HABICHUELAS GUISADAS (PUERTO RICAN STEWED BEANS)



Habichuelas Guisadas (Puerto Rican Stewed Beans) image

These beans are a Puerto Rican staple, and an essential side dish for rice.

1 tablespoon olive oil
1/4 cup diced country ham or bacon (omit if vegetarian)
1/4 cup Puerto Rican sofrito
1/4 cup tomato sauce
1½ tsp sazón con achiote y culantro
1/4 teaspoon ground cumin
1/2 teaspoon dried oregano
2 dried bay leaves
2 cups low sodium chicken broth (or vegetable broth)
2 cans pink beans (habichuelas rosadas), undrained (15 oz. cans)
1/3 cup diced potato, pumpkin and/or baby carrots
8 pimento stuffed olives
2 tbsp fresh cilantro, chopped (for garnish)
Adobo seasoning (or salt, to taste)

Steps:

  • In a medium sized sauce pan, heat the olive oil over medium heat. Add the chopped ham and saute for 2-3 minutes, until it starts to caramelize.
  • Add the sofrito and Sazon seasoning. Saute for 2 minutes, until fragrant.
  • Add the tomato sauce, oregano, bay leaves, and cumin. Saute for 1 minute.
  • Add the chicken stock, beans (with their liquid), chopped potato, pumpkin or carrot, olives, and chopped cilantro. Cover and bring the mixture to a boil.
  • Once the mixture comes to a boil, reduce to a simmer and cook for 30-40 minutes, stirring occasionally. Allow the flavors to meld, the beans to become really tender, and the pumpkin/carrots to cook. The mixture should be very creamy and not soupy.
  • Check for seasoning, and add Adobo or salt if needed.
  • Serve over white or yellow rice, with an extra sprinkle of cilantro, if desired.

2 cups water
1 3/4 lbs calabaza squash or 1 3/4 lbs butternut squash, peeled and cut into 1/2 inch cubes
1 teaspoon annatto seeds (optional)
2 tablespoons olive oil
1 medium onion, chopped
1 small sweet green pepper, chopped
1/2 chili pepper, finely chopped
2 cloves garlic, finely chopped
6 fresh cilantro leaves, finely chopped (or use culantro leaves, if you can find them)
1/2 cup tomato sauce
1 (15 ounce) can pink beans, undrained
3/4 teaspoon salt
1/2 teaspoon dried oregano leaves
3 cups water
1/4 cup olive oil
1 teaspoon salt
2 cups long-grain white rice

Steps:

  • Prepare Cooked White Rice: In a heavy 4-quart saucepan or Dutch oven, heat 3 cups water, 1/4 cup olive oil, and salt to boiling over high heat.
  • Reduce heat to medium; add 2 cups rice and cook uncovered until rice appears to be dry-10 to 15 minutes.
  • Using a fork, bring rice on the bottom to the top, but do not mix.
  • Reduce heat to low; cook 10 minutes.
  • Turn rice over again and cook 10 minutes longer.
  • Cover rice and keep warm until ready to serve.
  • This rice dish is somewhat crunchy in texture.
  • Beans: In a 1-quart saucepan, heat water and squash to boiling over high heat.
  • Reduce heat to low, cover, and cook until tender-10 to 15 minutes.
  • Drain squash, reserving 1 1/2 cups cooking liquid in a measuring cup.
  • Add annatto seeds to cooking liquid and set aside 5 minutes.
  • In 4-quart saucepan, heat olive oil over medium heat.
  • Add onion, green pepper, garlic, chile pepper, and cilantro; saute mixture, or sofrito, 5 minutes.
  • Strain liquid from annatto into sofrito, discarding seeds.
  • Add tomato sauce and squash.
  • Reduce heat to low and cook, stirring occasionally, until sauce is thickened-about 20 minutes.
  • Stir undrained beans, salt, and oregano into mixture and cook until beans are warmed through and sauce has thickened again-about 15 minutes.
  • To serve, spoon bean mixture over Cooked White Rice on serving plate.
  • Enjoy!

When I serve it as a main dish, I always double the recipe and serve over recipe #220492 in place of the white rice. Credit for this recipe goes to my good friend Michelle.

15 ounces pink beans, undrained
1 tablespoon olive oil
1 1/2 tablespoons sofrito sauce
1 teaspoon fresh cilantro, minced
1 medium potato, peeled and diced
3 tablespoons tomato sauce
0.5 (1/2 ounce) envelope sazon goya (con cuilanto)
3 cups water
2 tablespoons green olives (optional)
2 cups cooked white rice

Steps:

  • Put all ingredients except rice in a medium saucepan; bring to a boil.
  • Stir; lower heat and simmer until thickened, about an hour.
  • Serve over rice (tip: when preparing rice, rinse before cooking).

2 Cups Pink Beans
1/2 Can Goya Salsa de tomate
2 Tablespoons Sofrito
2 Tablespoons Oil
1 packet sazón Sin Achiote
1 Packet Sazón Con Culantro Y Achiote
1/4 tsp Adobo con Cumin (Green Cap Adobo)

Steps:

  • Pick out bad beans and rocks.
  • Rinse beans with water.
  • Place beans in pot with water 1-2 inch above beans and 2 Tablespoons of oil cook until beans rise to the top.
  • Add water once beans rise. Beans will fall again. Wait until fully cooked. (This will be when beans are soft/ slightly open).
  • After beans are fully cooked
  • Combine 2 Tablespoons Sofrito, 2 packets of the Sazón, 1/4 Tablespoon of Adobo con Cumin, and Half can of salsa into a small sauce pan and cook
  • Mix Sauce with beans and add 1/3 cup water.
  • Finish cooking beans together with sauce to combine flavor into beans.
  • Beans and sauce should make a thicker together

  • STEP 1: Soak the beans and bay leaf for 6-8 hours in 6-8 cups of water or broth; you want about 1 inch of liquid on top of the beans. I recommend soaking your beans for no more than 8 hours. You can soak at room temperature.
  • STEP 2: After you soak the beans, bring beans to boil for 1-2 minutes, then reduce heat to low, cover and simmer gently for 1-2 hours or until beans are tender and soft. The last half hour that your beans are cooking you can begin to make your sofrito (see below), or once the beans are done cooking you can turn the heat off and allow the beans to sit while you cook your sofrito. It’s just up to your advancement level of cooking and preference. REMOVE THE BAY LEAF BUT DO NOT DRAIN THE BEANS. The liquid is essential to the recipe!
  • STEP 3: How to make Sofrito (for 1 pound beans): Sofrito in spanish means sauce -- very traditional in many of the main staple foods in Puerto Rico: Add oil to a medium skillet and place over medium heat. Once oil is hot, add in onion, green pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 3-5 minutes. Bring heat to low and add tomato sauce, sazon and simmer for 2-3 minutes until sauce comes together. Add your sofrito to the beans (remember you were not supposed to drain the beans) and simmer uncovered over medium low heat for 20-30 minutes, stirring occasionally, so that the spices infuse with the beans. After that, turn the bean off and cover so that they keep the heat while you finish making everything else. They should stay hot enough for an hour or so.
  • STEP 4: While the beans are simmering with sofrito, start making the rice: Add oil to a medium pot and place over medium heat. Once oil is hot, add in onion, green pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 3-5 minutes. Bring heat to medium-low and add tomato sauce, sazon and adobo and simmer for 2 minutes until sauce comes together. Next add in entire can of pigeon peas (with the liquid -- DO NOT DRAIN) and 3 cups water, and bring to a boil. Once it boils, stir in 2 cups of rice, cover, reduce heat to low and simmer 20 minutes or until rice is tender.
