PUFFY OMELET

Steps:
- Separate the egg yolks and whites into 2 separate medium bowls. Add 1 tablespoon of water to the egg whites and, using a hand mixer, beat on medium-high speed until medium peaks form, 4 to 5 minutes.
- Season the yolks with salt and pepper and beat until smooth, thickened and slightly pale in color. Fold one-third of the egg whites into the egg yolks and thoroughly mix until there are no streaks. Add half of the Gruyere and the soda water. Pour in the remaining egg whites and gently fold to combine.
- Melt the butter in a 10-inch nonstick skillet over medium heat until it foams, then pour in the egg mixture, smoothing the top. Cover the skillet and cook until the omelet is golden brown on the bottom and you can lift the edges to peak underneath, about 5 minutes.
- Sprinkle the remaining cheese and the herbs on top, cover the skillet and cook 2 more minutes. Remove the pan from the heat and keep covered until the cheese melts, about 1 minute. Fold over and serve.
PUFFY OMELET

Steps:
- In a large bowl, let egg whites warm to room temperature about 1 hour.
- Preheat the oven to 350 degrees F.
- On high, beat egg whites with mixer with cream of tartar just until stiff peaks form when beaters are slowly raised.
- In small bowl, using the same beaters, beat egg yolks until thick and lemon colored.
- Add salt, pepper, and milk gradually, beat until well combined.
- With a wire whisk or rubber spatula gently fold egg yolk mixture into the egg whites just until combined.
- Slowly heat a 9-10" heavy skillet with heat resistant handle, or an omelet pan.
- (To test temperature sprinkle a little cold water on skillet. Water should sizzle and roll off in drops).
- Add butter and oil; heat until it sizzles briskly-it should not brown.
- Tilt pan to coat side with butter mixture.
- Spread egg mixture evenly in pan; cook over low heat, without stirring, until lightly browned on underside-about 10 minutes.
- Transfer skillet to oven, bake 10-12 minutes or until top seems firm when gently pressed with fingertip.
- To serve, fold omelet in half.
- Turn out onto heated serving platter.
- Garnish with parsley sprigs, if desired.
OMELET FOR TWO
Steps:
- Preheat the oven to 350 degrees F.
- Cut the bacon crosswise in 1-inch slices. Cook the bacon in an 8-inch ovenproof saute pan over medium-low heat for 5 to 7 minutes, stirring occasionally, until browned. Drain the bacon on paper towels and discard the fat from the pan. Add the butter to the pan, and then add the potato and yellow onion. Cook over medium-low heat for about 10 minutes, tossing occasionally, until the onion starts to brown and the potato is tender but firm. Add the jalapeno pepper and cook for 30 seconds.
- Meanwhile, in a medium bowl, beat the eggs, milk, salt, and pepper together with a fork. Stir in the scallions and diced Cheddar. When the potato is cooked, add the bacon to the pan and pour over the egg mixture. Place the pan in the oven for 15 to 20 minutes, until the omelet puffs and the eggs are almost cooked in the center. Sprinkle with a handful of grated Cheddar and bake for another minute. Serve hot directly from the pan.
OMELET FOR TWO
This is a tasty supper omelet that I got from one of my newest cookbooks "Barefoot Contessa At Home". Todd and I love this. In the book she suggests serving it for breakfast, but we do it for supper. Served with a nice green salad, it fits the bill perfectly!

- Pre-heat the oven to 180°C/350°F.
- Melt the butter in an 8 inch oven proof pan.
- Chop the bacon into 1 inch pieces and cook for 5 to 7 minutes, until browned.
- Add the onion and potato and cook over medium low heat for about 10 minutes, stirring occasionally until the onion begins to brown and the potato is tender.
- Add the Jalapeno pepper and cook for a few minutes longer.
- Beat together the eggs, milk, salt, and pepper with a fork.
- Stir in the spring onions and the diced cheddar.
- Pour over the potato/bacon mixture.
- Place in the preheated oven and bake for 15 to 20 minutes or until puffy and the eggs are almost cooked in the centre.
- Remove from the oven.
- Sprinkle the grated cheddar over top and return to the oven for another minute or two until the cheese melts.
- Serve hot from the pan.
EASY OMELETTE FOR 2 OR 3, PAULA DEEN STYLE
This recipe comes from Paula Deen's " Paula's Home Cooking Show" These omelettes look so good and so simple to make that I had to keep her recipe, so I thought I'd save it here and share too. She used re-sealable plastic freezer baggies to prepare the omelettes.

- Bring a large pot of water to a boil.
- In a large bowl, whisk together 2 eggs at a time for each individual,salt and black pepper and any of your favorite add ins, (individually) and divided into each individual plastic freezer baggies.
- Seal each baggie tight.
- Smash with hands to combine the egg mixture.
- Drop each sealed baggie into the boiling water.
- Simmer the bags for 8 to 10 minutes or until done to your desire.
- Remove baggies from boiling water with tongs and drain on a paper towel lined plate or strainer.
- Cool slightly before handing.
- Open baggie and pour the cooked omelette onto each individual plate.
- Enjoy with along or with your favorite morning side dish, such as hashbrowns and grits.

EGG WHITE PUFFY OMELETTE
This is your traditional puffy omelette made with only two whole eggs and the rest is egg-white powder. Aged, sharp cheeses are best when filling the omelette.

- To make the 6 egg whites from egg white powder, heat the water so it is warm (but not hot). Stir the powder into the water until just moistened.
- Preheat and grease a large, oven-proof skillet on the stove over medium heat. Preheat the oven to 325-degrees.
- Combine the egg whites (including the whites made from powder) in a large mixing bowl and beat them until frothy. Add the water and continue beating the egg whites until stiff (tips stand up straight).
- In a separate bowl beat the 2 remaining egg yolks, the salt, and the white pepper. Fold the egg-yolk mixture into the egg whites until it develops a uniform color.
- Spoon the egg mixture into the preheated skillet. Mound the eggs towards the edges, leaving a slight depression in the center. Cook the eggs for 6 minutes, without stirring.
- Transfer the skillet into the oven and bake for 10-12 minutes, or until an inserted utensil comes out clean.
- On a level surface, make a shallow cut slightly off-center in the omelette. Load your toppings (cheese and veggie burger) on the larger side of the cut. Fold the smaller side over, cut in half and serve immediately.

- In small mixer bowl, beat egg whites until stiff but not dry.
- Beat egg yolks until thick and lemon colored.
- Beat in milk, salt and pepper; gently fold into egg whites with spatula.
- Heat oven to 325 degrees.
- In 8-inch skillet with ovenproof handle, heat butter until just hot enough to sizzle a drop of water, rotating skillet so that butter evenly coats the bottom.
- Pour omelet mixture into skillet, level surface gently.
- Reduce heat; cook until puffy and light brown on bottom, about 5 minutes. (Lift omelet at edge to judge color).
- Place skillet in oven; bake until knife inserted in center comes out clean, 12 to 15 minutes.
- While omelet bakes, peel and dice avocado.
- Heat sour cream, salt and dill (do not boil).
- Gently stir tomato and avocado into sour cream mixture; heat through.
- To serve, pour part of the sauce on omelet in skillet.
- Tip skillet and loosen omelet by slipping rubber scraper, pancake turner or spatula under; fold omelet and remove to heated platter.
- Pour remaining sauce on top.
