Arroz con gandules - Puerto Rican Rice with Pigeon Peas. Seriously the best rice you've ever had!

3 cups medium or long grain white rice, rinsed
3 tablespoons vegetable oil
2 heaping tablespoons sofrito
4 ounces tomato sauce
1 can (15 ounces) gandules (pigeon peas), partially drained
2 heaping tablespoons alcaparrado
1 packet Sazón with Achiote (I use Goya brand)
1/2 packet ham flavoring (I use Goya brand Jamón)
1 teaspoon adobo
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/8 teaspoon ground oregano
Salt and pepper to taste (start off with 2 teaspoons of salt)
4-6 cups hot water

Steps:

  • Rinse rice well in water and set aside.
  • In a medium caldero or large pot (about 6 quarts or so), heat oil and sauté sofrito until softened. Add tomato sauce and simmer for 2 minutes.
  • Stir in gandules, alcaparrado, all of the spices and 4 cups of water. Taste and readjust seasonings, adding additional salt 1 teaspoon at a time. Broth should be heavily seasoned and on the salty side.
  • Bring to a rapid boil, then add rice and stir. You may need to add more water to ensure rice is covered by 1 inch of water. Reduce heat to a soft boil and let most of the liquid absorb and evaporate, stirring occasionally, very gently, so rice does not turn gummy.
  • Carefully mound rice towards center of pot, top with foil and cover with lid. Reduce heat to simmer and cook for 20 minutes. Stir by folding rice from the bottom up, but do not disturb bottom of pan. Cook for another 20-30 minutes, testing after 20 to see if rice is tender and cooked through.

5 tablespoons oil for frying
1 green plantain
3 cups cold water
salt to taste

Steps:

  • Peel the plantain and cut it into 1-inch chunks.
  • Heat the oil in a large skillet. Place the plantains in the oil and fry on both sides,; approximately 3 1/2 minutes per side.
  • Remove the plantains from the pan and flatten the plantains by placing a plate over the fried plantains and pressing down.
  • Dip the plantains in water, then return them to the hot oil and fry 1 minute on each side. Salt to taste and serve immediately.

1 tablespoon olive oil
½ cup sofrito
2 cloves garlic, chopped
1 (1.41 ounce) package sazon seasoning with achiote
½ tablespoon adobo seasoning
2 cups medium-grain white rice
2 cups chicken broth
1 ½ cups water
1 (15 ounce) can gandules (pigeon peas), drained and rinsed
2 tablespoons chopped fresh cilantro

Steps:

  • Heat olive oil over medium heat in a medium-sized caldero or nonstick pan. Stir in sofrito, garlic, sazon, and adobo; cook for 4 minutes, making sure not to burn garlic. Stir in rice until coated well; pour in chicken broth and water and stir once more.
  • Bring mixture to a boil and cook over medium-high heat until all liquid has been absorbed and rice looks like it has little holes throughout, 20 to 25 minutes. Reduce heat to low. Stir in peas and cilantro gently from bottom to top, once or twice only. Cover and let sit for 10 minutes.
  • Turn off heat and let rice sit, uncovered, for 10 minutes more.

BASIC PUERTO RICAN RICE RECIPE



Basic Puerto Rican Rice Recipe image

Fluffy, flavorful, firm and filling this easy to make Puerto Rican rice recipe is one the whole family will love!

Number Of Ingredients 15

2 tablespoons of vegetable oil
2 ounces of salt pork (optional)
1/4 cup of homemade sofrito (optional and see note)
1/2 cup of chopped onions
1/2 red bell pepper (chopped -if not using sofrito)
1/2 green bell pepper (chopped -if not using sofrito)
2 cloves of garlic (finely chopped)
1/4 cup of cilantro (rinsed and chopped)
4 ounces of tomato sauce
2 tablespoons of salt
1 tablespoon of dried oregano
1/2 teaspoon of ground thyme (optional)
1 packet of Sazon seasoning packet
3 cups of long grain rice (rinsed and drained)
4 1/2 cups of good quality chicken broth or water (see note)

Steps:

  • Rinse and drain rice, set to the side.
  • Warm oil in a caldero over medium high heat.
  • Add salted pork and cook for about two minutes before adding in sofrito and onions or chopped vegetables, except for garlic.
  • Cook vegetables until softened, about 4 minutes, occasionally stirring.
  • Add in garlic and cook for thirty seconds before adding in tomato sauce, seasonings, and cilantro.
  • Let sauce come to a bubble and stir in rice.
  • Stir rice occasionally for two minutes for the rice to absorb the sofrito sauce.
  • Allow to cook about a minute, stirring occasionally before adding in the rice.
  • Pour in chicken broth or water with chicken bullion.
  • Bring the liquid to a boil and then lower to a steady simmer (think medium).
  • Cook uncovered for 12-14 minutes not stirring until the water levels evaporate to where you see the top of the rice and it the rice looks like craters.
  • Stir once and cover.
  • Lower heat to low. DO NOT UNCOVER!
  • Cook rice for twenty minutes. DO NOT TOUCH OR UNCOVER!
  • After 20 minutes DO NOT UNCOVER YET, remove pot from heat and let it steam for about 15 minutes before uncovering.
  • Uncover and gently fluff with a fork before serving.

"PUERTO RICAN STYLE" FRIED RICE



If you like to eat a variety of rice dishes, add this one to your menu!I once ate a rice that was similar to this one, but I wasn't able to get the recipe.I've created this as my own version of that rice, which can be served as a quicker alternative to "arroz con gandules", which happens to be my favorite!This dish is super quick, and super yummy! Enjoy!

3 cups of refrigerated cooked white rice
3 -4 tablespoons annato oil (**see notes**)
1 1/2 cups of leftover cubed cooked pork
6 sliced green olives
1 (15 1/2 ounce) can pigeon peas, drained and rinsed
2 tablespoons roasted sweet red peppers, minced
1 teaspoon garlic powder
1 1/2 teaspoons adobo seasoning
1/2 teaspoon ground black pepper
2 sprigs fresh cilantro, for garnish

Steps:

  • ***NOTES***.
  • Have all of the ingredients ready to add to your pan before you start.
  • For the annato oil, in a small saucepan, heat 1/4 Cup of oil or lard over low heat until it is hot. Add 3 Tbls. of Annato Seeds, and stir, for one minute. Let this cool, stirring occasionally, while you gather your ingredients. Strain when it is cool.
  • Preheat a non-stick pan or wok, over high heat for one minute.
  • Add to your pan the Annato oil, heat for 30 seconds.
  • Add the pork, and toss this in the hot oil for 30-45 seconds.
  • Add the pigeon peas, the olives, and the peppers, toss for 45 seconds - 1 minute.
  • Add the rice, garlic, Adobo, and the black pepper.Toss and mix, coating all of the rice w/the oil, and breaking up any clumps of rice. Continue tossing it until it is heated through.
  • Plate it up, and garnish with a fresh sprig of Cilantro.
  • This rice is very hearty, and if you want to make this a meal, just add some extra pork, fry up a few tostones, and get a tub of potato salad from the Deli!
