Publix Vanilla Cake Recipes
SOUR CREAM POUND CAKE
I cut this recipe from the back of a package of Publix Flour. It is a little different than the others posted here. I have made this several times with much success. It is especially good served with fresh strawberries or blueberries.

Steps:
- Preheat oven to 325.
- Grease & flour a tube or bundt pan.
- In a large bowl cream butter and sugar together until light and fluffy, add sour cream and mix well.
- Add eggs, one at a time, beating mixture well after each egg is added.
- In a seperate bowl, sift flour and baking soda together.
- Add flour to sour cream mixture.
- Add Vanilla and Almond Extracts and mix well.
- Pour into prepared pan.
- Bake for 1 hour 30 minutes, or until cake passes the toothpick text.

- Combine the butter, Crisco, and salt in a large bowl and beat on low speed for 5 minutes. Add the vanilla, butter flavor, and almond extract and beat until well blended. Turn off the mixer and add the meringue powder and half of the confectioners’ sugar. Mix on the slowest speed the mixer has. Mix in the remaining sugar 1/2 cup at a time, until all the sugar is mixed in.works well.
- Turn the mixer up to medium and beat until smooth and creamy. This should take about 5 minutes. If the icing seems too thick to spread, beat in up to 1 tablespoon milk to loosen it.

- Prepare two 8 inch cake pans by lining the bottom with a round piece of parchment paper. Lightly spray the sides of the pan with nonstick baking spray. Preheat oven to 350 F.
- In a medium saucepan, bring water and sugar to a boil, stirring until the sugar has completely dissolved, then set aside.
- Using a stand mixer with a whisk attachment or a strong hand whisk, whisk the vanilla and heavy cream until it's almost stiff like shaving cream. This will take 2 -3 minutes on high speed (or much longer by hand).
