Steps:
- For the Chicken and Rub: Mix together salt, paprika, garlic powder, onion powder, and cayenne pepper in a small bowl. Season chicken halves all over with rub and refrigerate for at least 6 and up to 12 hours.
- For the Sauce: Heat oil in a medium saucepan over medium-high heat until shimmering. Add onion and cook, stirring occasionally, until softened and browned around the edges, about 7 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Stir in ketchup, apple juice, brown sugar, honey, vinegar, molasses, Worcestershire sauce, mustard, soy sauce, and hot sauce. Bring to a boil, then reduce heat and simmer until slightly thickened, 15-20 minutes. Remove from heat and let cool slightly.
- Puree sauce with an immersion blender, or transfer sauce to the jar of a standard blender, and process until smooth. Season with salt and pepper. If not using right away, transfer to a jar and store in refrigerator.
- Fire up smoker or grill to 225°F. Add wood chunk to smoker following manufacturer's instructions, or set wood chunk on top of embers if using a grill. Place chickens in smoker or on grill over indirect heat, and cook until breast meat registers 160°F on an instant read thermometer, 1 1/2 to 2 hours. Remove from smoker and let chickens rest until cool enough to handle.
- Using hands or two forks, pull chicken into thin strands, discarding skin, cartilage, and excess fat.
- Measure out 3/4 cup of barbecue sauce and set aside. Reheat remaining barbecue sauce in a large saupan. Stir shredded chicken into hot barbecue sauce and cook until chicken is warmed throughout. Serve immediately on sandwich rolls with reserved barbecue sauce and coleslaw, if desired.
PULLED BARBECUED CHICKEN ON A GRILL
Steps:
- If you choose to brine your chicken, combine the salt, sugar, and water in a plastic bowl and stir until the salt and sugar are completely dissolved. Place the whole chicken in a plastic bowl or container large enough to fit the whole bird with a little room to spare. Pour the brine over making sure the chicken is completely submerged. (The amount of brine might need to be doubled.) Brine the chicken for 4 to 6 hours. Then remove the chicken from the brine, rinse thoroughly, and pat dry with paper towels.
- Place one of the aluminum pans on the coal grate next to the burning coals, but not on the coals. This is the drip pan that helps to keep the grill clean and prevents any dripping fat from reaching the fire which can cause flare-ups. Add wood chunks to the coals, spreading them around evenly over the fire. Large chunks of hardwood are ideal. There is no need to moisten them. Now replace the cooking grate and put the second aluminum pan directly over the fire. Fill that pan with water and put the lid on the grill.
- Heat the grill to 250 F to 275 F/120 C to 135 C and then adjust the vents on the grill to hold that temperature. While the grill is heating up, take the chicken out of the refrigerator to come to room temperature. Once the grill is ready, place the chicken, breast-side up, on the grill grates directly over the drip pan on the coals and next to the pan of water on the grate.
- After the chicken has rested for 15 minutes, it's time to start shredding the meat. This is best done with a pair of insulated food gloves so the hot chicken can be easily handled. It is something of a messy job, so a large, clean workspace is needed.
- To keep the meat warm, place it in a large pot over a low flame, tossing occasionally, or if you are going to be eating later, a slow cooker on the warm setting works well. Once the shredded chicken is warmed, add your desired barbecue sauce , tossing to evenly coat. Enjoy!

BBQ PULLED CHICKEN
In our house, we don't agree on how much barbecue sauce should be added to our pulled chicken. Some like the sauce to be dripping, and I like a minimal amount. This is a simple recipe for pulled chicken, and you may add any amount of barbecue sauce you would like. You could also use this pulled chicken as a protein for a green salad, or a filling for a taco, with a few seasoning tweaks. Or, dice it (instead of pulling it) and use in a mayonnaise-based chicken salad. However you choose to use it, you can start it on the stovetop, finish it in the oven, and have dinner on the table in less than an hour.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Pat chicken breasts dry with a paper towel. Season both sides with salt and pepper.
- Heat oil in a 12-inch, nonstick, oven-safe skillet over medium heat. Add chicken, skin-side down, to the hot oil and cook until lightly browned, 2 to 3 minutes. Turn and brown on the other side, 2 to 3 minutes.
- Cover the skillet and transfer to the preheated oven. Bake until an instant-read thermometer inserted near the bone reads 160 degrees F (71 degrees C), 25 to 30 minutes.
- Remove from the oven. Transfer chicken to a cutting board and cover with foil; let sit until cool enough to handle, about 10 minutes. The residual heat will bring the internal temperature to the recommended 165 degrees F (74 degrees C).
- Remove and discard skin and bones. Use 2 forks to shred chicken.
- Serve warm with barbecue sauce.

BARBECUE PULLED CHICKEN
Almost nothing beats a barbecue pulled pork sandwich, but this faster and leaner spin, which is made with roasted chicken thighs and breasts and a quick barbecue sauce, is a delicious alternative that only tastes like it took all day to cook. Serve on buns with a vinegary slaw and ranch or buttermilk dressing, if you like. For a smokier flavor, use a combination of sweet and smoked paprika. Like most barbecue recipes, this is even better reheated the next day.

Steps:
- Heat the oven to 375 degrees. Pat the chicken thighs and breasts dry and place them on a sheet pan. In a small bowl, combine 1 teaspoon paprika with the 1/2 teaspoon cumin, cayenne, 2 teaspoons salt and 1 teaspoon black pepper. Whisk in the olive oil, then pour over the chicken and toss to coat.
- Roast the chicken for 35 to 45 minutes, depending on the size of the pieces, until an internal thermometer registers 165 degrees in both the thighs and breasts. Set aside until cool enough to handle, reserving the pan drippings.
- Meanwhile, heat the canola oil in a medium saucepan over medium. Add the shallots and cook, stirring occasionally, until tender, 3 to 5 minutes. Add the beer, vinegar, Worcestershire, tomato paste, brown sugar, honey, mustard, garlic, 1 teaspoon salt and 1/2 teaspoon pepper, plus the remaining 1/2 teaspoon paprika and a pinch of cumin; whisk until smooth. Bring to a boil, then turn the heat to medium-low and cook for 20 to 25 minutes, stirring occasionally, until reduced and thickened.
- Remove the meat from the thighs and breasts, discarding the bones and skin. Tear the meat into bite-size pieces and place in a large bowl. Add a few tablespoons of the reserved drippings and toss to coat.
- If serving immediately, add the chicken to the sauce, toss and warm through over medium heat. If making in advance, add the sauce to the chicken, toss well, and refrigerate for up to 3 days. Reheat in a saucepan set over medium heat before serving, or partly covered in a 350-degree oven for 20 minutes.
