BBQ PULLED PORK
An American classic, the meat is slow-cooked then shredded or 'pulled' and layered with BBQ sauce, pickles and slaw in a soft brioche bun

- Heat oven to 150C/130C fan/gas 2. Rub the pork with 2 tbsp of the olive oil. Heat a large non-stick pan until very hot and sear the pork on all sides until golden brown.
- Place the meat on a wire rack in a roasting tin. Mix the paprika, mustard powder, garlic and onion salt, and some black pepper with the liquid smoke, if using. Brush all over the meat.
- Add 1 cup of water to the roasting tin, cover very tightly with foil and cook for 5 hrs or until almost falling apart.
- Drain the juices from the meat into a measuring jug. Shred the pork using 2 forks, discarding the fat.
- Skim off the fat from the juices. Mix 125ml of the juices with 4 tbsp BBQ sauce (see recipe in 'goes well with') and pour over the meat. Keep warm until serving, or reheat.
- To assemble, pile the meat into the halved brioche buns, spoon over the BBQ sauce, top with coleslaw and pickles, and sandwich together.

- Place pork in a slow cooker and season to taste with garlic powder, poultry seasoning, salt, and pepper. Add quartered onion, apple, and 3 celery stalks. Pour chicken broth into slow cooker.
- Cook on Low until very tender, about 8 hours. Transfer pork to a large platter and discard juice and vegetables. Shred pork with a fork and return to the slow cooker.
- Prepare barbecue sauce while pork is cooking. Melt butter in a large saucepan or small Dutch oven over medium heat; cook and stir 2 cups celery and 1 1/2 cups onion until onion is translucent, about 5 minutes. Add ketchup, water, vinegar, brown sugar, Worcestershire sauce, mustard, liquid smoke, and 1 tablespoon garlic powder; mix. Reduce heat to low and simmer, stirring occasionally, until sauce is thickened, about 10 minutes. Pour barbecue sauce over shredded pork.

- In small bowl, stir together paprika, salt, garlic powder and brown sugar.
- Spray 5- to 6-quart slow cooker with cooking spray. Rub paprika mixture on pork to cover completely. Place pork in slow cooker. Pour water around pork.

- 1. Serves: 12 Prep Time: 4 Hr Cook Time: 2 Hr Beef sirloin or roast pork (2-1/2 pounds)
- 2. 1 cup of fresh parsley, 3 chopped onion and 3 sliced bell peppers, 1/2 cup packed brown sugar 4 tablespoons worcestershire sauce, 4 squeezes fresh lime juice. 2 dashes of thyme, 2 dashes italian seasoning, 2 teaspoons of paprika, 3 tablespoons cider vinegar, 2 tablespoons spicy mustard, 2 teaspoons celery seeds, 4 teaspoons chili powder, 4 teaspoons of hot sauce 1/2 cup of white wine.
- 3. Continue to add ingredients to the roast. 2 teaspoons cayenne pepper, 1 teaspoon of cumin, 1 teaspoon of cinnamon, 1 teaspoon of nutmeg, and a half of cup of ketchup, 2 jalapeno peppers cut into thin slices. Allow all to sit and marinade for 4 hours, cover and sit in the refrigerator. While marinade is in the refrigerator, place 4 tablespoons in a frying pan let it get hot, place 3 bell peppers, and onions in the hot grease pan. Once veggies start to fry place 12 hotdogs in to pan as well, let fry down slowly.
- 4. After 4 hours, put your roast and marinade in a deep cooking pot, add Water in it, cover your entire meat and put stove on medium heat. Cook roast for approximately 2 hours. Once meat is complete you can pull your roast apart still remaining in it's juices and sauce. Add 1 cup of cooked onions and peppers, half cup of brown sugar, 2 teaspoon of red crushed pepper, 2 teaspoon of spicy mustard, 1/2 cup of tomato paste, 1 lime squeezed.
- 5. Now you should have barbecue pulled roast. You can enjoy it as a sub, or as an outrageous hotdogs. Optional, my suggestions are fried or grilled nathans, bess, or kosher hotdogs. italian sub roll or foot long potato rolls used to build your sandwich. Shredded cheese optional, my suggestions are cheddar or mozarilla cheese.
NORTH CAROLINA PULLED-PORK BARBECUE

- Bring vinegar to a boil with sugar, red-pepper flakes, 2 tsp salt, and 1 Tbsp pepper in a small nonreactive saucepan, stirring until sugar has dissolved, then cool. Set aside 2 cups vinegar sauce to serve with sandwiches.
- While sauce cools, score pork skin in a crosshatch pattern with a sharp knife (forming 1-inch diamonds), cutting through skin and fat but not into meat. Pat meat dry and rub all over with 1 Tbsp each of salt and pepper. Let stand at room temperature 1 hour before grilling.
- Prepare grill for indirect-heat cooking over low heat, leaving space in middle for disposable roasting pan.
- When coals have cooled to about 300°F (45 minutes to 1 hour; when most coals will have burned out), put disposable roasting pan on bottom rack of grill between the 2 remaining mounds of coals, then fill pan halfway with water. Add a couple of handfuls of unlit charcoal to each charcoal mound, then put grill rack on so hinges are over coals.
- Oil grill rack, then put pork, skin side up, on rack above roasting pan. Grill pork, with lid ajar (for air, so coals remain lit), basting meat with sauce and turning over every 30 minutes (to maintain a temperature of 250 to 275°F, add a couple of handfuls of coals to each side about every 30 minutes), until fork-tender (a meat fork should insert easily) and an instant-read thermometer inserted 2 inches into center of meat (avoid bone) registers 190°F, 7 to 8 hours total.
- Transfer pork to a cutting board. If skin is not crisp, cut it off with at least 1/4 inch fat attached (cut any large pieces into bite-size ones) and roast, fat side down, in a 4-sided sheet pan in a 350°F oven until crisp, 15 to 20 minutes.
- When meat is cool enough to handle, shred it using 2 forks. Transfer to a bowl.
- Serve pork, cracklings, and coleslaw together on buns. Serve reserved vinegar sauce on the side.

- Mix the paprika, garlic power, brown sugar, dry mustard, and salt together in a small bowl. Rub the spice blend all over the pork. Cover and refrigerate for at least 1 hour, or up to overnight.
- Preheat the oven to 300 degrees F. Put the pork in a roasting pan and roast it for about 6 hours. An instant-read thermometer stuck into the thickest part of the pork should register 170 degrees F, but basically, what you want to do is to roast it until it's falling apart.
- While the pork is roasting, make the barbecue sauce. Combine the vinegar, mustard, ketchup, brown sugar, garlic, salt, cayenne, and black pepper in a saucepan over medium heat. Simmer gently, stirring, for 10 minutes until the sugar dissolves. Take it off the heat and let it sit until you're ready for it.
- When the pork is done, take it out of the oven and put it on a large platter. Allow the meat to rest for about 10 minutes. While it's resting, deglaze the pan over medium heat with 3/4 cup water, scraping with a wooden spoon to pick up all of the browned bits. Reduce by about half. Pour that into the saucepan with the sauce and cook 5 minutes.
- While the pork is still warm, you want to "pull" the meat: Grab 2 forks. Using 1 to steady the meat, use the other to "pull" shreds of meat off the roast. Put the shredded pork in a bowl and pour half of the sauce over. Stir it all up well so that the pork is coated with the sauce.
- To serve, spoon the pulled pork mixture onto the bottom half of each hamburger bun, and top with some slaw. Serve with pickle spears and the remaining sauce on the side.
- Combine the cabbage, carrots, red onion, green onions, and chile in a large bowl. In another bowl, stir together the mayonnaise, mustard, vinegar, lemon juice, and sugar. Pour the dressing over the cabbage mixture and toss gently to mix. Season the cole slaw with the celery seed, hot sauce, salt, and black pepper. Chill for 2 hours in the refrigerator before serving.
QUICK PULLED PORK SANDWICHES

- In a large Dutch oven, heat 2 teaspoons of the oil over medium heat. Add the garlic and onion and season with salt and pepper. Cook until softened and lightly browned, about 5 minutes. OVEN PULLED PORK BARBECUE
Steps:
- Gather the ingredients. Preheat the oven to 450 F.
- In a bowl, combine the salt, pepper, chili powder, garlic powder, onion powder, and ground mustard.
- Place the pork in a roasting pan and rub all over with the spice mixture.
- Roast the pork for 1 hour. Remove from the oven.
- Reduce the oven temperature to 325 F. Pour apple juice over the roast and sprinkle the chopped garlic over the juice. Cover the roasting pan tightly with foil, return to the oven, and roast for about 2 to 2 1/2 hours, or until the pork is tender and easy to shred with a fork.

- In a small bowl, mix together the granulated onion, garlic, paprika, chili powder, brown sugar, mustard, salt and pepper. Rub the mixture all over the pork, cover with plastic wrap and pop it in the fridge for a couple hours or overnight.
