I got this recipe from my aunt. It is a quick and easy cookie recipe using pudding--pick any flavor you like!

¾ cup buttermilk baking mix
¼ cup vegetable oil
1 egg
1 (3.9 ounce) package instant chocolate pudding mix
½ cup chopped walnuts

Steps:

  • Combine the baking mix, vegetable oil, egg and pudding mix in a bowl. Mix well. Stir in the nuts or chocolate chips (optional).
  • Place teaspoonfuls on ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 10 minutes or until toothpick comes clean.

1/2 cup unsalted butter (softened)
3/4 cup brown sugar (packed)
1 teaspoon vanilla extract
1 egg
1 3.4 ounce box Instant Vanilla Pudding Mix (or any flavor)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups all purpose flour
1 1/2 cups chocolate chips (or any candy/chips)

Steps:

  • Note: This dough requires chilling.
  • Cream butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment. (You can also use a hand mixer.) Mix in egg and vanilla until smooth. Add pudding mix, baking soda, and salt. Mix until combined. Mix in flour, then stir chocolate chips or other mix-ins.
  • Scoop 2 tablespoon balls of cookie dough onto a cookie sheet covered with parchment or a silpat baking mat. There's no need to space them out, you're going to chill them. Cover and chill for at least 1 hour.
  • Preheat oven to 350°F. Line cookie sheets with parchment paper or silpat baking mats. Place chilled cookie dough balls 2" apart on cookie sheet. Bake 9-11 minutes or until the edges just start to turn brown. Cool 5 minutes on cookie sheet before transferring to a rack to cool completely. Store in an airtight container for up to 4 days or freeze for up to one month.

1 cup butter or margarine, softened
1 cup packed brown sugar
1 pkg. JELL-O Chocolate Flavor Instant Pudding
2 eggs
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), chopped

Steps:

  • Heat oven to 350°F.
  • Combine flour and baking soda. Beat butter and sugar in large bowl with mixer until light and fluffy. Add dry pudding mix; beat until blended. Add eggs; mix well. Gradually add flour mixture, mixing well after each addition. Stir in chocolate.
  • Drop tablespoons of dough, 2 inches apart, onto baking sheets.
  • Bake 10 to 12 min. or until edges of cookies are lightly browned. Cool 1 min. on baking sheets. Remove to wire racks; cool completely.

1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding
1 cup all-purpose baking mix
1/4 cup oil
1 egg
1/4 cup sugar

Steps:

  • Preheat oven to 350°F. Mix dry pudding mix and baking mix in medium bowl. Stir in oil and egg with wooden spoon until mixture forms ball.
  • Shape dough into 36 small balls, each about 1/2 inch in diameter. Place, 2 inches apart, on ungreased baking sheets. Flatten each cookie with bottom of drinking glass; sprinkle with sugar.
  • Bake 5 to 8 minutes or until cookies feel set to the touch. Cool on wire racks.

3/4 cup (1½ sticks) butter (softened)
1/2 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
2¼ cup all-purpose flour
1 box (4.2 oz) oreo cookies & cream instant pudding mix ((do not prepare!))
1 teaspoon baking soda
¼ teaspoon salt
1 cup chopped Oreo cookies
2 bars (1.55 oz each) Hershey Cookies & Cream candy bars (chopped)

Steps:

  • Heat oven to 350°. Prepare a cookie sheet by lining with parchment paper or a silpat liner.
  • In a large bowl with a handheld mixer, or bowl of a stand mixer, beat together the butter, brown sugar, and sugar until light and fluffy. Add in the eggs and blend until completely combined. Add in the vanilla. Blend again.
  • In a separate small bowl combine the flour, pudding mix, baking soda, and salt and stir with a wire whisk to break up any clumps. Add into the creamed mixture and mix until combined. Stir in the Oreos and candy bar chunks with a wooden spoon.
  • Roll dough into balls (slightly smaller than the size of a golf ball) and place on the baking sheet. Bake in the oven for 8-10 minutes, or until set. Let cool on cookie sheet for about 10 minutes and then remove to wire rack to cool completely.* Cookies will still be very pale even when cooked. I have never had to bake mine for longer than 9 minutes.
  • The cookies do not spread much while baking. You can leave them puffier OR gently press a few additional chopped Oreo pieces and candy bar pieces onto the tops of the cookies. They will gently spread out slightly if you do this.

1 tsp baking powder
1 tsp baking soda
1/2 tsp kosher salt
1 cup milk chocolate chips
1 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup peanut butter chips
1/2 cup mini M&M baking candies
1/2 cup mini Reese's baking candies

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Set aside.
  • In a mixing bowl, beat butter with sugars until well blended. Add vanilla extract and eggs, beat until combined.
  • Add flour, pudding mix, baking soda, baking powder, and salt. Mix until well blended.
  • Fold in mix-ins.
  • Drop by cookie scoop onto baking sheet and bake for 10-12 minutes. Let cool on pan for a few minutes, then cool completely on wire rack.
  • Store in airtight container for up to a week. ENJOY

  • In a large bowl, stir together the cake mix and instant pudding. Stir in the sour cream and eggs until well blended. Batter will be stiff. Drop by teaspoonfuls onto the prepared cookie sheets.
