamon.
  • In a second medium bowl, whisk together wet ingredients: 3 large eggs, 1 cup oil and 1 can pumpkin, until well combined.
  • Add wet ingredients to dry ingredients and whisk until smooth. Transfer to prepared baking dish and bake at 350˚F for 35-40 min (my oven took 35 min), or until a toothpick poked in the center comes out clean.   • Combine all of your frosting ingredients in the bowl of a stand mixer and using the whisk attachment, beat on medium speed until combined, then beat on high speed 2-3 min or until fluffy, scraping down the bowl as needed.
