Lemon Butter Swai Fish - tender and moist pan fried fish with lemon butter sauce. This recipe takes 10 mins from start to finish and rival the best seafood restaurant. Serve alone or with pasta for dinner.

1 lb. (0.4 kg) Swai fish or Basa
salt
ground black pepper
1/2 tablespoon vegetable oil
2 tablespoons unsalted butter, melted
1/4 cup white wine
1 tablespoon lemon juice
1 pinch salt
1 teaspoon chopped Italian parsley

Steps:

  • Rinse the swai fish fillets with cold water. Pat dry with paper towels. Seasoned both sides of the fish with salt and ground black pepper.
  • Heat up a skillet on medium-high heat. Add the vegetable oil. Pan fry the Swai fish fillet, about 1-2 minutes on each side. Turn the fish over gently and pan fry the other side until both sides are light brown with slightly crispy edges. Dish out on a plate.
  • In a sauce pan, heat the melted butter, then add the white wine and lemon juice. Add a pinch of salt. As soon as the sauce bubbles, turn off the heat. Drizzle the sauce on the fish, garnish with parsley and serve immediately.

My husband loves fish. Since I am allergic, I don't partake. Swai was on sale at the grocery so we picked some up. Since he has never tried it before, I decided to cook it in a familiar way for him. He devoured it. I served this with honeyed carrots and fried yellow squash.

2 teaspoons red pepper flakes
1 teaspoon seafood seasoning (such as Old Bay®)
1 teaspoon garlic powder
salt and ground black pepper to taste
1 cup cornmeal
4 (4 ounce) fillets swai fish
2 tablespoons canola oil
¼ cup water

Steps:

  • Combine red pepper flakes, seafood seasoning, garlic powder, salt, and pepper in a bowl. Spread corn meal into a shallow bowl. Season swai fish with red pepper flake mixture and press each fillet into cornmeal to coat. Wrap coated fillets in plastic wrap and refrigerate for 30 minutes.
  • Heat oil in a skillet over medium heat. Unwrap fish and place in the hot oil; cook until browned, about 5 minutes per side. Add water, bring to a simmer, cover, and cook, flipping occasionally, until fish flakes easily with a fork, about 10 minutes.

This is one of my favorite recipes for any kind of white fish.

2 (4 ounce) fillets swai fish
salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
1 onion, chopped
1 clove garlic, minced
1 (14.5 ounce) can petite diced tomatoes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place swai fish in a glass casserole dish and season with salt and black pepper.
  • Heat olive oil in a large skillet over medium heat; cook and stir onion until softened, about 10 minutes. Add garlic and cook until fragrant, about 1 minute. Pour tomatoes over onion mixture; cook and stir until heated through, about 5 minutes. Spoon tomato mixture over fish.
  • Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.

Swai is a terrific choice for those who don't like a fishy fish. It is economical, low in fat, and low in calories. This recipe is an adaptation of another I'd seen here on food.com, but I had made so many substitutions I decided to submit it so I had a more accurate picture nutritionally.

3/4 cup lentils
1/4 teaspoon ground turmeric
2 cups fat-free low-sodium chicken broth
2 teaspoons olive oil
1 1/2 teaspoons cumin
1 tablespoon ginger, grated
1/2 teaspoon cayenne
1 tablespoon lemon juice
2 teaspoons coriander
1 lb swai fillet
4 cups cabbage, chopped

Steps:

  • Combine lentils, turmeric and stock in a saucepan. Bring to a boil then reduce heat, cover and simmer for 20 minutes.
  • When lentils are ready (or just before) In a large pan heat , stir fry cumin, ginger, and cayenne for a few seconds then add lentils. Stir to combine.
  • Add lemon juice and coriander. Stir gently.
  • Lay the Swai atop the lentils, cover the pan, and cook on low heat for 10 minutes, turn the fish and cook for 10 minutes more.
  • Absolutely not necessary, but we serve this over chopped cabbage and use a little bit of sauce similar to that on a fish taco (with non-fat yogurt as a substitute for mayo). When I have found our perfect combo, I will amend this recipe to add it.

4 (4 ounce) fillets swai fish
2 tablespoons margarine
¼ cup dry white wine
1 tablespoon lemon juice
1 tablespoon chopped fresh cilantro
1 teaspoon minced garlic

1 teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a shallow pan or baking sheet with cooking spray.
  • Place fish fillets into the prepared pan.
  • Heat margarine in a saucepan over medium heat. Mix white wine, lemon juice, cilantro, garlic, salt, and black pepper into the melted margarine; simmer sauce for 2 minutes. Generously spoon sauce over fish fillets. Sprinkle fillets with paprika.
  • Bake in the preheated oven until fish flakes easily with a fork, 10 to 12 minutes.
