- Preheat oven to 400°., Unfold puff pastry sheets on a lightly floured surface. Roll each sheet into a 12-in. square. Spread pesto onto 1 pastry sheet to within 1/4 in. of edges. Sprinkle with cheese. Top with remaining pastry, pressing lightly. Cut into twelve 1-in.-wide strips. Twist each strip 4 times. Place 2 in. apart on parchment-lined baking sheets, pressing down ends., Bake 12-15 minutes or until golden brown. Serve warm.

PARMESAN PESTO TWISTS
Steps:
- Preheat your oven to 400 F degrees.
- Roll out the puff pastry sheet so that it's about 15x12 inches on a floured work surface.
- Spread 1/2 cup of the pesto evenly over the puff pastry, you want to make sure it's fully covered.
- Sprinkle half the parmesan cheese over the pesto.
- Cut into 1 inch strips. Fold each strip in half then pick it up and twist it a few times. Place the twists onto an ungreased baking sheet, leaving about an inch in between them.
- Repeat with remaining puff pastry sheet and remaining pesto and Parmesan cheese.
- Brush each twist with beaten egg.
- Bake for about 15 minutes or until golden brown.
- Cool on a wire rack for about 5 minutes before serving.

SUN-DRIED TOMATO PESTO RECIPE
Steps:
- In a food processor add drained sun-dried tomatoes, basil, nuts and garlic, blend until chunky, then add the parmesan cheese, oregano and oil, mix until blended to desired consistency. Spoon into a glass jar, top with the extra olive oil and keep refrigerated. Enjoy!

QUICK AND EASY PUFF PASTRY APPETIZERS
Three varieties of quick and easy puff pastry appetizers, all starting with store-bought, all-butter puff pastry sheets. Gruyere and Dijon Sticks, Pesto and Sundried Tomato Twists and Cheddar and Chipotle Cut-outs. Can be made ahead and frozen before baking, then baked off from frozen as needed.

- For the Gruyere and Mustard Puff Pastry Sticks: Place the thawed square of puff pastry on a lightly floured cutting board. Spread the Dijon mustard on the lower half of the square, leaving about 1/2 inch uncovered along the edges. Brush the exposed edges with egg wash. Fold the bare top half of the puff pastry over the half with the mustard, lining up the edges. Place in the refrigerator (still on the cutting board) to chill for 15 minutes.
- Remove from fridge. With a sharp knife or pizza cutter, trim the two short sides and un-folded long edge by about 1/4 inch. Cut the block in to nine 1-inch by 5-inch slices. Remove the slices to a parchment lined baking sheet, leaving at least an inch in between each piece. Carefully brush the tops with egg wash, ensuring that egg doesn't drip down the sides. Sprinkle Gruyere and Parmesan evenly over-top, the finish with a sprinkling of coarse salt.
- Place the baking sheet in the refrigerator to chill for 15 minutes.
- Preheat oven to 400F. Remove baking sheet from refrigerator and place into preheated oven. Bake for 15-18 minutes, or until golden and puffed. Remove to a baking sheet to cool.
- For the Pesto and Sun-Dried Tomato Puff Pastry Twists: Place the thawed square of puff pastry on a lightly floured cutting board. Spread the pesto on the lower half of the square, leaving about 1/2 inch uncovered along the edges. Sprinkle the chopped sundried tomatoes over-top. Brush the exposed edges with egg wash. Fold the bare top half of the puff pastry over the half with the pesto, lining up the edges. Place in the refrigerator (still on the cutting board) to chill for 15 minutes.
- Remove from fridge. With a sharp knife or pizza cutter, trim the two short sides and un-folded long edge by about 1/4 inch. Cut the block in to nine 1-inch by 5-inch slices. Take each slice and holding the ends, gently twist several times. Remove the twisted pieces to a parchment lined baking sheet, leaving at least an inch in between each piece. Carefully brush the tops with egg wash. Place the baking sheet in the refrigerator to chill for 15 minutes.
- Preheat oven to 400F. Remove baking sheet from refrigerator and place into preheated oven. Bake for 15-18 minutes, or until golden and puffed. Remove to a baking sheet to cool.
- For the Cheddar and Chipotle Puff Pastry Cut-outs: Place the thawed square of puff pastry on a lightly floured cutting board. Brush bottom half of square with egg wash. Fold bare top half over the brushed half, lining up the edges. Place in the refrigerator (still on the cutting board) to chill for 15 minutes.
- Remove from the refrigerator. Using a cookie cutter, cut shapes from the piece of puff pastry. Place on to a parchment-lined baking sheet, allowing at least 1-inch between pieces. Carefully brush tops with egg wash, ensuring that the egg doesn't drip down the sides. Sprinkle tops with grated cheddar, then dust with a bit of chipotle chili powder (to taste). Place the baking sheet in the refrigerator to chill for 15 minutes.
- Preheat oven to 400F. Remove baking sheet from refrigerator and place into preheated oven. Bake for 10-12 minutes, or until golden and puffed. Remove to a baking sheet to cool.
- Cooled pastries can be stored in an airtight container at room temperature for up to 24 hours. You can re-warm on a baking sheet in a 350 oven for a few minutes.

- Roll puff pastry into a 12 by 15-inch rectangle. Spread pesto evenly over pastry, to within 1/8-inch of the edges. Fold dough in half lengthwise. Roll dough out again into a 12 by 5-inch rectangle. Sprinkle Parmesan over new rectangle. Cut dough crosswise into 1/2-inch thick strips. Twist each strip into a corkscrew. Arrange twists on a large baking sheet and press down ends to prevent unrolling. Bake 10 minutes, until puffed up and golden brown.

- ROUGH PUFF PASTRY Sift together the flour and salt in a large bowl. Grate the butter either in a food processor or by hand, and toss with the flour. Add half a cup of the ice water, and mix by hand to combine. Add extra water, a few tablespoons at a time, until you have a cohesive dough that holds together when gently squeezed. Be careful not to add too much water. Turn out the dough onto a piece of plastic wrap, and shape into a rough rectangle. It will be shaggy and not smooth. Wrap tightly in plastic wrap and place on a sheet pan. Chill in the fridge for an hour.
- Remove the dough and place on a lightly floured surface. Roll into a rectangle approximately 13 x 20 (30cm x 50cm). Brush any excess flour off the surface. Starting with a short side, fold the dough into thirds like a letter - bring one third up, and then fold the second third over it. Roll the dough out again and repeat the folding process. Wrap in the plastic wrap, place on the sheet pan and chill for 30-40 minutes. Repeat the rolling and chilling process two more times - each time you remove the dough from the fridge, perform two rounds of rolling out and folding. In total you will give the dough 6 folds, in 3 sessions. Wrap the dough in plastic wrap and leave to chill for a few hours before using, or ideally overnight.
- FILLING Place a large frying pan, cast iron skillet or dutch oven over medium high heat. Add the bacon to the cold pan, and cook until just golden brown. Remove with a slotted spoon and set aside, reserving fat for cooking the chicken. Working in two batches, cook the chicken until golden brown and cooked through. Remove and set aside. Add the butter to the pan, and allow to melt, then add the leeks, carrots, and celery. Cover the pan and cook, stirring occasionally, for 10-15 minutes, until the leeks are soft and the carrots are tender. Season well with salt and pepper.
- If you are working with a small frying pan, transfer the leek mixture into a large pot and place over medium heat. Add the flour, and stir well to combine. Add the chicken stock and cream, and mix well. Cook until the mixture thickens slightly, then add the bacon and chicken and stir to incorporate. Add the sun dried tomato pesto, and mix well. Set the mixture aside to cool slightly. If you would like to speed up the cooling process you can transfer to a shallow baking dish.
