PUMPKIN CRANBERRY NUT BREAD
This bread has a terrific combination of flavors that's perfect for the holidays. I like to make and freeze loaves to share with friends and neighbors.

Steps:
- In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and orange zest (mixture will appear curdled). Combine the flour, cinnamon, salt, baking soda and baking powder; add to pumpkin mixture just until moistened. Fold in walnuts and cranberries. , Pour into two greased 8x4-in. loaf pans. Bake at 350° for 65-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Liberally spray 8 pint-size wide mouth canning jars with cooking spray.
- Beat brown sugar and butter together in a stand mixer until light and fluffy, 3 to 4 minutes; beat in pumpkin and eggs until smooth and creamy, about 2 minutes.
- Whisk flour, baking powder, baking soda, ground cinnamon, and ground ginger together in a bowl until well blended. Stir flour mixture into pumpkin mixture until combined, 1 to 2 minutes. Stir pecans into batter.
- Spoon batter evenly into 8 canning jars, filling half-way. Place jars on a baking sheet.
- Bake in preheated oven until a tooth pick inserted in the center comes out clean, 45 to 50 minutes. Remove from oven and immediately place lids on jars.

Steps:
- Preheat oven to 350 degrees F & grease two 8"x4" loaf pans.
- In a large bowl, cream butter & sugar until light & fluffy, then add eggs, one at a time, beating well after each addition.
- Beat in the pumpkin & zest (noting that the mixture will look curddled).
- In another bowl, whisk together the flour, cinnamon, salt, baking soda & baking powder, then add it to the pumpkin mixture, mixing until just moistened.
- Fold in the nuts & berries, then pour into the prepared loaf pans.
- Bake for 65-75 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from the pans to a wire rack. Loaves can be frozen for later use.

- 1. Combine all ingredients, except pumpkin, in large bowl. Pour into 1-quart resealable plastic bag. Place in fabric bag. Place bread mix and can of pumpkin in 9x5 inch loaf pan.
- 2. Recipe to Attach: Beat together 3/4 cup pure pumkin, 1/2 cup vegetable oil, 2 large eggs and 1/4 cup orange juice or water in large mixer bowl until blended. Add contents of bag; stir until just moistened. Spoon batter into greased and flour 9x5 inch pan. Bake in preheated 350 degree oven for 60-65 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 10 minutes, remove to wire rack to cool completely. Makes 1 loaf.

- In a large bowl, combine the flour, pumpkin pie spice, baking powder, baking soda and salt, stirring until well blended.
- Place mixture into a 1 quart jar.
- Pack down this layer.
- Add the brown sugar to the jar, firmly packing down.
- Layer the white sugar on top of the brown sugar, firmly packing.
- Layer the pecans and then the dried cranberries into the jar.
- Makes base for one recipe of Layered Pumpkin Cranberry Bread.
- For gift giving, place cap on jar and attach a ribbon and card with the following instructions:.
- Preheat oven to 350°.
- Grease and flour two 7 x 4 inch loaf pans(or 4 small loaf pans).
- In a large bowl, combine the pumpkin, oil and eggs, stirring until well blended and set aside.
- Place contents of jar into a medium bowl and mix until well blended.

- Grease inside of 8 (1 pint) wide mouth canning jars.
- Cream shortening with sugar.
- Beat in eggs, pumpkin, and water.
- Combine flour, spices, baking soda and powder.
- Add to pumpkin mixture.
- Stir in nuts.
- Pour into jars until 1/2 full.
- Bake uncovered for 45 minutes at 325 degrees Fahrenheit.
- When done, remove jars and wipe down.

- Preheat an oven to 350 degrees F (175 degrees C). Sift flour, baking soda, salt, cinnamon, and nutmeg into a large bowl.
- Beat the butter, brown sugar, pumpkin, cranberry sauce, egg, and banana with an electric mixer in a bowl until smooth. Gradually stir in the flour mixture, mixing until just combined. Pour batter into a 9x5-inch loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
