Steps:
- Add caramels and heavy cream to a medium saucepan. Cook on low, stirring constantly until they're combined. Cool 15 minutes.
- Mix cream cheese until light and fluffy in a medium bowl. Add pumpkin, brown sugar, vanilla, and pumpkin pie spice. Stir until combined. Fold in the Cool Whip, using a spatula.
- Add 1/2 of the dip to a serving dip, and drizzle with 1/2 of the caramel sauce. Top with the other 1/2 of the dip, and drizzle with the remaining caramel sauce.
- Serve with fresh fruit and crackers.

- In the bowl of a stand mixer, fitted with the paddle attachment, or in a large bowl with an electric mixer, beat cream cheese on medium-high speed until smooth and creamy; about 3 minutes.
- Turn the mixer to low speed and gradually add confectioners' sugar. Once the confectioners' sugar is thoroughly combined, turn the mixer up to medium-high speed and continue mixing for another 2 minutes.
- Reduce mixer speed and add in canned pumpkin, vanilla, and pumpkin pie spice. Mix until thoroughly combined.
- Cover and chill for at least 3 hours.
- Serve with graham crackers, assorted cookies and apple slices.

- Let cream cheese soften on counter for at least 30 minutes and place a mixing bowl and beaters into freezer to chill prior to making dip.
- Remove bowl and beaters from freezer once chilled and pour heavy cream into bowl. Assemble hand mixer and beat the cream to a stiff peak turning it into a whipped cream. A stiff peak is when the beaters can be lifted from bowl and the whipped cream stands up without flopping over. Set bowl to side.
