Bars
1 box (15.3 oz) Betty Crocker Fiber One apple cinnamon muffin mix
2 cups canned pumpkin (not pumpkin pie mix)
2 cups water
1 tablespoon vegetable oil
2 eggs
Topping
1 package (3 oz) cream cheese, softened
4 cups powdered sugar
1 teaspoon milk
2 teaspoons vanilla
2 cups chopped walnuts

Steps:

  • Heat oven to 400degreesF. Spray bottom only of 9-inch square pan with cooking spray. In medium bowl, stir muffin mix, pumpkin, water, oil and eggs just until blended (batter may be lumpy). Spread in pan.
  • Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In small bowl, mix cream cheese, powdered sugar, milk and vanilla until smooth; drizzle over bars. Sprinkle with walnuts. For bars, cut into 4 rows by 4 rows.

These Bars were "my Kids all time Favorite". I got this recipe from a gal in a small Mid West town in Illinois, in the 70's. These can be made Plain or with raisins, dates and or nuts. They make a large pan of 1 X 3" bars.

ALL TIME FAVORITE PUMPKIN BARS
COMBINE WET INGREDIENTS IN LARGE BOWL.
2 Cups - sugar
4 lg - eggs
1 Cup - veg. oil
1 can - 16 oz pumpkin, ( not pumpkin pie filling)
IN SEPERATE BOWL COMBINE DRY INGREDIENTS
2 Cups - flour
1 tsp - baking pdr
2 tsp - baking soda
2 tsp - cinnamon
- dash of salt
1 C ea - nust and raisins blended with 1 tbs flour optional
CREAM CHEESE FROSTING
1/4 Cup - butter
8 oz Pkg - cream cheese softened @ room temp
1 lb - pdr sugar
2 tsp - vanilla
1-2 tsp - milk . . as needed to consistency

Steps:

  • Preheat Oven @ 350 grease and flour 10 X 15 pan
  • Mix all wet ingredients for Bars in bowl, Measure all Dry ingredients in seperate bowl, add to wet ingredients stir only til blended do not over beat. Add Nuts and Raisens if desired and just fold in to batter. DO NOT OVER BEAT.
  • Pour into Jelly roll pan with an edge. Spread. Bake 35-40 min @ 350 or til toothpick comes out clean. . . Cool well before frosting
  • As cake cools, Mix Frosting; blend Butter, Cream cheese,Sugar and Vanilla. Spread on cooled Pumpkin bars, Top with Chopped Nuts if desired. Slice 6 X 8 slices to make 48 bars.

APPLE PUMPKIN BARS
2 Cup all purpose flour
1 1/2 Cups brown sugar, firmly packed
1/8-1/4 C ginger
1 1/2 tsp cinnamon
2 tsp baking pdr
1 tsp soda
1 tsp salt
1/2 Cup cooking oil
1/2 Cup milk
1 tsp vanilla
1 (15oz) can pumpkin ( not the pumpkin pie mix)
2 Lg eggs beaten
2 Cups fresh apples (diced & chopped)
FROSTING . . WITH CREAM CHEESE
1 (30z) pkg cream cheese, softened at room temp.
2 Tbs butter, softened
1/2 tsp good vanilla extract
3 Cups pdr sugar
2 tbs milk
add a little ground nutmeg if desired. for added flavor

Steps:

  • 1. Preheat Oven @ 350. Grease and flour 10 X 15 X 1" pan or use Cooking spray & lightly flour.
  • 2. In Large Bowl, Mix Beat all the Bar Ingredients, (except apples.)Beat on Med. Speed about 2-3 min. Now add apples and fold into mix. Spread into Baking pan.
  • 3. Bake 20-30 min til toothpick tested comes out clean. Cool Completely, approx 1 hr. before frosting.
  • 4. FROSTING: in a small bowl beat cream cheese with the butter, until blended well. add vanilla, add pdr sugar 1 cup at a time beat on Low til mixed well, add 1 tsp milk at a time mix til smooth & spreadable. Frost your Cooled Bars. sprinkle with the Nutmeg. Place in refer about 30 Min. for frosting to set. cut into bars cut 6 X 8 rows to make 48 small bars. Store in the refer if they last that long. Topping suggestions: Candy corn, Mini pumpkin candies, Sprinkle of chopped Nuts or pecans. orange mini chips or halloween picks. Enjoy.

PUMPKIN APPLE BARS
4 eggs
1 2/3 cups sugar
1 Cup veg. oil ( or 1/2 cup applesauce for 1/2 c of the oil)
1 can 15 oz can of pumpkin, ( not the pumpkin pie mix)
2 Cups flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
1 1/2 Cup fresh apples, peeled, chopped & diced ( fuji or gala)
CREAM CHEESE FROSTING
8 oz cream cheese, softened
1/2 C butter, room temperature
2 Cups powdered sugar
1 Tsp cinnamon
1 Tsp vanilla extract

Steps:

  • 1. Preheat Oven @ 350. Grease a 10 X 13 pan Peel Chop and dice apple and set aside.
  • 2. Mix Eggs, sugar, Oil & pumpkin well with electric Mixer, til light and fluffy.
  • 3. Stir together Dry Ingredients, Flour, Baking Pdr, Soda, Cinn, nutmeg, & Salt. Now, Add 2 Tbs of the Flour Mixture to Fresh Diced and Chopped apples. Toss very well. Set aside the apples.
  • 4. Add all the Dry ingredients to the Pumpkin mixture, Mix on Low speed til batter is smooth and wel blended. Now you can add the Floured apples and stir well to Blend.
  • 5. Pour your batter evenly into Greased 10X13 pan. Bake @ 350 for 30 min. Let Cool completely, before frosting. Frost with cream Cheese Frosting. Cut into 2 X 3" bars and enjoy. I betcha you can't have just one!!!
  • 6. FROSTING: Mix the Cream Cheese, & Butter in a med Bowl, using an electric Mixer til smooth and fluffy. Add; Pdr Sugar, mix well. STIR in Vanilla, and Cinnamon. Frost your Completely Cooled Bars. . . Now Enjoy

1 can(s) solid pumpkin
2 c flour
2 tsp baking powder
1 tsp baking soda

1 tsp salt
1 1/2 c fresh apples,peeled,chopped and diced(fuji or gala)
CREAM CHEESE FROSTING
8 ounce cream cheese (softened)
1/2 c butter, room tempetature
