1 (6- to 7-pound) bone-in leg of lamb, trimmed and tied
1/2 cup Dijon mustard
3 tablespoons chopped garlic (9 cloves), divided
1 tablespoon chopped fresh rosemary leaves
1 tablespoon balsamic vinegar
Kosher salt and freshly ground black pepper
3 pounds ripe red tomatoes, cored and 1-inch diced
1/2 cup good olive oil
1/2 cup good honey (see note), divided
1 large Spanish onion, sliced
4 sprigs fresh thyme
2 sprigs fresh rosemary
Note: You'll want to use a liquid-rather than a solid-honey for this recipe so it can be drizzled on the lamb.

Steps:

  • Preheat the oven to 450 degrees.
  • Place the leg of lamb in a large roasting pan fat side up and pat it dry with paper towels. Combine the mustard, 1 tablespoon of garlic, the rosemary, balsamic vinegar, 1 tablespoon salt and 1/2 teaspoon of pepper in a mini food processor and pulse until the garlic and rosemary are minced. Spread the mixture on the lamb.
  • Place the tomatoes, olive oil, 1/4 cup of the honey, the onion, the remaining 1 tablespoons garlic, 2 tablespoons salt, and 2 teaspoons pepper in a bowl and toss well. Pour the tomato mixture around the lamb and tuck in the thyme and rosemary sprigs. Drizzle the lamb with the remaining 1/4 cup of honey.
  • Roast for 20 minutes. Turn the heat down to 350 degrees and roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees for medium-rare. Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Discard the herb stems and return the tomatoes to the oven to keep warm. Slice the lamb, arrange on a platter, sprinkle with salt and pepper, and serve with the tomatoes and pan juices spooned on top.

1 tbsp olive oil
250g lean lamb fillet, trimmed of any fat and thinly sliced
140g shallot , halved
2 large courgettes , cut into chunks
½ tsp each ground cumin , paprika and ground coriander
1 red, 1 orange and 1 green pepper , cut into chunks
1 garlic clove , sliced
150ml vegetable stock
250g cherry tomatoes
handful coriander leaves, roughly chopped

Steps:

  • Heat the oil in a large, heavy-based frying pan. Cook the lamb and shallots over a high heat for 2-3 mins until golden. Add the courgettes and stir-fry for 3-4 mins until beginning to soften.
  • Add the spices and toss well, then add the peppers and garlic. Reduce the heat and cook over a moderate heat for 4-5 mins until they start to soften.
  • Pour in the stock and stir to coat. Add the tomatoes, season, then cover with a lid and simmer for 15 mins, stirring occasionally until the veg are tender. Stir through the coriander to serve.

This lamb stew recipe is lush and homey and exactly what you want to see bubbling away when you walk in on a cold winter night.

¼ cup flour
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
2 pounds 1-inch cubes lamb shoulder or lamb stew meat
2 tablespoons olive oil (or as needed, divided)
½ cup sliced leeks
½ cup chopped carrots
½ cup chopped celery
½ cup diced fennel
1 teaspoon crushed dried rosemary
2 tablespoons brandy or cognac
1 28-ounce can diced or crushed tomatoes
1 15-ounce can chickpeas, drained and rinsed
2 cups beef broth
1 bay leaf
Chopped fresh parsley to serve

Steps:

  • In a large shallow bowl combine the flour, salt, and pepper. Add the lamb meat and toss to coat the lamb.
  • Place the inner pot into your Instant Pot. Press the Sauté button, and then use the Sauté or Adjust buttons (depending on your model) to select the "Normal" or middle temperature. Add 1 tablespoon of the olive oil to the pot, and let it heat for 1 minute. Add the lamb in two batches and brown on at least a few of the sides of the cubes, about 2 minutes per side (if you want to brown all of the sides, go ahead, but it's not necessary, and often the pieces of meat aren't really 6 sided "cubes"). Remove the meat with a slotted spoon to a plate, add the remaining tablespoon olive oil if there is not oil in the pan, and repeat with the other half of the lamb.
  • Add the leeks, carrots, celery, and fennel to the pot and sauté without the lid on for 5 minutes until everything is slightly tender. Stir in the rosemary, then add the brandy to the pot and stir for 1 minute. Add the tomatoes, chickpeas, broth, bay leaf and lamb and stir to combine.
  • Close and lock the lid. Set the valve to Sealing. Press Cancel, then press Manual or Pressure Cook and use the Pressure Level Button to select high pressure. Set the timer for 45 minutes. Note that the timer will not start to count down until the correct pressure has been achieved.
  • When the Instant Pot beeps, press Cancel. Let the pressure come down slowly for 30 minutes. Release the sealing valve, remove the lid and serve hot in bowls, with parsley sprinkled over the stew.

Super tender, perfectly spiced braised lamb shanks and vegetables in a rich red wine sauce. Cooking lamb shanks is easier than you might think. Simply season, sear, and braise! It's the perfect lamb shank recipe for a small gathering! A dry red wine is your best bet for the red wine sauce. (Merlot is my favorite here, but a Cabernet Sauvignon would work well, too.) Serve rosemary lamb shanks with couscous, Lebanese rice, or pita to soak up all the delicious sauce. Start this rich, meaty dinner with a big bright salad like arugula salad or white bean salad.

2 1/4 teaspoon garlic powder
1 teaspoon sweet Spanish paprika
1 teaspoon salt
1 teaspoon freshly ground black pepper
3/4 teaspoon ground nutmeg
6 American lamb shanks
2 tablespoon extra virgin olive oil
1 medium yellow onion, (roughly chopped)
2 celery ribs, (chopped)
3 large carrots, (peeled and cut into large pieces)
1 pound baby potatoes, (scrubbed)
2 cups red wine like Merlot
3 cups low-sodium beef broth
28- ounce can peeled tomatoes
2 cinnamon sticks
4 sprigs fresh thyme
2 sprigs fresh rosemary

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, add all the spice mix ingredients and mix to combine.
  • Pat the lamb shanks dry and season with the spice mix on all sides.
  • In a large Dutch oven pot like this one, heat 2 tbsp olive oil over medium-high heat. Working in batches, brown the lamb shanks on all sides (about 8 mins or so). Transfer the lamb shanks to a large tray or bowl for now. Carefully dispose of extra fat in a separate heat-safe bowl, and return the pot to heat.
  • Now add the onions, celery, carrots and potatoes. Saute for 5-7 minutes on medium-high, or until the vegetables gain some color. Add red wine, scrape the pot of brown bits. Cook briefly so that the wine reduces a bit.
  • Add the broth, tomatoes, cinnamon sticks, thyme, and rosemary. Sprinkle a little salt and pepper. Return lamb shanks back to the pot; press down to submerge. Boil for 10 minutes. Turn heat off.
  • Cover the pot and transfer to the 350 degrees F-heated oven. Cook in the oven for 2 1/2 hours (It's a good idea to check periodically through cooking just in case you need to add a little more liquid. When the shanks finish cooking, the liquid will have reduced to about 1/3 of what it was when you started.)
  • While the lamb shanks are cooking, prepare rice according to this recipe, or prepare 2-3 cups of orzo pasta according to package instructions.
  • Serve the lamb shanks hot with a little of the veggies and braising sauce on top of rice or orzo pasta. You might also like to prepare a side salad like this 3-ingredient Mediterranean salad or Fattoush. Enjoy!

To bring back memories of warmer, sunnier days here is something with a Provençal edge to it. In this recipe I have cut down oil and fats in some recipes and discovered how very little, in fact, is needed. So see what you think.

12 oz (350g) braising steak, cut into largish cubes
1 tin chair de tomate or 1 small tin tomatoes
4 oz (110g) flat open mushrooms, cut into chunks
1 red pepper, de-seeded and cut into wide 1-inch (2.5 cm) strips
1 oz (25g) small black Provencal olives
salt and freshly milled black pepper
2 teaspoons olive oil
6 whole shallots, peeled
1 clove garlic, finely chopped
1 heaped dessertspoon chopped thyme leaves (plus a couple of sprigs)
1 bay leaf
1 strip of thinly pared orange zest, about 2 inches (5 cm)
1 dessertspoon flour
½ pint (275 ml) red wine

Steps:

  • In a small flameproof casserole heat 1 teaspoon of the oil over direct heat until smoking hot, then brown the pieces of beef on all sides, not more than five pieces at a time. As they brown remove them to a plate. When they are all done add the other teaspoon of oil to the pan and when that's hot add the shallots to brown as well, adding the garlic after two or three minutes. When the shallots have browned, return the meat (and any escaped juices) to the pan, then add the chopped thyme, bay leaf, orange zest and some salt and freshly milled pepper. Next stir in the flour to soak up the juices, and follow that with the wine, a little at a time, stirring well as it goes in. Then add the the contents of the tin of tomatoes plus the chopped mushrooms, stir again and as soon as it comes up to simmering point, put a lid on and place the casserole in the oven for 1½ hours. After that add the pepper and olives and (still with the lid on) let it carry on cooking for a further 30-40 minutes until the pepper is tender. Serve with mashed potato and some very green and squeaky new season's spring greens.

  • In a large skillet, preferably cast iron, heat 1 tablespoon of the olive oil over medium high heat. Add the onion, carrots, and garlic, season with salt and pepper, and sauté until everything is tender and starting to brown, about 5 minutes. Scrape the mixture into a small bowl.
  • Season the lamb with salt and pepper on both sides. Give the skillet a quick wipe with a paper towel (be careful; that skillet is hot!), and return the skillet to the heat. Add 1 more tablespoon olive oil, make sure the pan is very hot, then add the chops and sear for about 4 minutes on each side until the chops are browned on both sides. Transfer the chops to a plate.
  • Add the remaining tablespoon of olive oil to the pan, and then the mushrooms, zucchini, thyme and rosemary. Sauté until the mushrooms give up their liquid, and that liquid evaporates and the vegetables become tender and slightly golden, about 7 minutes.
  • Stir in the carrot and onion mixture. Add the red wine, stir to release and browned bit from the bottom and let it reduce by a little bit, about 2 minutes, then stir in the tomato sauce and tuck the browned chops into the mixture. Cover the pan, lower the heat to medium low, and let the liquid very gently simmer for 2 hours, until the meat is very, very tender, almost falling apart. Check periodically to make sure there is still liquid in the skillet, and add a bit of water or broth if necessary.
