We always serve this impressive layered breakfast bake with a salad of mixed greens and tomato wedges. It is one of our most requested dishes and can be served warm or cold. -Danny Diamond, Farmington Hills, Michigan

Number Of Ingredients 12

2 tubes (8 ounces each) refrigerated crescent rolls, divided
1 teaspoon olive oil
1 package (6 ounces) fresh baby spinach
1 cup sliced fresh mushrooms
7 large eggs, divided use
1 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1/8 teaspoon pepper
1/2 pound thinly sliced deli ham
1/2 pound thinly sliced hard salami
1/2 pound sliced provolone cheese
2 jars (12 ounces each) roasted sweet red peppers, drained, sliced and patted dry

Steps:

  • Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. Unroll 1 tube of crescent dough and separate into triangles. Press onto bottom of prepared pan to form a crust, sealing seams well. Bake until set, 10-15 minutes., Meanwhile, in a large skillet, heat oil over medium-high heat. Add spinach and mushrooms; cook and stir until mushrooms are tender. Drain on several layers of paper towels, blotting well. In a large bowl, whisk 6 eggs, Parmesan cheese, Italian seasoning and pepper., Layer crust with half of each of the following: ham, salami, provolone cheese, red peppers and spinach mixture. Pour half of the egg mixture over top. Repeat layers; top with remaining egg mixture., On a work surface, unroll and separate remaining crescent dough into triangles. Press together to form a circle and seal seams; place over filling. Whisk remaining egg; brush over dough., Bake, uncovered, until a thermometer reads 160°, 1 to 1-1/4 hours, covering loosely with foil if needed to prevent overbrowning. Carefully loosen sides from pan with a knife; remove rim from pan. Let stand 20 minutes.

1 tablespoon melted butter
3 large eggs, beaten well
1 ounce mild cheddar cheese, shredded
1 ounce aged provolone cheese, diced
1 ounce aged swiss cheese, diced
salt and pepper

Steps:

  • Using an 8-inch, non-stick skillet, melt butter over medium heat.
  • Add beaten eggs.
  • As the eggs begin to thicken, add the 3 cheeses evenly over the eggs.
  • As cheese begins to melt, and before the eggs get brown, flip or turn egg mixture over.
  • Continue to cook until the cheese melts.
  • Turn omelette 1 more time.
  • The finished omelette will be a nice yellow color with the cheese melted.
  • Serve immediately.

Thanks to the wonderful cooks at Taste of Home (Aug/Sep '09) for another great one! If you'd like your sammie to be a bit heartier, add another egg (2 per person then). How easy can this be? :-)

3 eggs
1 tablespoon water
1 teaspoon chicken bouillon granule
1/2 teaspoon butter
1 green onion, finely sliced
2 tablespoons chopped sweet red peppers
salt & pepper
2 croissants, split
4 1/2 teaspoons bleu cheese salad dressing
4 slices Canadian bacon (or regular)
4 slices muenster cheese (or other favorite kind)
1/2 cup arugula (or other favorite greens)
4 slices tomatoes

Steps:

  • Whisk bowl ingredients; set aside.
  • Saute' skillet ingredients until tender; add egg mixture.
  • As egg sets, lift edges so wet egg can flow underneath; when eggs are completely set, slide spatula under one half, and tip over in half; cut into two wedges.
  • Spread croissants with dressing, then layer the remaining ingredients with bacon, egg, cheese (so it melts), greens, tomatoes and the croissant tops.
  • Cook on a panini maker or waffle iron for 2-4 minutes (cheese should be melted).
  • HELPFUL HINT: If you don't have a panini-maker or a waffle iron, try using two cast-iron frying pans (place sammies in one over medium heat, nest the second one on top of that, pressing lightly to get that Just Right Squissshed-ness. Half-way through, flip the slamwich over so the second side gets toasted-y too.

Breakfast can't get any easier, or delicious than this. Add other items you like... this can be easily varied. Sometimes I'll add chopped bell peppers, cut up breakfast sausage or bacon, etc.

1 teaspoon butter
2 eggs
1/8 teaspoon black pepper
2 tablespoons onions, diced
1 tablespoon yellow mustard (or to taste)
1 slice provolone cheese
1 croissant, halved

Steps:

  • Using a medium or large saucepan, melt butter over medium heat.
  • Crack the egg into the pan and break up the yolk but don't completely scramble. Sprinkle on black pepper to taste.
  • Let fry over medium heat until bottom is done and it's easily flippable. Flip egg and while you let other side cook, add onions, yellow mustard, and half slice of the provolone cheese onto only one side of the egg.
  • Flip empty side of egg over veggies and top with other slice provolone until melted. If your egg is already done cooking and top cheese has not yet melted, transfer to plate and microwave for 15-30 seconds.
  • Place completed omelette in the middle of the croissant like a sandwhich and add extra mustard before closing, if desired.
