MINI CHEESEBALL PUMPKINS WITH CARAMELIZED GARLIC



Mini Cheeseball Pumpkins with Caramelized Garlic image

These look great on any Thanksgiving or Halloween table! Very fancy looking, but so easy to make. (Prep time includes chill time.)

2 ½ teaspoons butter
3 tablespoons chopped garlic
1 ½ teaspoons white sugar
2 cups shredded aged Cheddar cheese
1 (8 ounce) package cream cheese, softened
¼ cup chopped green onions
¼ teaspoon garlic salt
1 cup finely crushed cheese-flavored crackers (such as Pepperidge Farm® Goldfish)
12 pretzel sticks
1 small bunch fresh parsley, or to taste

Steps:

  • Melt butter in a small saucepan over medium-high heat until sizzling, about 30 seconds. Add garlic and sugar. Cook, stirring constantly, until garlic just starts to brown, 3 to 5 minutes. Immediately remove from heat. Transfer garlic mixture to a bowl. Add Cheddar cheese, cream cheese, green onions, and garlic salt. Beat using an electric mixer on medium speed until creamy. Cover and refrigerate until firm enough to handle, about 30 minutes.
  • Shape chilled cheese mixture into golf-ball-sized balls. Roll each ball in crushed crackers and slightly flatten the bottom. Press 1/2 a pretzel stick into the top. Repeat with remaining cheese mixture.
  • Spread parsley out on a serving plate and place mini cheeseball pumpkins on top, leaving enough room in between for parsley to show through.

2 cups shredded Cheddar cheese
½ (8 ounce) package cream cheese, softened
½ cup solid-pack pumpkin
¼ cup pineapple preserves
¼ teaspoon ground allspice
¼ teaspoon ground nutmeg
1 pretzel rod

Steps:

  • Beat Cheddar and cream cheeses in a bowl with an electric mixer until smooth. Stir in the pumpkin, pineapple preserves, allspice, and nutmeg and mix well. Cover and refrigerate for 2 to 3 hours.
  • When the cheese mixture is firm, shape it into a ball. To make it look like a pumpkin, score the sides with vertical lines using a butter knife. Add the pretzel rod for a stem and transfer to a serving platter.

1 8 ounce tub spreadable chive and onion cream cheese
2 teaspoons paprika
1/2 teaspoon cayenne pepper
2 cups shredded sharp cheddar cheese
1 stem of a bell pepper

Steps:

  • In a small mixing bowl add the softened bar of cream cheese and the spreadable cream cheese and beat until smooth.
  • Add paprika, cayenne pepper and cheese and mix until incorporated.
  • Scoop the mixture on a large piece of plastic wrap and shape it into a ball. Slightly flatten the top center portion.
  • Using the handle of a wooden spoon, make indentions around the sides of the cheeseball to resemble a pumpkin. Cover it completely with the plastic wrap and refrigerate for 4 hours or until firm.
  • Prior to serving, add the stem of a bell pepper on top.

3 cups orange cheese puffs
2 pounds cream cheese, at room temperature
3 cups shredded Cheddar
1/4 cup chopped chives
Kosher salt and freshly ground black pepper
1 bell pepper with a long stem
Crackers, for serving

Steps:

  • Put the cheese puffs in a food processor and process until finely ground. Transfer to a rimmed baking sheet.
  • Combine the cream cheese, Cheddar, chives, 1 teaspoon salt and 1/4 teaspoon pepper in a large bowl and mix to combine. Mold the mixture into a ball, pressing the top of the ball with your hand to flatten it. With the tip of a butter knife, carve lines down the sides to resemble a pumpkin.
  • Roll the cheese ball in the ground cheese puffs. Remove the entire bell pepper stem with a paring knife and put it on top of the cheeseball as the pumpkin stem. Seed and slice the bell pepper. Serve the cheeseball on a plate with crackers and slices of bell pepper.

This pumpkin cheeseball has been making an appearance at our Thanksgiving dinners for a few years now! We love digging into it while we wait for Thanksgiving dinner to finish cooking!

16 oz cream cheese, room temperature
2 cups shredded cheddar cheese (
3 tablespoons Enchilada Sauce
1 teaspoon taco seasoning
1/2 bag of Doritos
The stem of one green Bell Pepper

Steps:

  • In a mixing bowl, combine the cream cheese and cheddar cheese. Mix in the Enchilada Sauce and taco seasoning. Scoop mixture into the middle of a piece of plastic wrap. Wrap in plastic wrap and shape the mixture into a pumpkin shape. Place it into the fridge for at least 2 hours. Right before serving, crush the Doritos into crumbs. Unwrap the cheeseball from the plastic and roll the cheeseball in the crushed Doritos. Press the stem of one green Bell Pepper into the top of the cheeseball. Serve with chips.
