PAELLA 'PUERTO RICO'

Number Of Ingredients 19

2 tablespoons grapeseed oil
1 (3 to 4-pound) octopus, beaked and headsac cleaned
Salt and freshly ground black pepper
1 large pinch saffron
1/2 cup warm water
1/2 pound chorizo sausage, cut on the diagonal into 1-inch pieces
1 pound boneless chicken parts, preferably skin on, cut into 2-inch pieces
1 large white onion, diced
5 cloves garlic, lightly crushed with the side of a knife blade, and minced
1 cup dry white wine
1 tablespoon paprika
1 tablespoon minced fresh flat-leaf parsley
6 cups chicken stock
3 cups white rice
1 teaspoon salt
1/2 teaspoon black pepper
1 pound mussels, scrubbed and bearded
1/2 pound (21-25 size) shrimp, peeled, deveined, and tails removed
1/4 cup minced fresh cilantro leaves

Steps:

  • Brush 1 tablespoon of the oil on the octopus (reserving the rest), season with salt and pepper, and add to a pot with enough water to cover. Simmer until the octopus is cooked through, about 20 minutes.
  • Remove octopus to a utility plate to drain and set aside until cool enough to handle. Remove the octopus head and legs, split in half, then slice and dice small.
  • Add the saffron to 1/2 cup warm water and let it sit for 10 minutes to allow it to "bloom."
  • Heat the remaining grapeseed oil over medium high heat in a 16 inch paella pan. Brown the chorizo on all sides and remove to a utility platter. Brown the chicken pieces and remove to the same platter.
  • Add the onion to the pan and saute until translucent, then add the garlic and gently cook until softened, monitoring to make sure it doesn't burn. Add the white wine and allow most of it to evaporate. Stir in the paprika, parsley, cup of bloomed saffron, and chicken stock, and bring to a gentle boil. Return the chorizo and chicken to the pan, and add the octopus. Stir in the rice, salt and pepper and reduce heat to medium. Cook uncovered without stirring for about 20 minutes, then add the mussels and cover. Let cook until the mussels open, about 7 minutes, then remove them to a utility platter. Add the shrimp to the pot, cover, and cook until they turn pink and opaque, about 5 minutes, then remove the shrimp to a utility platter.
  • Serve in the pan and sprinkle with fresh cilantro. Arrange the shrimp and mussels on top.

This is a really flavorful roast pork, with lots of garlic and black pepper. It doesn't require overnight prep, just about 5 minutes of seasoning and an hour and a half in the oven. Leftovers make great sandwiches!

1 (3 lb) boneless pork loin roast
1 tablespoon fresh coarse ground black pepper
4 cloves garlic, minced (more if you like...)
1 teaspoon dried oregano
1 1/2 tablespoons cider vinegar
1 1/2 tablespoons olive oil
3/4 tablespoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Combine pepper, garlic, oregano, vinegar, olive oil and salt in a small bowl, then rub this mixture all over the pork roast.
  • Place roast in a shallow baking pan and roast, uncovered, at 350 degrees F for about 1-1/2 hours; meat thermometer should read 165 to 170 degrees F.
  • Remove from oven and let rest 10 minutes before slicing.

1 pound lean ground beef
1 cup tomato sauce
⅓ cup sofrito
8 green olives, finely chopped
1 teaspoon crushed garlic
1 teaspoon salt, divided
¼ cup recao
¼ teaspoon dried oregano
cooking spray
¾ cup vegetable oil
6 large ripe plantains - peeled, halved, and each half cut lengthwise into 4 slices
5 large eggs
1 (9 ounce) package frozen French cut green beans, thawed and drained
1 cup shredded mozzarella cheese

Steps:

  • Heat a large skillet over medium heat. Add ground beef; cook and stir until browned on the outside and no longer pink in the center, about 10 minutes. Remove meat from pan; drain fat.
  • Place tomato sauce, sofrito, green olives, garlic, 1/2 teaspoon salt, recao, and oregano in the skillet. Cook and stir over medium-low heat for 5 minutes. Return ground beef to skillet; reduce to a simmer. Cook, uncovered and stirring occasionally, for 15 minutes more.
  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray.
  • Pour oil into a large skillet over medium-high heat to 350 degrees F (175 degrees C). Fry plantain slices until golden, 3 to 5 minutes per side. Drain on paper towels.
  • Beat eggs thoroughly in a bowl; add 1/2 teaspoon salt.
  • Line the bottom of the baking pan with half the plantains, overlapping as needed. Layer ground beef mixture, green beans, and remaining plantains; pour eggs on top. Top with mozzarella cheese.
  • Bake in the preheated oven until eggs are set and cheese is melted, 20 to 25 minutes.

This recipe was give to me by my grandfather who was a great culinary cook but never published his recipes. this is authentic Puerto Rican cuisine that was prepared on a spit, but with modern technology is converted to the kitchen and not as large of an animal.

8 cloves garlic, peeled
¼ cup salt
¼ cup black pepper
2 teaspoons chopped fresh oregano
3 tablespoons olive oil
1 (10 pound) pork picnic roast
4 yucca (cassava) roots, peeled and sliced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place the garlic, salt, pepper, oregano, and olive oil into the container of a food processor or blender. Process until smooth. Use a small knife to make several incisions in the fresh ham. Insert the garlic paste into each one using a small spoon. Place the ham in a roaster, and cover.
  • Bake for 1 1/2 hours in the preheated oven, then check every 15 minutes or so, until the internal temperature reaches 175 degrees F ( 80 degrees C) when taken with a meat thermometer.
  • While the meat is roasting, place the yucca in a large pot of boiling water. Cook until fork tender, and drain. Serve with pork roast.
