In our town, we have a pumpkin festival in late October and use pumpkins many different ways. This is a popular recipe for "sandwich night" at our house.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the chili sauce, soup, pumpkin, salt, pumpkin pie spice and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until thickened. Serve on buns.

I started out with a turkey burger recipe I found here, but wound up with something completely different because of substitutions and omissions. It was really tasty, so I'm posting it here to keep track of it. Served on Kittencal's Hamburger/Burger buns #117281.

- Combine all ingredients in a bowl.
- Form into seven 4 oz patties (or however many you want).
- Heat grill/grill pan to med/med-high heat.
- Grill 6 minutes per side.

- Place the rice and water in a saucepan and bring to a boil. Reduce the heat to low, cover and cook for 35 minutes. Leave to cool.
- Preheat the oven to 350 degrees Fahrenheit (180 celsius). Toss the pumpkin in the olive oil on a baking sheet. Cook for 25 minutes or until soft and lightly golden. Set aside to cool.
- While the rice and pumpkin are cooking, make the curry paste. Toast coriander and cumin seeds with the pepper in a wok or frying pan over medium heat for 1-2 minutes or until fragrant. Check the seasoning and adjust as necessary. Form into burger patties and refrigerate for at least 30 minutes before cooking (I find this helps keep the burger together).
