A deliciously moist and tangy cranberry pumpkin bread.

3 ½ cups all-purpose flour
1 cup packed brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
¾ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 cup egg substitute
1 (16 ounce) can whole cranberry sauce
1 (15 ounce) can pumpkin puree
⅓ cup vegetable oil
1 tablespoon orange zest
2 tablespoons chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray two 8x4 inch loaf pans with non-stick cooking spray.
  • Combine the flour, brown sugar, baking soda, baking powder, salt, ground cinnamon and ground cloves in a large bowl and mix well. Set aside.
  • Mix the egg substitute, cranberry sauce, pureed pumpkin, vegetable oil and grated orange zest together. Add this mixture to the flour mixture and stir until just moistened. Pour batter into the prepared pans. Sprinkle the top of each loaf with the chopped nuts.
  • Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Let loaves cool for 10 minutes then remove from pans. Can be made even lower in fat by substituting 1/3 cup applesauce for the 1/3 cup vegetable oil.

2 c. granulated sugar
1 c. packed brown sugar
3/4 c. vegetable oil
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. ginger
1 15 oz. can pumpkin puree
2 eggs
3 1/2 c. flour
1/3 c. water
2 c. fresh cranberries
1 c. powdered sugar
2 oz. cream cheese (softened)
2 tsp. milk
1/2 tsp. vanilla

Steps:

  • Preheat oven to 375 degrees.
  • In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Beat at low speed until blended.
  • Add baking soda, baking powder, salt, and spices. Beat until blended.
  • Add pumpkin and eggs. Beat until blended.
  • Add flour and water and stir just until blended.
  • Stir in cranberries.
  • Pour batter into two (5x9 inch) loaf pans that have been greased and floured.
  • Bake at 375 degrees for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  • Remove from oven; cool 10 minutes in pan, then remove to a wire rack to cool completely.
  • Combine icing ingredients and mix until smooth. Spoon icing over bread. *Icing recipe can be doubled according to taste.

2 1/2 cups of canned pumpkin
4 large eggs (beaten until light and frothy)
1 cup oil
1 1/2 cups brown sugar
1 1/2 cups white sugar
3 1/2 cups flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon ginger
2 cups fresh cranberries (chopped coarsely)
1 batch vanilla icing glaze

Steps:

  • Kick the tires and light the fires to 350 degrees. Grease two standard loaf pans and set aside.
  • Mix your pumpkin, beaten eggs and oil in a large mixing bowl.
  • Mix in the two sugars until they start to dissolve into the mixture.
  • In another smaller bowl, whisk together all your dry ingredients.
  • Add the dry to the wet mixture and mix until just combined. Mix in the cranberries until just mixed throughout the batter.
  • Divide the batter between the two prepared pans. Tap the pans gently on the counter to release any air bubbles.
  • Bake in the oven for 55-65 minutes or until a cake tester or knife inserted comes out clean.
  • Remove and cool for 10 minutes then remove the loaves from the pan.
  • Cool completely. Prepare the icing and drizzle over top of the loaves, Store in an airtight container or wrap in plastic wrap to keep fresh.

1/2 tsp baking powder
3/4 tsp ground cinnamon

1 large O Organics® egg
3/4 cup O Organics® pumpkin puree
1/4 cup vegetable oil
1 TBSP O Organics® Honey
1-2 tsp orange zest
1 TBSP orange juice, from the same orange you zested
1/3 or 1/2 cup fresh cranberries sliced in half
1-2 cups powdered sugar
1-2 tsp milk, plus extra as needed
2 TBSP dried cranberries, for topping

Steps:

  • Pre-heat oven to 350 degrees F. Grease a 8x4 inch loaf pan with oil and set aside.
  • In a medium bowl, combine flour, brown sugar, baking soda, baking powder, cinnamon, salt, nutmeg, and allspice in a bowl and whisk to incorporate.
  • In a large bowl, combine wet ingredients: egg, pumpkin puree, oil, honey orange zest, and orange juice.
  • Slowly sprinkle your flour mixture into the wet ingredients, stirring with a fork until just moistened. The batter will be sticky.
  • Gently fold in cranberries and transfer batter to your greased loaf pan.
  • Bake on the center rack in the center of the oven for 45-50 minutes, using a toothpick inserted into the center of the loaf to test doneness.
  • Transfer bread to a cooling rack and whisk together your icing while the loaf cools.
  • For the icing, combine powdered sugar with a small amount of milk and whisk until icing thickens into a thick glaze. Adjust amounts as needed to achieve your ideal thickness.

4 teaspoons pumpkin pie spice
2 teaspoons baking soda

1/2 cup canola oil
2 cups fresh or frozen cranberries, thawed
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the flour, sugar, pumpkin pie spice, baking soda and salt. In another bowl, whisk the eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in cranberries and walnuts., Spoon into two greased 9x5-in. loaf pans. Bake at 350° for 70-80 minutes or until a toothpick inserted in the center comes out clean. Steps:

  • Preheat oven to 350° F. Grease and flour two 9 x 5-inch loaf pans.
  • Combine flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries. Spoon batter into prepared loaf pans.
