These low carb waffles are packed with pumpkin flavor and perfect for a grain free and gluten free diet!

Number Of Ingredients 6

2 large eggs
¼ cup pumpkin puree
2 teaspoons pumpkin pie spice
2 teaspoons coconut flour
½ teaspoon vanilla
1 cup finely shredded mozzarella cheese

Steps:

  • Plug in waffle maker to preheat. Spray with non-stick spray.
  • Add the eggs, pumpkin puree, pumpkin pie spice, coconut flour, and vanilla to a small bowl and whisk well to combine.
  • Stir in the cheese.
  • Spoon 1/4 of the batter into the hot waffle iron and smooth the batter out to the edges of the waffle iron.
  • Close the iron and cook for 3 minutes.
  • Remove the waffle and set aside. Repeat with remaining batter.
  • Serve hot with butter and sugar free syrup, as desired.

We just made the BEST Keto Pumpkin Cake Chaffle with cream cheese frosting! This is a mini keto cake with low carbs that's made with a waffle maker! EASY Keto Recipe!

Number Of Ingredients 8

1 egg
1/2 cup mozzarella cheese
1/2 tsp pumpkin pie spice
1 tbs pumpkin (solid packed with no sugar added)
Optional Cream Cheese Frosting Ingredients:
2 tbs cream cheese (softened and room temperature)
2 tbs monkfruit confectioners blend (or any of your favorite keto-friendly sweetener)
1/2 tsp clear vanilla extract

Steps:

  • Preheat the mini waffle maker.
  • In a small bowl, whip the egg.
  • Add the cheese, pumpkin pie spice, and the pumpkin.
  • Mix well.
  • Add 1/2 of the mixture to the mini waffle maker and cook it for at least 3 to 4 minutes until it's golden brown.
  • While the chaffle is cooking, add all of the cream cheese frosting ingredients in a bowl and mix it until it's smooth and creamy.
  • Add the cream cheese frosting to the hot chaffle and serve it immediately.

2 eggs (room temperature)
1 tablespoon almond flour (finely ground)
1 tablespoon pumpkin pie spice
1 cup shredded mozzarella cheese
1 teaspoon vanilla
¼ cup pumpkin puree
:1 tablespoon crushed pecans
Butter
Sugar free syrup (optional)

Steps:

  • Spray your waffle maker with cookie spray and then turn it on to preheat. I used the mini dash waffle maker.
  • In a bowl, you will mix your eggs, vanilla, pumpkin puree, almond flour, and pumpkin pie spice. Give a good mix until combined.
  • Now fold in the mozzarella cheese and mix until fully mixed.
  • Pour 1/4 of the pumpkin chaffle batter into the hot waffle iron. Cook for 2-4 minutes or until fully cooked.
  • Remove from waffle iron and repeat. This pumpkin spice chaffle recipe makes 4 in the mini dash iron.
  • Top your keto pumpkin chaffles with butter, sugar free syrup, and chopped pecans. Or however, you would like.

¼ cup pumpkin puree
1 egg
1 teaspoon maple extract
½ cup shredded mozzarella cheese
1 tablespoon almond flour
¾ teaspoon pumpkin pie spice
¼ teaspoon baking powder
¼ cup heavy cream
½ teaspoon granulated erythritol sweetener (such as Swerve®)
¼ teaspoon maple extract
1 pinch ground cinnamon

Steps:

  • Preheat a waffle maker according to manual's instructions.
  • Whisk pumpkin puree, egg, and maple extract together in a small bowl. Stir in mozzarella cheese, almond flour, pumpkin pie spice, and baking powder.
  • Pour 1/2 of the batter onto the preheated waffle maker, spreading out from the center with a spoon (don't overfill or it will overflow). Close the waffle maker and cook until steaming stops and the chaffle reaches your desired doneness, 3 to 4 minutes. Remove from the waffle maker and repeat with remaining batter. Cool for several minutes while you prepare the whipped cream.
  • Pour heavy cream into a small bowl and mix with an electric mixer on high speed until soft peaks form, 1 to 2 minutes. Reduce speed to medium, add sweetener and maple extract, and whip until stiff peaks form.
  • Place 1 chaffle on a plate, add a dollop of whipped cream, and sprinkle with cinnamon to serve.
