This no-bake pumpkin cheesecake has a jack-o'-lantern brownie grin.

Nonstick cooking spray, for greasing the pan
1 1/2 cups all-purpose flour (see Cook's Note)
1/3 cup unsweetened cocoa powder
1/2 teaspoon fine salt
2 sticks (16 tablespoons) unsalted butter
4 ounces semisweet chocolate, chopped
2 cups granulated sugar
4 large eggs, slightly beaten
One 10-ounce bag bittersweet chocolate chips
One 1/4-ounce packet unflavored powdered gelatin
Two 8-ounce packages cream cheese, at room temperature
One 15-ounce can pure pumpkin puree
1 1/2 cups confectioners' sugar
1/2 cup sour cream
1 tablespoon vanilla extract
Pinch fine salt
1/2 cup store-bought vanilla frosting
Green gel food coloring
1 ounce square semisweet chocolate

Steps:

  • For the brownie: Preheat the oven to 350 degrees F. Line a 10-by-15-inch baking dish (4 1/2 quart) with foil leaving a 2-inch over hang on at least two of the sides. Coat the foil with nonstick cooking spray.
  • Whisk together the flour, cocoa powder and salt in a medium bowl. Melt the butter and semisweet chocolate in a medium saucepan over medium heat, stirring frequently, until smooth. Let cool slightly, about 10 minutes. Stir in the sugar and then the eggs. Add the flour mixture in two batches and stir to combine. Pour the batter into the prepared pan and bake until a toothpick comes out with just a few crumbs, 20 to 25 minutes. Sprinkle the bittersweet chocolate chips evenly over the top of the brownie. Let sit for 5 minutes to melt slightly. Use and offset spatula to spread the chocolate over the brownie. Let the cool completely in the pan on a cooling rack, about 1 hour. Refrigerate until the chocolate is completely set, about 30 minutes. Use the foil overhang to help lift the brownie out of the pan.
  • Lightly coat a 16-inch-long piece of parchment with nonstick cooking spray and place the brownie chocolate coating-side down (this helps to prevent the chocolate from cracking while cutting it). On one half of the brownie, trace the bottom of a 9-inch springform pan with a paring knife and cut out the circle. Fit the brownie circle, chocolate coating-side up, into the bottom of the springform pan and lock the side.
  • For the Jack-o'-Lantern eyes: From the remaining brownie half, use the paring knife to cut out two 2 1/2-inch equilateral triangles.
  • For the Jack-o'-Lantern nose: Cut one 2-inch equilateral triangle.
  • For the Jack-o'-Lantern mouth: Cut a 5-inch-wide half-moon. Cut out a bottom and top tooth that are slightly offset. (If the chocolate cracks at all use a hot, dry offset spatula to re-melt and smooth the chocolate.)
  • Make the cheesecake: Combine the gelatin with 1/4 cup water in a small microwave safe bowl and set aside to soften, about 5 minutes. Combine the cream cheese, pumpkin puree, confectioners' sugar, sour cream, vanilla and salt in a food processor and process until smooth.
  • Microwave the gelatin until melted, stirring as needed, about 30 seconds. Add the gelatin to the cream cheese mixture and process to combine, about 30 seconds. Pour the batter into the springform pan, on top of the brownie bottom.
  • Press the brownie eyes, nose and mouth into the batter until they are even with the top of the batter, taking care not to get any batter on top. Chill in the refrigerator until completely set, 4 hours and up to overnight.
  • For the pumpkin vine and stem: Mix the frosting with green food coloring in a small bowl until it is the color of a pumpkin vine (1 to 2 drops). Transfer to a pastry bag fitted with a small round tip and pipe a curly vine along the top edge of the Jack-o'-Lantern. Push the chocolate square into the top side of the cheesecake about 1/4-inch from the top to make the stem.

2 eggs, room temperature
Butter or cooking spray for greasing the muffin tin.
About 1 tsbp of cocoa powder - for making the jack-o-lantern faces
Standard 12 cup muffin tin
Large cupcake/muffin liners
Halloween Jack-O-Lantern Cookie/Baking Stencils - if you can't get your hands on some of these in time for Halloween, you can make your own stencils by cutting pumpkin faces into heavy card stock with an X-Acto knife. I've also seen similar stencils available at the dollar store.

Steps:

  • Pre-heat the oven to 350°F.
  • Grease the muffin tin with butter or cooking spray and place muffin liners into the cups. Set aside.

12 tablespoons unsalted butter, melted
2 1/2 cups graham cracker crumbs
2 3/4 cups sugar
Salt
2 pounds cream cheese, at room temperature
1/4 cup sour cream
1 15-ounce can pure pumpkin
6 large eggs, at room temperature, lightly beaten
1 tablespoon vanilla extract
2 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
2 cups sweetened whipped cream
1/3 cup toasted pecans, roughly chopped

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F.
  • Brush a 10-inch springform pan with some of the butter. Stir the remaining butter with the crumbs, 1/4 cup of the sugar and a pinch of salt in a bowl. Press the crumb mixture into the bottom and up the sides of the pan, packing it tightly and evenly. Bake until golden brown, 15 to 20 minutes. Cool on a rack, then wrap the outside of the springform pan with foil and place in a roasting pan.
  • Bring a medium pot of water to a boil. Meanwhile, beat the cream cheese with a mixer until smooth. Add the remaining 2 1/2 cups sugar and beat until just light, scraping down the sides of the bowl and beaters as needed. Beat in the sour cream, then add the pumpkin, eggs, vanilla, 1 teaspoon salt and the spices and beat until just combined. Pour into the cooled crust.
  • Gently place the roasting pan in the oven (don't pull the rack out) and pour the boiling water into the roasting pan until it comes about halfway up the side of the springform pan. Bake until the outside of the cheesecake sets but the center is still loose, about 1 hour 45 minutes. Turn off the oven and open the door briefly to let out some heat. Leave the cheesecake in the oven for 1 more hour, then carefully remove from the roasting pan and cool on a rack. Run a knife around the edges, cover and refrigerate at least 8 hours or overnight.
  • Bring the cheesecake to room temperature 30 minutes before serving. Unlock and remove the springform ring. To finish, place a dollop of the whipped cream on each slice and sprinkle with the toasted pecans.

To make this recipe easier & quicker, you can substitute three boxes of spice-cake mix for the cake ingredients - just follow the box instructions! There are quite a few steps to make this cake but it is NOT difficult & is well worth the effort!

5 1/2 cups all-purpose flour
4 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
4 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 1/4 cups milk, at room temperature
1 (15 ounce) can pumpkin
1 tablespoon vanilla extract
1 cup butter or 1 cup margarine, at room temperature
1/2 cup vegetable oil
2 1/4 cups sugar
6 large eggs, at room temperature
2 (8 ounce) packages cream cheese, at room temperature
1 tablespoon vanilla extract
9 cups powdered sugar
green food coloring
orange food coloring (paste is best)
1 green ice cream cones
12 large yellow and white gumdrops (6 of each)
sugar (to roll gumdrops on)
2 tablespoons chocolate chips
clear edible cake glitter

Steps:

  • Heat the oven to 350° and butter two 10-inch bundt cake pans.
  • In a large bowl, stir together the flour, spices, baking powder, baking soda, and salt.
  • In a medium bowl, stir together the milk, pumpkin, and vanilla extract until smooth.
  • In another large bowl, beat the butter or margarine and oil together with an electric mixer until combined. Next, beat in the sugar. Then beat in the eggs, one at a time, mixing well after each addition.
  • Alternately beat in the milk/pumpkin mixture and the flour mixture until just combined.
  • Divide the batter between the two prepared pans. Bake for 50 to 60 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  • Cool the cakes in the pans for 15 minutes, then turn them out onto wire racks to cool completely.
  • Frosting:
  • In a large bowl, beat the cream cheese until smooth. Mix in the vanilla extract. Then beat in the powdered sugar gradually until the frosting is a spreadable consistency. Color about 1 cup of the frosting green and the rest orange.
  • Assembly:.
  • Trim the bottoms of the cakes so they lie flat against each other. Frost the flat surface of the bottom cake and place the other cake on top. Frost the entire cake orange. When the frosting dries, add green frosting leaves and top with the ice cream cone to create a stem.
  • Decoration:.
  • Sprinkle sugar over your work surface and use a rolling pin to flatten 12 large yellow and white gumdrops together into a pancake about 1/4 inch thick.
  • Adults only - use a knife to cut out the eyes, nose and mouth. Microwave 2 tablespoons of chocolate chips for about 60 seconds.
  • Dip the left side and bottom of the facial features in the melted chocolate. Dab a small amount of water onto the top surface of each feature, sprinkle the edible glitter on top, then press the facial features onto the cake.
