Tostones Rellenos (Stuffed Plantain Cups) image

The filling for tostones rellenos can vary greatly: ceviche, octopus salad, pico de gallo, salsa, garlic shrimp, etc. These are stuffed with picadillo (seasoned ground beef) and cheese, but use your imagination. The possibilities are endless!

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h15m

Yield 8

Number Of Ingredients 11

3 cups canola oil for frying
2 green plantains, peeled and sliced crosswise into fourths
2 teaspoons garlic salt
1 pound lean ground beef
¾ teaspoon salt
½ cup sofrito
½ cup tomato sauce
¼ cup water
1 (1.41 ounce) package sazon seasoning
5 pitted green olives, chopped
1 cup shredded Cheddar cheese

Steps:

  • Heat canola oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Fry the plantains in the preheated oil until golden, but not brown, 5 to 7 minutes. Smash each piece of plantain in a tostonero or with the bottom of a small dish to make a small disk, then shape the disk into a small cup. Return the plantain cups to the hot oil, and fry until golden and crisp, 5 to 7 minutes more. Season with garlic salt. Set aside.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat and stir in the ground beef. Season with salt. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the sofrito, tomato sauce, water, sazon seasoning, and olives. Reduce heat to medium-low, then simmer until liquid is reduced, about 15 minutes.
  • Fill the plantain cups with the beef mixture and top with Cheddar cheese. Arrange the cups on a baking sheet.
  • Bake in the preheated oven until the cheese is melted, 5 to 8 minutes.

TOSTONES (FRIED PLANTAINS) WITH MAYOKETCHUP

Tostones (Fried Plantains) with MayoKetchup image

Provided by Delish D'Lites

Number Of Ingredients 7

3-4 green plantains
Avocado (canola or vegetable oil, for frying)
Tostonera (plantain press OR small pan or plate)
Kosher salt
1/2 cup mayonnaise
2-3 tablespoons ketchup
1 clove fresh garlic (grated or minced)

Steps:

  • Peel the plantains, then cut them into 2 inch long chunks and place them into a bowl of cold salted water. This will prevent them from turning brown.
  • Add about 1" of oil to a pan, and heat it to medium heat. Drain the plantains well, then slide them into the preheated oil (be careful, they may spatter a bit).
  • Fry the plantain chunks on all sides, until they're tender in the middle (about 5-7 minutes). You'll know if they're cook through if you can slide a toothpick into the center with no resistance. Drain the plantains on a paper towel.
  • Use a tostonera, a small pan or a small plate to press each plantain chunk until it's a flat disc that's about 1/4" thick.
  • Once all the tostones are formed, pop them back into the oil, and fry them for 3-4 minutes more, flipping once, until they're golden and crispy on both sides.
  • Drain the tostones on paper towels, then sprinkle lightly with kosher salt while they're still hot.
  • Mix up the mayoketchup by combining the mayo, ketchup and garlic.
  • Serve the tostones warm with the mayoketchup dipping sauce.

  • Peel the plantains and cut them into 1-inch thick disks. Place the garlic in a bowl with the water and set aside.
  • Heat enough oil in a large skillet so that the disks will be half way submerged in the oil. When the oil is shiny and a drop of water sizzles across the top, add the plantains. Fry for 3-5 minutes on each side until the plantains are lightly softened and browned. Remove and place on a paper towel lined plate.
  • Place the plantains on a cutting board, smash with the back of a wooden spoon to make them half as thick, and let them soak in the garlic water for about a minute.
  • Remove, dab them dry and wipe off garlic pieces so they don’t burn, and return to the frying pan. Fry for another 2-3 minutes on each side or until they take on a deep golden color and a crispy texture. Drain again on paper towels, sprinkle with ground sea salt, and serve with rice and beans.
