MAMA'S CHICKPEA IN SOFRITO WITH ARROZ CON GANDULES

My mama's delicious vegetarian Puerto Rican inspired recipe: chickpeas in sofrito served with arroz con gandules (rice with pigeon peas). Delicious and packed with plant-based protein!

For the sofrito (for the chickpeas):
2 teaspoons olive oil
½ cup very finely diced yellow onion
½ cup very finely diced green bell pepper
1/3 cup finely diced cilantro
3 cloves garlic, minced
1 cup tomato sauce (from one 15 oz can -- reserve extra sauce for rice)
3 teaspoons (2 packets) Sazon (see note in recipe for how to make your own)
2 (15 ounce) cans BUSH'S® Garbanzo Beans, rinsed and drained
2 ½ cups low sodium vegetarian broth (or water)
For the rice:
2 teaspoons olive oil
1/3 cup very finely diced yellow onion
1/3 cup very finely diced green bell pepper
¼ cup finely diced cilantro
2 cloves garlic, minced
½ cup no salt added tomato sauce
3 teaspoons (2 packets) sazon seasoning (see note in recipe for how to make your own)
1 (15 oz) can green pigeon peas** (see note in recipe for a sub)
3 cups water
2 cups basmati white rice
To garnish:
Extra fresh chopped cilantro
Avocado slices
Tostones

Steps:

  • First make your Sofrito: Sofrito in Spanish means sauce -- very traditional in many of the main staple foods in Puerto Rico: Add olive oil to a medium pot and place over medium heat. Once oil is hot, add in onion, green bell pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 2-4 minutes. Bring heat to low and add tomato sauce, sazon and simmer for 2-3 minutes until sauce comes together.
  • Add in the chickpeas beans and broth and simmer uncovered over low heat while you cook the rice, stirring occasionally, so that the spices infuse with the beans. If you notice the liquid getting too low, it probably means you were simmering at too high of a heat, but no worries you can simply add another ½ cup water or broth.
  • While the chickpeas are simmering with sofrito, start making the rice: Add oil to a medium pot and place over medium heat. Once oil is hot, add in onion, green pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 2-4 minutes. Bring heat to medium-low and add tomato sauce, sazon and simmer for 2 minutes until sauce comes together.
  • Next add in entire can of pigeon peas (with the liquid -- DO NOT DRAIN) add 3 cups water, and bring to a boil. Once it boils, stir in 2 cups of rice, cover, reduce heat to low and simmer 20 minutes or until rice is tender.
  • Taste both the rice and adjust seasonings as necessary, including adding more salt.
  • How to serve: add rice and beans to a bowl with extra sauce from the beans, garnish with cilantro and a few avocado slices -- serve with tostones if you're feeling like a true Puerto Rican! Serves 4-6.

chickpeas, rinsed and drained
2 celery ribs, chopped
1/2 red bell pepper, chopped
red onion, chopped
1 -2 garlic clove, grated
3 tablespoons chopped fresh cilantro
1 -2 tablespoon red wine vinegar
1 -2 tablespoon lime juice
2 teaspoons olive oil
1 teaspoon ground cumin (or more according to taste)
salt
pepper

Steps:

  • In a large bowl, combine the chickpeas, celery, bell peppers, onion, garlic, and cilantro. Season with vinegar, lime juice, olive oil, cumin, and salt and pepper. Combine all ingredients well and adjust the seasoning if necessary.

My husband's favorite way to flavor beans is with pigs' feet. I kid you not. Actually, they flavor the beans very well. He eats the meat, I do not. We use them with kidney beans always. This recipe is translated from "Cocina Criolla" by Carmen Aboy Valldejuli, originally published in 1954 in Spanish. My husband calls it the Puerto Rican Cookbook. Times do not include overnight soaking of the beans. NOTE: If using salted pigs feet, they should also be soaked overnight, in a separate bowl (and rinsed and drained)

1/3 lb dried garbanzo beans, soaked overnight in 4 cups salted water
1 lb pig's foot
1 slice bacon, chopped
1 ounce ham, chopped
1 chorizo sausage or 1 sweet Italian sausage, cut into 1/2 inch rounds
1/4 cup green pepper, chopped (about 1/3 a pepper)
1/4 cup red pepper, chopped (about 1/3 a pepper)
1/2 cup onion, chopped (about 1/2 a medium onion)
1 garlic clove, minced
6 cups water
1/2 lb pumpkin or 3/4 lb butternut squash, peeled and diced
2 fresh cilantro stems (leaves and stems) or 2 fresh parsley sprigs, chopped (leaves and stems)
1/2 lb potato, peeled and diced
1 lb cabbage, chopped
1 tablespoon tomato paste
kosher salt, to taste

Steps:

  • Drain beans and set aside.
  • In a large Dutch oven (or pressure cooker), over medium heat, brown bacon to render some fat; add ham and sausage and brown them a little as well.
  • Add peppers and onion; saute until onion is softened, about 5 minutes.
  • Add garlic and saute a minute or so.
  • Add water, pumpkin or squash (okay, pumpkin is squash), cilantro or parsley, potatoes, and cabbage; stir in tomato paste.
  • Return pigs feet and add beans to pot; cover and cook 1 1/2 hours (if using pressure cooker - 1 hour).
  • Open pot, taste for salt and add, if necessary.

This recipe goes well with rice and beans and fish tacos according to the blurb in the magazine. A serving size is 3/4 of a cup according to the recipe notes. If you use pre-shredded carrots and cabbage, this comes together in a snap.

1 small red onion finely chopped
1 small red bell pepper, finely chopped
A few ribs celery and leafy tops, chopped
1 clove garlic, minced or grated then grinded into a paste with salt
1/2 teaspoon crushed red pepper flakes
2 tablespoons rosemary, finely chopped, a few sprigs
2 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Combine chick peas with onions, peppers, celery, garlic, red pepper flakes and rosemary in a medium bowl. Dress salad with vinegar and oil, salt and pepper.
