2 green eating apples
1cm piece of ginger
150 g brown rice
200 g small carrots
200 g tenderstem broccoli
220 g piece of lean higher-welfare pork fillet
1 whole nutmeg, for grating
8 leaves of fresh sage
olive oil
2 oranges
2 tablespoons natural yogurt

Steps:

  • Quarter the apples and remove the cores, peel and finely chop the ginger and place both in a pan with 300ml of boiling water. Boil hard for 10 minutes, stirring occasionally.
  • Tip the contents of the pan into a blender and blitz until smooth. Rinse the pan, return to the heat and cook the rice according to the packet instructions.
  • Steam the carrots in a colander above the rice for 20 minutes with a lid on, then remove them to a plate. Add the broccoli to the colander to steam for the last 5 minutes, then put aside and drain the rice.
  • Meanwhile, season the pork all over with a pinch of sea salt and black pepper, finely grate over a quarter of the nutmeg, then pick over the sage leaves and really press them into both sides of the pork.
  • Put 1 tablespoon of oil into a large frying pan on a medium heat, then add the pork and steamed carrots. Cook the pork for 4 minutes on each side (depending on its thickness - use your instincts), or until golden and cooked through.
  • Remove the pork to a board to rest for a few minutes. Reduce the heat to low, squeeze the orange juice over the carrots, shake the pan to coat them and pick up the sticky bits from the bottom, then leave until it becomes a natural syrupy glaze.
  • Slice the pork and serve with the rice, broccoli and carrots. Swirl the yoghurt through half the apple sauce (keep the rest for another day) and serve on the side. Drizzle with any pan and resting juices, and tuck in.

9 ounces favorite barbecue sauce (1 generous cup)

Steps:

  • The ideal size slow cooker for this recipe is about 4-quart. Spray your slow cooker with non-stick cooking spray. Place the roast in the slow cooker. Spread the applesauce over the top of the roast. Spoon the barbecue sauce over the top, being careful not to disturb the applesauce. Cover and cook on low, until the meat is very tender but not dry, 4 to 6 hours. Remove the roast from the slow cooker. Shred the meat using two forks. Put the shredded pulled pork into a bowl. 4 lb. pork loin roast
1 1/2 cups applesauce
2 teaspoons kosher salt
1 teaspoon pepper
1 1/2 teaspoons garlic powder
2 large onions, thinly sliced
1 tablespoon cornstarch mixed with 2 tablespoons of the gravy (at the end)

Steps:

  • Season the roast with the salt, pepper and garlic powder.
  • Place in your slow cooker and top with the sliced onions tucked on the side of the roast and applesauce poured on top. Cook on low for 8 hours.
  • Remove the roast from the slow cooker and place on a cutting board covered with foil to keep warm.
  • Pour the juices from the slow cooker into a pot over medium heat and bring to a boil.
  • Mix the cornstarch together with the gravy in a small bowl until smooth, then slowly add to the pot of gravy while whisking.
  • Bring back to a boil, reduce to a simmer and cook for 10 minutes.
  • Slice the pork, place on a serving platter and pour the gravy over the top.

¼ cup brown sugar
1 (2 pound) pork tenderloin
½ cup butter
1 large onion, cut into strips
½ cup brown sugar
½ teaspoon ground cinnamon
½ teaspoon onion powder
salt and ground black pepper to taste
2 large Granny Smith apples - peeled, cored, and sliced
6 hard rolls, split

Steps:

  • Combine hard apple cider and 1/4 cup brown sugar in a slow cooker; mix until dissolved. Add pork tenderloin.

2 teaspoons ground black pepper
2 teaspoons smoked paprika
1 teaspoon chipotle powder
½ teaspoon garlic powder
½ teaspoon crushed fennel seeds
1 (3 pound) boneless pork shoulder roast
¼ cup maple syrup
¼ cup apple cider vinegar
1 cup water
1 cup all-purpose flour
½ cup cornmeal
2 tablespoons white sugar
½ teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
1 large egg
1 ¼ cups buttermilk
4 tablespoons unsalted butter, melted, divided

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Mix salt, pepper, paprika, chipotle powder, garlic powder, and crushed fennel seeds together in a bowl.
  • Place pork in a shallow baking dish or pan, just large enough for it to fit with a few inches around the outside, and at least 2 to 3 inches deep. Coat pork all over with about 3/4 of the spice blend. Set the remaining spice mixture aside. Turn pork so it is fat-side up in the dish.
  • Roast in the preheated oven, uncovered, until a nice dark brown crust is achieved, about 30 minutes.
  • Remove from the oven and reduce oven temperature to 300 degrees F (150 degrees C). Pour maple syrup, cider vinegar, and water into the baking dish and over the pork. Grab the pork carefully with a pair of tongs and use to stir the braising liquid together. Cover the pan with heavy-duty foil, making sure it's sealed tightly.
  • Continue to bake pork in the preheated oven until fork-tender, about 3 hours more.
  • Let the pork rest, uncovered, for about 20 minutes. Shred with 2 forks. Stir the pork into the braising liquid. Taste and adjust the seasoning with the reserved spice blend if necessary.
  • Mix flour, cornmeal, sugar, salt, baking powder, and baking soda in a bowl with a whisk until thoroughly combined, about 30 seconds. Add eggs, buttermilk, and 3 tablespoons melted butter; whisk until just combined. Let batter rest for 10 minutes.
  • Heat 1 tablespoon butter in a large pan over medium-high heat. Drop batter in the hot butter and cook until browned, 2 to 3 minutes. Flip and continue to cook until golden, 1 to 2 minutes more. Repeat with remaining batter.
  • Transfer 1 pancake onto a serving plate and top with as much pork as you see fit, along with accumulated juices. Top with another pancake, more pork with its juices, and one more pancake. Repeat with remaining pancakes and pork. Serve.

4-5 lbs pork shoulder or butt roast (fat trimmed)
14 oz can tomato sauce (low sodium)
3/4 cup applesauce (unsweetened)
1/4 cup maple syrup or honey
2 tsp liquid smoke
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp onion powder
1/4 tsp red pepper flakes
1 1/4 tsp salt
1/2 tsp freshly ground black pepper
3 tbsp whole wheat flour

Steps:

  • In a large slow cooker, add tomato sauce, applesauce, maple syrup, liquid smoke, chili powder, garlic powder, onion powder, red pepper flakes, salt and pepper; whisk to combine.
  • Place meat on top and spoon some sauce over it. Cover and cook on Low for 10 hours or on High for 5 hours.
  • Remove meat onto a cutting board and turn up heat to High. In slow cooker, slowly add flour while whisking until completely dissolved. Cover and cook for 20 minutes.
  • While sauce is cooking to thicken, shred meat with 2 forks (hands) discarding bones (if any), tough tissues and fat.
  • Add shredded meat to the sauce, stir and serve on a whole grain/wheat bun topped with my healthy coleslaw.

2 large sweet onions
2 cups applesauce
2 cups jack daniels spicy original barbecue sauce

  • Slice onions in half. Place 2 halves in bottom of CrockPot.
  • Place pork in CrockPot. Cover with 2nd onion.
