PUCHERO (SPANISH BOILED DINNER)

This is Elena Zelayeta's mother's recipe. I have left out one ingredient, canned Spanish sausages, because I can't identify it. If you know what they are, by all means use them. This recipe uses dried garbanzos. If you want to use canned instead, I won't tell anybody! Times do not include soaking time for the beans.

1 chicken, cut in pieces
6 quarts water
salt
pepper
3/4 lb ground beef
3/4 lb ground pork
2 eggs, beaten
1/2 cup breadcrumbs
2 tablespoons flour
2 cups dried garbanzo beans, soaked overnight and drained
1/2 lb salt pork
2 lbs lamb shoulder
6 potatoes, peeled and quartered
1 lb carrot, julienned
1 medium cabbage, cut in wedges

Steps:

  • Cover chicken with cold water. Add salt and pepper, bring to a boil, and cook 10 minutes.
  • Reduce heat and continue to simmer for 30 minutes.
  • Combine beef, ground pork, eggs, bread crumbs and flour. Season with salt and pepper. Shape into a large ball.
  • Skim foam from pot.
  • Add garbanzos, salt pork and lamb. Place the big meatball on top.
  • Cook for 30 minutes.
  • Add potatoes, carrots and cabbage. Cook for 30 minutes more, or until garbanzos are soft.

Posted for ZWT7- Central and South America. Puchero is a famous Argentine boiled dinner, much like our own New England variety, except the ingredients and flavor are quite different. I found this on the internet.

2 (10 3/4 ounce) cans condensed tomato bisque soup
2 soup cans water
2 lbs well-trimmed boneless chuck roast (about 1 1/2-inch thick)
8 chicken wings (about 1 1/2 lbs.)
3 medium carrots, cut in 2-inch pieces
8 small whole white onions
2 small purple-top turnips, quartered
1 (15 ounce) can chickpeas, drained
1/2 lb pepperoni, sliced 1/2-inch thick
1/2 small head cabbage, cut in wedges

Steps:

  • Combine soup, water, and beef in a large, heavy saucepan; cover and simmer 1 hour.
  • Add chicken wings, carrots, onions, and turnips; simmer 10 minutes.
  • Add remaining ingredients; simmer 15 minutes more, or until done, stirring occasionally.
  • Spoon off fat.
  • Arrange meat and vegetables on a heated platter; serve broth as soup.

I'm not Irish, so I'm not sure about the authenticity of this dish, but it sounded tasty. Could also be cooked in a crockpot.

4 lbs corned beef brisket
1 can onion soup
4 peppercorns, whole
1 clove garlic, minced/crushed
1 bay leaf
1/4 teaspoon rosemary, crushed
6 carrots, cut in 1 inch pieces
6 potatoes, quartered
1/2 cup celery, cut in 1 inch pieces
1 head cabbage, wedged
3 tablespoons water
3 tablespoons flour

Steps:

  • Rinse corned beef, place in large heavy pan.
  • Add soup and seasonings.
  • Cover and cook over low heat for 3 and 1/2 hours.
  • Add carrots, potatoes, celery, top with cabbage.
  • Cover and cook for 1 hour or until vegetables are tender.
  • Remove meat, vegetables and bay leaf.
  • In separate bowl, mix flour and water until smooth.
  • Pour flour mixture into sauce and cook until thickened.
  • Add meat and vegetables back to pot, heat through and serve.
