Have fun preparing these puff pastry pizzas with kids. Chop up any veg you have into small pieces and let everyone choose their own toppings

Number Of Ingredients 6

320g sheet ready-rolled light puff pastry
6 tbsp tomato purée
1 tbsp tomato ketchup
1 tsp dried oregano
75g mozzarella or cheddar
sweetcorn , olives, peppers, red onion, cherry tomatoes, spinach, basil

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unroll the pastry, cut into six squares and arrange over two baking trays lined with baking parchment. Use a cutlery knife to score a 1cm border around the edge of each pastry square. Bake for 15 mins, until puffed up but not cooked through.
  • While the pastry cooks, make the sauce and prepare your toppings. Mix the tomato purée, tomato ketchup, oregano and 1 tbsp water. Grate the cheese and chop any veg or herbs you want to put on top into small pieces. Set aside.
  • Remove the pastry from the oven and squash down the middles with the back of a spoon. Divide the sauce between the pastry squares and spread it out to the puffed-up edges. Sprinkle with the cheese, then add your toppings. Bake for another 5-8 mins and serve.

2 medium yellow onions, sliced
1 (10 ounce) package frozen spinach, thawed and squeezed dry
5 button mushrooms, sliced
½ teaspoon salt
½ (12 ounce) jar roasted red bell peppers, drained and sliced
1 cup shredded Fontina cheese
1 cup shredded Parmesan cheese
½ cup crumbled feta cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Lay puff pastry dough on the prepared baking sheet. Fold edges over to make a crust. Poke dough using a fork.
  • Bake in the preheated oven for 15 minutes.
  • Meanwhile, heat oil in a skillet and cook onions until golden, about 15 minutes.
  • Remove pastry from the oven, and leave oven on. Scatter spinach on top in an even layer. Top with mushrooms and sprinkle with salt. Scatter red peppers on top, then Fontina cheese, Parmesan cheese, and feta cheese. Finish with cooked onions.
  • Bake in the hot oven until cheese is bubbly and crust is golden brown, about 20 minutes.

Allow the onions to cook down for 10 minutes, stirring as necessary. Do not allow the onions to brown. Add the sugar and stir to coat evenly. Allow the onions to cook for another 10 minutes. When the onions have cooked down, add the balsamic vinegar and stir to combine, set aside.
  • Position a rack in the center of the oven and preheat the oven to 475ºF. Flatten the pizza dough into a 12-inch circle. Create a lip or rim by thickening the dough around the crust portion. This keeps the sauce in instead of running over the sides. Transfer dough carefully to a parchment lined baking sheet. Let dough rest for 10-15 minutes.
