Steps:
- Cut each slice of prosciutto into 2 to 3 strips. Slice each fig in half, and spread a teaspoon of goat cheese onto the cut half of each of the figs.
- Place the piece of fig cheese side down onto the center of a strip of prosciutto ham. Then roll the fig up in the prosciutto to make it into a parcel.
- Place the fig parcels onto a clean plate and serve.

- Preheat oven to 450 degrees F (230 degrees C).
- Spread prosciutto slices with Neufchatel cheese. Wrap slices around 2 or 3 asparagus spears. Arrange wrapped spears in a single layer on a medium baking sheet.
- Bake 15 minutes in the preheated oven, until asparagus is tender.

Extremely easy and elegant appetizer. Asparagus spears are wrapped in a sheath of prosciutto, then baked until crispy. A great dish to make ahead, and bake just before serving.

- Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
- Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
- Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

I was looking for a different way to serve one of my favorite vegetables and this is it! Provolone cheese provides a mild flavor, but if you'd like a stronger flavor, use smoked Cheddar cheese.

- Fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add asparagus and briefly cook uncovered until just beginning to soften, about 1 minute. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and season with salt and pepper.
- Bunch the spears into groups of 5. Place a slice of provolone cheese over the top of each bunch. Wrap a slice of prosciutto, starting at the base of the spears, around the spear-cheese package and secure with a toothpick.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Place each wrapped asparagus bunch on the grill.
- Grill until prosciutto is crispy and cheese is melted, about 5 minutes.

- Fill a large bowl with cold water. Bring a large pot of lightly salted water to a boil. Add asparagus and cook uncovered until blanched, about 2 minutes. Drain in a colander and immediately refresh in cold water for several minutes to stop the cooking process. Drain.
- Place 2 asparagus spears side by side and top with 2 half-slices of mozzarella cheese. Top cheese with 2 more asparagus spears. Wrap bundle in a slice of prosciutto so mozzarella cheese is tightly encased. Repeat with remaining asparagus, mozzarella cheese, and prosciutto to create 4 parcels.
- Heat oil in a skillet over medium heat. Carefully fry parcels in the hot oil until prosciutto has crisped and mozzarella cheese oozes, about 5 minutes per side. Season with salt and pepper. Serve warm.

- Blanch the asparagus for 2 minutes then refresh under cold water. Cut each mozzarella slice in half and sit both pieces on top of 2 spears of asparagus. Top with 2 more spears then wrap the asparagus in prosciutto so the mozzarella is enclosed (you will need 2 or 3 strips). Heat a little olive oil in a pan, then carefully fry the parcels until the prosciutto has crisped and the mozzarella oozes.
- Whisk together 3 tbsp olive oil and the vinegar and add the basil. Serve each parcel with salad leaves and a little dressing drizzled over.

- Divide the mozzarella into four equal portions.
- Wrap one slice of prosciutto (or more if needed)around each portion of mozzarella making sure it is well covered and secure with toothpicks.
- Season all the parcels with pepper.
- Heat olive oil in a shallow non stick frying pan.
- Add the mozzarella parcels and pan fry until the prosciutto is starting to brown and go slighly crispy and the cheese starts to melt.
- Dress salad leaves in the balsamic vinegar, tossing well to distibute evenly.
- Arrange salad on a plate and top with parcels.
- Serve with chutney or fruit sauce.

- Preheat oven to 180C/160C fan forced.
- For each mozzarella, lay 2 slices of prosciutto on a flat surface side by side slightly overlapping and top with a basil leaf and a few slices of garlic (reserve a few slices to make dressing) and then top with mozzarella, wrap prosciutto to enclose and secure with a toothpick.
- Season with pepper and place on a baking tray and bake for 3 to 4 minutes or until mozzarella soften slightly and remove from oven and cool slightly and then remove toothpicks.
- Meanwhile, blend extra basil and reserved garlic in a food processor until finely chopped with a motor running, gradually add oil and process until smooth and season with salt.
- Spoon basil sauce onto serving plates and top with mozzarella parcels.

- Take a slice of parma ham, and place a slice of mozzarella and avocado at one end.
- Season with black pepper and then roll the parma ham up to make a parcel. Repeat with remaining ingredients.
- Place on a baking tray and drizzle witha little olive oil. Bake in the oven at 180C for 10 minutes or so until the cheese is oozing out of the sides.
- Serve on a plate with some rocket and cherry tomatoes. Drizzle with balsamic vinegar and add a little more pepper.
