SPICED ITALIAN PLUMS (PRUNES) IN PORT
We have an old Italian prune tree in the front yard that is usually loaded every year. We fix many of them this way, and have wonderfully sweet, spicy prunes for breakfast all year. We usually spend a whole weekend canning prunes and making apple butter. (another old tree in the yard). Any type plum would most likely work.

PRUNES IN PORT
I know people that have this with their cornflakes :) Personaly I like them as a snack, but they are great as a quick dessert with custard or ice cream. I pour the prunes into sterilised glass jars, and they keep for months. If you want these as gifts you can easily double the recipe.

- Stir tea and water in a small bowl; let steep for 5 minutes. Strain into a medium saucepan; stir in brown sugar. Bring to a boil over high heat; boil until slightly thickened, about 2 minutes. Place prunes in a large bowl; stir in hot syrup. Set aside to cool to room temperature, about 1 hour.
- Meanwhile, sterilize two 1-pint canning jars by steaming them upside down, their lids alongside, in a closed steamer for 10 minutes; or place in a large pot and cover by 1 inch of water and boil for 10 minutes.
- Drain prunes, reserving liquid separately. Whisk Armagnac (or cognac) into the liquid. Pack each sterilized jar with half the prunes. Nestle half the vanilla bean in each jar. Pour 1/2 cup of the Armagnac mixture into each jar. Seal and turn upside down to blend ingredients. Set right side up and store in the refrigerator for 1 week to plump.

- Add the prunes and the tea bags to the boiling water and cover with a lid. Remove from the heat and let set overnight.
- The next morning, remove and discard the tea bags. Add the sugar and rum to the prunes and mix gently with a spoon until the sugar dissolves. (This may take a couple minutes, but the sugar will dissolve. Promise.) Divvy the prunes and the liquid among jars. (The prunes should be pretty much completely immersed in the sweet booze.) Cover and refrigerate, preferably for at least a few days. The boozy prunes will keep for up to 3 months. Serve at room temperature. Originally published January 17, 2014.
