PUERTO RICAN GAZPACHO SALAD
This is my mother's Puerto Rican gazpacho salad recipe. I've been eating it since I was knee-high to a grasshopper. It's good and very easy to make.

Steps:
- Bring a saucepan of water to a boil. Cook codfish in boiling water to reduce saltiness to your taste, 10 to 25 minutes; drain. Let codfish cool completely.
- Mix avocado, tomato, and onion together in a bowl. Break cooled codfish into small pieces, discarding any bones, and add to the avocado mixture; stir gently. Drizzle olive oil over the mixture; add whine vinegar and stir gently. Season salad with black pepper; stir. Cover bowl with plastic wrap.
- Cover bowl with plastic wrap. Refrigerate salad at least 45 minutes.

- Soak the dried cod in water for at least two hours, regularly changing the water to remove the salt.
- While the fish is soaking, cut all of the ingredients into small cubes. Then transfer to a bowl and keep refrigerated until the cod is ready.
- When completely desalted, use a fork to break-up the cod filet into pieces and add to the prepared salad. Dress the mixture with some olive oil and mix well with a spoon. Serve cold as a salad or try it as a sandwich; accompany with vegetables, white rice or boiled viandas (potato-like tubers.)

- Rinse off the salt from the bacalao and soak overnight in water, changing the water 3 times. Place the bacalao into a pot of cold water, and bring to a boil.
- Once it's cooled, break the salt cod into big flakes and place in a bowl. Make sure to check for any stray bones.
- Stir the chopped avocado, onion, tomato, olive oil and vinegar. Season with salt and pepper and combine.
