Categories     main-dish

Yield 4 to 8 servings

Number Of Ingredients 21

4 medium size, dried ancho chiles
1 1/2 cups white vinegar
1 1/2 cups red wine vinegar
1 cup water
1 cone (6 1/2 ounces) piloncillo or 1 cup brown sugar
1/3 cup olive oil
1 teaspoon sea salt
6 garlic cloves, cut into strips
2 medium white onions, peeled and thinly sliced
5 bay leaves
10 sprigs thyme
1 tablespoon black peppercorns
1 tablespoon whole allspice
Avocado Filling, recipe follows
45 avocados, peeled and finely chopped
1 small white onion, peeled and finely chopped
1/4 cup cilantro, finely chopped
3 small serrano chiles or 1 small jalapeno chile, finely chopped
Juice of 2 limes
Sea salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Wash the chiles in warm water, carefully slit them open on one side, and remove the seeds and veins.
  • Bring the white vinegar, red vinegar, and water to a boil in a large saucepan. Add the piloncillo, oil, and salt. Heat until the piloncillo melts. Add the garlic, onions, bay leaves, thyme, peppercorns and allspice. Cook about 8 minutes. Remove from the heat. Add the chiles. Place all of the Chiles Anchos en Escabeche in a covered container and marinate one day at room temperature. They will hold, refrigerated, at least 1 week.
  • Prepare the Avocado Filling just before serving.
  • Drain the chiles and stuff with the Avocado Filling. Arrange on a serving platter and drench with the marinade. Decorate with the onion and garlic drained from the marinade. (The chiles may be sliced in half lengthwise and stuffed, for smaller portions.)
  • Mash the avocados with a fork and stir in the onions, cilantro, chiles, and lime juice. Season to taste with salt and pepper.

STUFFED ANCHO CHILES

Stuffed Ancho Chiles image

Mario Bosquez, host of "Living Today" on Martha Stewart Living Radio (Sirius channel 112) shares a recipe from Ron Bechtol and Cynthia Guido for stuffed ancho chiles.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Yield Serves 6

Number Of Ingredients 7

6 ancho chiles (as flexible as possible)
1 medium white onion, in slices
1/2 cup orange juice
1 cup white vinegar
1/2 cooking oil, corn or safflower
1 pound piloncillo or dark brown sugar
Salt and freshly ground pepper to taste

Steps:

  • Wipe the dried chiles clean and carefully cut a slit lengthwise. Shake out the seeds and carefully tear out any of the obvious interior ribs. Heat the oil in a heavy skillet and fry the chilies briefly until they begin to puff and color slightly. Remove and drain on paper towels.
  • In the same skillet, fry the sliced onion until it has colored. In another pot, bring to a boil the orange juice, vinegar, sugar (piloncillo is the coarse brown Mexican sugar that can often be found in truncated cone form), salt and pepper; cook briefly at a lower temperature then remove from the burner.
  • Add the chiles and drained onions to this sweet-sour marinade, making sure they are all submerged, and let macerate, preferably overnight. Remove and drain the chiles, reserving the marinade.
  • The drained chiles may then be filled with a variety of ingredients: freshly made guacamole; potato salad; tuna salad; etc. They may be presented atop a bed of lettuce, topped with crumbled farmer's cheese and drizzled with a little of the reserved marinade, if desired.

CHICKEN ENCHILADAS WITH ANCHO CHILE CREAM SAUCE

Chicken Enchiladas With Ancho Chile Cream Sauce image

This is my "signature" dish. Always get raves on them. They are a bit time consuming, especially if you decide to make your own Pico de Gallo and Guacamole, but well worth it. I sip on a margarita to make the experience most authentic! * I find that I barely have enough cream sauce, you might consider doubling it for ease. * Here is a recommendation for the order of prepping things... *Start chiles soaking (30 minutes) *Cook chicken (I just boil chicken thighs in chicken stock...they need to cool before you can shred the meat) *Drink Margarita *Butter 13x9x2 baking dish *Preheat oven to 350°F *Slice and sauté mushrooms *Drink Margarita *Make sauce *Make filling *Assemble *Cook and eat (and drink Margarita)!

Time 3h

Yield 8 serving(s)

Number Of Ingredients 14

16 ounces light sour cream
1 (7 ounce) can diced green chilies
4 large green onions
1 cup cilantro, chopped
2 teaspoons cumin, ground fresh
2 cups cooked chicken, shredded
2 cups shredded extra-sharp cheddar cheese
2 medium tomatoes, seeded and chopped
1/2 lb button mushroom, sliced and sauteed
2 dried ancho chiles
4 large garlic cloves
2 cups whipping cream
4 teaspoons fresh lime juice
8 (8 inch) flour tortillas

Steps:

  • Ancho Chile Cream Sauce:.
  • Bring 2 cups water to boil in small sauce pan. Remove pan from heat, add Ancho chiles, soak 30 minutes. Reserve 6 Tbsp of liquid, drain rest of liquid.
  • Cut stems off of chiles, cut open and scrape out seeds. Combine Ancho chiles, reserve liquid and garlic in blender and puree.
  • Combine cream and chile puree in heavy skillet.
  • Bring to a boil, reduce heat, simmer for 3 minutes. Whisk in lime juice, season with salt. Strain sauce (not really necessary).
  • Enchilada Filling:.
  • Mix 1 3/4 cup sour cream, canned chiles, green onion, cilantro and cumin in large bowl.
  • Mix in shredded chicken, mushrooms, 1 cup of cheese, tomatoes, 3 Tbsp of Ancho Chile Cream Sauce, salt and pepper to taste.
  • Assembly:.
  • Bring remaining Ancho Chile Cream Sauce to a simmer, cook tortillas in sauce for 15 seconds, coating both sides. Place tortilla in baking dish, spoon 1/2 cup of filling down center of tortilla. Roll tortilla closed, arrange seam side down.
  • Repeat. May need another small glass dish for all enchiladas.
  • Cover with foil and bake 30 - 45 minutes. Uncover and sprinkle with 1 cup of cheese. Bake uncovered until cheese melts, approximately 5 minutes.
  • Serve with sour cream, guacamole and pico de gallo.

PUFFED ANCHO CHILES WITH GUACAMOLE

Puffed Ancho Chiles With Guacamole image

Yet another great recipe from To Many Cooks by San Antonio cooking school operator Nancy Wood Moorman (www.cookbookmarketplace.com). Mild, flavorful ancho chiles are stuffed with fresh guacamole. Be sure the anchos are freshly dried and still a little supple or they may break as you work with them.

Time 30m

Yield 8-10 serving(s)

Number Of Ingredients 15

8 -10 soft dried ancho chiles
2 -3 cups canola oil

1 1/2 cups fresh orange juice
1 cup white vinegar
1/4 cup water
salt

2 roma tomatoes, cubed
1 small onion, minced
1/3 cup minced cilantro
1/4 cup lime juice
salt

Steps:

  • Sauté the onion in the reserved oil in the skillet. Add the brown sugar, orange juice, vinegar, water, salt and peppercorns to the skillet. Bring to a boil and reduce the heat. Simmer for 30 minutes. Pour over the chiles in a bowl. Marinate in the refrigerator for several hours to 12 hours.
  • For guacamole, combine all guacamole ingredients.
  • Drain chiles and spoon guacamole into them. Garnish with cilantro.
