Banana Split Cake image

An easy, layered dessert recipe that is perfect for summer! This banana split cake with pudding, fruit and nuts will be the hit of your picnic.

Provided by Julie Clark

Categories     Dessert

Time 43m

Number Of Ingredients 14

20 ounces crushed pineapple ((1 can))
1 box yellow cake mix ((dry mix only))
1 cup pineapple juice
3 large eggs
½ cup canola oil
12 ounces cream cheese ((softened))
3.5 ounces instant cheesecake pudding ((1 small box))
5.1 ounces instant banana cream pudding ((1 large box))
2 cups milk
4-5 ripe bananas ((thinly sliced))
16 ounces frozen whipped topping ((thawed))
16 ounces maraschino cherries ((drained and dried))
½ cup chopped walnuts
¼ cup chocolate syrup

Steps:

  • Spray an 11x15 baking pan with cooking spray. Preheat the oven to 350º F.
  • In the bowl of a stand mixer, beat together the cake mix, pineapple juice (if you didn't get exactly 1 cup of pineapple juice from draining the pineapple, add water to make 1 cup), eggs and oil.
  • Beat on medium speed for 2 minutes, scraping the sides of the bowl as needed.
  • Pour the batter into the prepared pan and bake for 15-18 minutes or until the center of the cake springs back when you touch it.
  • Allow the cake to cool completely on a wire rack.
  • In a small bowl, use a hand mixer to cream the cream cheese until it is smooth. Set aside.
  • In another bowl, mix together the pudding mixes and milk until smooth.
  • Add the cream cheese by heaping spoonfuls and mix into the pudding using a hand mixer. Continue until all of the cream cheese is mixed in.
  • Spread the pudding mixture over the cooled cake.
  • Place sliced bananas all over the top of the pudding layer.
  • Sprinkle the drained crushed pineapple from step 1 over the bananas.
  • Spread the whipped topping over the pineapple.
  • Top with drained and dried maraschino cherries, nuts and chocolate sauce, or decorate as desired!
  • Cover the cake and store in the refrigerator. It is best to let this cake set for at least 4 hours before serving, if not overnight. This allows the layers to settle.

BANANA SPLIT LUSH

Banana Split Lush image

Banana Split Lush is a Summer-y, light and sweet Banana Cream Lush dessert recipe topped with chocolate sauce, maraschino cherries and pineapple. Enjoy this delightful dessert at any Summer holiday, potluck or BBQ! (12 slices)

Provided by Amanda Formaro

Categories     Desserts

Time 1h35m

Number Of Ingredients 17

10 ounces graham crackers (2 5-ounce packages, finely ground using a food processor or manually crushing)
6 tablespoons unsalted butter (melted and cooled )
2 cups all-purpose flour
1 cup unsalted butter (melted and cooled)
1/2 cup pecans (finely chopped or food processor processed )
1/4 cup granulated white sugar
16 ounces cream cheese (softened to room temperature)
1 cup granulated white sugar
1.5 tablespoons fresh squeezed lemon juice
6.8 ounces instant banana cream pudding mix (2 3.4-ounce packages)
4 cups milk
8 ounces Cool Whip (you can substitute the same amount whipped cream)
2-3 chopped pecans or walnuts
10 ounce maraschino cherries (may be extra left over)
20 ounce pineapple chunks (may be extra left over)
3 tbsp chocolate sauce ( to drizzle over slices)
1 large banana (sliced and added right before serving)

Steps:

  • Bottom Graham Cracker Crust (for a no bake crust option): In a medium-large bowl, mix melted and cooled unsalted butter with finely ground, processed graham crackers. Press into the bottom of a 13X9 pan. Cover and chill until the next layer is ready.
  • Bottom Pecan Crust Layer (for traditional lush baked crust option): Preheat oven to 350 degrees F. In a large mixing bowl, combine flour, melted and cooled butter, finely ground pecans and 1/4 cup sugar. Press into the bottom of a 9 x 13 inch baking pan. Bake 20-25 minutes (25 mins works best for me) until golden brown. Allow to cool completely before adding any layers.
  • Cream Cheese Layer(2nd layer): Using a hand electric mixer, combine cream cheese, 1 cup sugar, 1-2 tablespoons fresh squeezed lemon juice (2 tablespoons works best for me). Mixture should be even and smooth. Spread evenly on top of the baked and cooled bottom pecan crust or no bake graham cracker crust.
  • Banana Cream Pudding Layer: In a large mixing bowl, whisk the milk and instant banana cream pudding mix until set. It may take 4-5 minutes to thicken. Spread evenly on top of the cream cheese mixture.
  • Whipped & Toppings Layer: Using an offset spatula, spread thawed whipped topping on top of the banana cream pudding layer. Place the maraschino cherries and pineapple chunks on top of the whipped layer. For serving drizzle with chocolate sauce. Optionally, before serving you can serve with freshly sliced bananas. Optionally, you can freeze the Bananas Fosters Lush overnight (without the Bananas Fosters sauce) for more defined slices. Do not freeze if you substitute homemade whipped cream because it might not hold up like frozen whipped topping like Cool Whip.Enjoy!

Using a 9X9-inch pan press the graham cracker crust mixture into the bottom of the pan making sure that you have a solid bottom. Bake crust for 5 minutes. Remove pan from oven and allow crust to completely cool before topping it with the rest of the cake.
  • In a separate bowl, blend the cream cheese until creamy. Add the pudding mix, sugar, vanilla extract, and milk. Beat until creamy. The filling should be creamy. If it still appears slightly thick and clumpy, add 1 tablespoon of milk at a time until it is creamy.
  • Pour the cream cheese mixture on top of the graham cracker crust and spread evenly with a rubber spatula or the back of a spoon. Open the can of the pineapple and drain off the excess liquid using a strainer. Press the pineapple to squeeze out more of the liquid. Sprinkle the crushed pineapple on top of the cream cheese. • Stir together almond milk, yogurt, maple syrup and vanilla. Whisk in the chia seeds. Cover and refrigerate overnight. If you’re in a rush, less time will do — I’d recommend at least 3-4 hours. You’ll want to wait until you’re ready to serve the chia pudding before preparing your toppings.
  • Toast coconut: Preheat a sauté pan to medium heat. Add coconut flakes and stir constantly until they turn a golden color (this will take about 1-3 minutes). Remove the coconut flakes from the pan and allow to cool.
  • Remove chia pudding from the fridge and stir to make sure there aren’t any big clumps and then spoon into two serving dishes. Top with banana slices, strawberries, blueberries, coconut flakes (if using) and cacao nibs, dividing the toppings between each bowl.
  • If you’re not planning to eat both servings at one time. Simply leave the toppings and chia seed pudding in separate air-tight containers in the fridge until ready to serve. The chia seed pudding should last 4-5 days in the fridge so you can make a batch at the beginning of the week and have it for breakfast or a snack on multiple days.
